Vaigana Podo - Brinjal in dry Masala .

Vaigana Podo - Brinjal in dry  Masala .


  • Brinjal / Baingan - 1/4 th kg 
  • Green chilles-2 
  • Turmeric powder-1/4 th tsp

To Grind to coarse powder
  • Coriander seeds- 1 tblsp 
  • Urid dhal- 1 tbslp
  • Dry Red Chilly- 4

Seasoning 
  • Oil- 1 tsp
  • Mustard -1/2 tsp
  • Hing Powder- a pinch

Garnishing 
  • Oil- 1tsp

Method
Cut brinjals  lenghtwise , apply salt n keep aside for 1/2 an hour .

Slit green chillies.

In little oil roast coriander seeds, Urid dhal n dry red chillies ... cool and grind it to a coarse powder . 

In a kadai add oil,  splutter mustard seeds,add slit green chilles   then add salted brinjal pieces along with turmeric n little water n when half cooked add the coarsely ground powder , hing n cook till done n then add a tsp of oil n mix well .

Aaloo Methi Stuffed Paratha

Aaloo Methi Stuffed Paratha 
For outer covering
  • Wheat flour- 2 cups
  • Fresh Methi Leaves- 2 cups
  • Oil- 2tsp
  • Water - to prepare dough 
  • Salt to taste 

For Stuffing 
  • Potatoes- 3 
  • Green chilles-2 
  • Red Chilly Powder- 1/2 tsp
  • Ajwain or Carom Seeds - 1/2 tsp 
  • Garam Masala powder-1/2 tsp 
  • Lime juice - 1 tsp 
  • Oil- 2 tsp
  • Salt to taste . 
Method 

In a bowl add wheat flour, salt, chopped methi leaves , oil n enough water n make a soft dough .keep covered  for 1/2 an hour . 


Pressure cook potatoes,cool n peel it ... mash well , to it add salt, Ajwain, chopped green chillies , red chilly powder, garam masala , lime juice n oil ... mix well .

To make paratha
Take small portion of the dough and flatten into a disc, place a tablespoon of the filling in the centre of the disc and pinch the sides together around the filing and roll out as chapathis but with a thickness . Roast on both sides on hot tawa ,smeared with ghee !

Serve hot with Raitha or pickle !

Tomato Onion Gojju

Tomato Potato Gojju 
  • Tomato- 3 Ripened 
  • Potato- 1 
  • Salt to taste 

Seasoning
  • Oil-1 tsp
  • Mustard seeds- 1/2 tsp
  • Hing- 1 pinch
  • Curry leaves-1 sprig 

Garnish
  • Onion-1 
  • Green chillies-2
  • Coriander leaves -chopped 2 tsp

Method
Wash n pressure cook potato , cool, peel n mash it ..

wash n cook tomatoes ... cool, peel the skin n mash it .

In a bowl add the mashed potato, mashed tomatoes , salt  then add chopped onion, chopped green chillies, coriander leaves n then give the seasoning ..mix well .

Aam Ki Launji ( Sweet n Spicy Pickle of Rajasthan )

Aam Ki Launji ( Sweet n Spicy Pickle of Rajasthan ) 


  • Raw Mango - 2 
  • Oil- 2 tblsp
  • Mustard seeds - 1/2 tsp
  • Saunf ( fennel seed )-1 tsp 
  • Methi Seeds-1/4 th   tsp 
  • Red chilly powder- 1/2 tsp 
  • Coriander powder-1/4 th tsp
  • Turmeric powder-1/2 tsp
  • Jaggery /Sugar- 2 tsp 
  • Salt to taste

Method
Wash, pat dry the raw mangoes , peel n chop it into 2 inch lenghty pieces . 

In a kadai add oil, splutter mustard seeds, add in fenugreek seeds, saunf, red chilly powder, Turmeric powder, coriander powder , jaggery or sugar n mix well ... then add the chopped raw mangoes along with salt ..cover n cook till done . 

Note : This recipe is not watery nor too thick ..it should be medium ...
Raw Mangoes when cooked shouldnt be mushy ... make sure its cooked well but firm .
Can be served with Rottis or Parathas .

Karathe Kismuri -version 1 ( Bitter gourd fries in coconut based dry masala )

Karathe Kismuri -version 1 ( Bitter gourd fries in coconut based dry masala ) 
  • Bitter gourds- 2 
  • Onion - 1
  • Salt to taste 

To Grind
  • Grated coconut- 1/2 cup 
  • Roasted dry red chillies- 4 or according to the taste 
  • Raw Coriander seeds- 1 tsp 
  • Tamarind - Tamarind seed size 

Method
Wash n finely chop bitter gourd's ..apply salt n let it rest for an hour or 2 . 

Squeeze it well n then deep fry ... Place on a tissue paper to remove excess oil.

Grind grated coconut, roasted dry red chillies, raw coriander seeds n tamarind to a semi coarse paste . take it out , add chopped onions n just before serving add the fried bitter gourd pieces n mix well .

Note : Adjust salt accordingly since the fried bitter gourd already has salt in it . 

Jackfruit Puzhukku

Jackfruit Puzhukku 
  • Jackfruit - 1/4 th kg  
  •  Red chilly powder-1/4 th tsp  
  • Turmeric powder-1/4 th tsp
  • salt to taste .
 
To grind 

  •  Grated coconut-1/2 cup 
  •  Green chilly - 1 or 2 
  • Sambar onion/small Onion/Shallot Onion -2   
  • Garlic flake-1 
  • Cumin seeds-1/4 th tsp
Seasoning 
  • Oil- 1tsp 
  • Mustard seeds- 1/2 tsp
  • Curry leaves- 1sprig
  • Dry Red chilly-1  
 Garnishing 
  • Roasted Grated Coconut- 2tsp 

Method
Coarsely grind all the ingredients meant to grind . 

Cook jackfruit pieces in water with red chilly powder, turmeric powder and salt n  Mash a bit of the cooked jackfruit with backside of the  spoon. 


 Add the  ground paste to the cooked jackfruit, add little water and Cook for 2 or 3 minutes n then do the seasoning along with garnishing .

Sambar /Small /Shallot Onion Chutney

  • Sambar /Small /Shallot Onion  - 1 fist 
  • Dry red chilly -4 to 5
  • Fenugreek seeds- 2 pinch  
  • Coriander seeds-1 tsp
  • Urid dhal-1/2 tsp
  • Tamarind- Tamarind seed size 
  • Jaggery - a very small piece 
  • Salt to taste

Seasoning 
  • Oil-1 tsp
  • Mustard seeds-1/2 tsp 

Method

In a kadai add a tsp of oil n roast the small onions . Remove it ... 
Then roast  the dry red chillies, Fenugreek seeds, coriander seeds n urid dhal separately n then grind the above along with tamarind n jaggery ..remove it add salt n then give the seasoning .

Note : In a bowl add water n add the small onion n keep aside for an hour  ... this will aid in fast removing of the skin.

Mixed Fresh Fruit white Sasam - Cochin Amchi style mixed fruits in coconut curd gravy 


  • Pineapple- Chopped 1 cup
  • Grapes- ( Green n Black ) - 1/4 th cup each
  • Chopped Apples-1/2 cup 
  • Chopped Bananas -1/2 cup
  • Sugar- 3 tsp 
  • Thick sweet Curds- 2 cup's
  • Salt to taste

To Grind
  • Grated fresh coconut- 1/2  cup
  • Green chillies-2 or 3  
Seasoning
  • Oil- 1 tsp
  • Mustard seeds- 1/2 tsp
  • Cumin seeds-1/2 tsp 
  • Curry leaves- 1 sprig 

Method
Grind grated coconut to a fine paste n just before  removing the ground paste add green chillies n then grind for a minute ... remove it .

 In a bowl add thick sweet curds along with sugar n salt , stir it well , then add the  ground paste n add chopped pineapple, apples, banana n then add grapes ... mix well n then do the seasoning .

Chunda - Sweet, Sour N Spicy Pickle -Gujrath Special .VERSION 1, The Traditional Method


Chunda - Sweet, Sour N Spicy Pickle -Gujrath Special.VERSION 1, The Traditional Method 
  • Sour Raw Mango-1 kg
  • Sugar-11/2 kg 
  • Salt- 2 tbsp  
  • Turmeric Powder  -1tbsp
  • Cumin Seeds - 3 tbsp
  • Red Chilly Powder- 2 tbsp 

Method
Wash n pat dry the sour mangoes , peel n grate it . Transfer it to a wide mouthed steel vessel , add salt n turmeric powder n set aside for 2 hours , then add sugar , tie the vessel with a very thin cloth n keep under direct sun for about 10 days ... Make sure to stir it every evening with a clean dry spoon .

On the 10 th day evening , once u get the done chunda at home ...  roast cumin seeds n powder it semi coarsely . Add this to the above chunda mix along with chilly powder n mix well ... Store in a Glass container n can be preserved for nearly 2 years .

Goes well with Methi Tepla, Rottis n Stuffed Paratha's .

Uttara Kannada style Dhal

Uttara  Kannada style Dhal 


  • Thoor dhal- 1cup
  • Tomato-1
  • Ginger- 1 inch piece
    Turmeric powder-1/2 tsp 
  • Green chillies-2 or according to the taste 
  •  Salt to taste 
Seasoning 
  • Oil/ghee-1 tsp
  • Mustard seeds-1/2 tsp
  • Cumin seeds-1/2 tsp
  • Dry red chilly-1

Garnishing 
Chopped coriander leaves 

Method
Soak Thoor dhal for about 10 mts n then pressure cook it with Chopped ginger, slit green chillies , chopped tomato n turmeric powder .... then add water n make it to a pouring consistency add salt n then do the seasoning n garnishing .

Kukku  Rasayana ( Mango coconut milk Dessert ) Udupi delicacy !


  • Ripe Mangoes-6
  • Coconut - 1 big 
  • Jaggery-300 gms
  • Cardamom powder- 1/2 tsp
  • Salt - A Pinch 

Method
Peel Mangoes , crush the pulp ,add a pinch of salt ,crushed jaggery n keep aside .

Grate coconut n extract thick coconut milk then add it to the above pulp , add cardamom powder n serve chilled .

Belada Hannu Panaka/Bel Fruit Juice/wood Apple Juice


Belada Hannu Panaka/Bel Fruit Juice/wood Apple Juice
  • Bel Fruit - 2 
  • Water- 4 to 5  glass 
  • Jaggery - 2 or 3 cubes ( or according to the sweetness )
  • Cardamom powder - 1/2 tsp 

Method
Break open the hard shell of Bel fruit /wood apple n scoop out the flesh ... then grind it to a smooth paste . 

In a vessel add water n Jaggery  , then add the ground paste , cover n keep for about 1/2 an hour n see to it that the jaggery dissolves ... then filter it ..add cardamom powder n serve chilled ! 



Brinjal Gojju 


  • Brinjal ( i have used long purple ones ) -2 
  • Vangi baath powder - 2 or 3  tsp 
  • Oil-3tsp
  • Mustard seeds-1/2 tsp 
  • Jaggery - Marble size 
  • Tamarind - one big lump ( soak in water for about 1/2 an hour ) 
  • Salt to taste .

Method 
Chop brinjal to fine pieces .

In a kadai add oil , splutter mustard seeds  n then add finely chopped brinjals n cook till tender ... add the tamarind pulp, jaggery ,salt n vangibath powder n cook till the gojju thickens .


Maavinahannu Seekarne ( Mango Milk Dessert )

Maavinahannu Seekarne ( Mango Milk Dessert ) 

  • Alphonso Mango or any other sweet variety Mangoes-2 
  • Milk - 1/2 litre 
  • Sugar - 2 tsp 
  • Cardamom powder- 2 pinch 
Method
Peel the skin of the mango n chop it to fine pieces . 

Boil milk , cool it n add sugar n mix well . add the chopped mango pieces along with cardamom powder n serve chilled !

Pumpkin Masala Curry

Pumpkin Masala Curry  
  • Pumpkin -1/2 kg ..cut into 2 inch pieces 
  • Onion's - 1 big sized
  • Tomato- 1 big sized
  • Green chillies -2 to 3
  •  Water-1 to 2 cups
  • Ginger garlic paste -1 tsp
  • Red chilly powder -1 tsp
  • Turmeric powder- 1 tsp
  • Coriander powder-1 tsp
  • Dry red chilly- 4to5
  • Curry leaves- 1 sprig
  • Ground nuts- 1 cup (roasted n coarsely ground)
  • Oil- 1 Tbsp
  • Salt to taste 

Garnish 
Coriander leaves

Method
In a kadai add oil ,dry red chilly ,  curry leaves n fry for a minute ..then add chopped onions n fry till its transparent , then add ginger garlic paste n green chilles n fry for a minute .Add chopped tomatoes n cook till  the raw smell goes n its mushy .Add in all the powders n fry for a minute . Then add the chopped pumpkin pieces n saute for a minute n add a cup of water along with salt , close the lid n cook the pumpkin pieces  are tender , then smash with the backside of the spoon , the gravy becomes thick , n then add the powdered groundnut n let it boil ... once done garnish with coriander leaves .

Goes well with rottis , phulkas n even rice .

Broken Wheat /Dalia Adai

  • Broken wheat -1 cup
  • Urid dhal- 1/2 cup
  • Thoor dhal-1/2 cup
  • Moong dhal-1/2 cup
  • Chana dhal-1/4 th cup
  • Dry red chilles -2
  • Green chillies-2
  • Hing- 2 pinch
  • Grated coconut-1/2 cup
  • Cumin seeds-1/2 tsp
  • Drumstick leaves/ Methi leaves- roughly chopped- 1 cup
  • Chopped onion- 3/4 th cup
  • Salt to taste

Method
Soak Urid, Thoor, Moong n Chana dhal for about 2 hours . 

Soak Broken wheat jut for 10 mts.

Grind all the dhals, broken wheat dry red chilly, green chilly, hing, cumin seeds to a coarse paste , remove it n add salt , chopped drumstick leaves and onions ..mix well ... the batter need to be little thick like idly batter . no need to ferment . 

Heat  a dosa tawa , add a tspo of oil n then spread a ladle full batter ... n cook on both sides till done .

Serve hot with chutney !

  • Ragi Flour -1 cup
  • Wheat flour-1 tbsp
  • Cumin seeds-1 tsp
  • Onions chopped- 1/2 cup
  • Grated ginger- 1 tsp
  • Coriander leaves chopped-1/4 th cup
  • Green chilles chopped - 1 tsp
  • Salt to taste

Method
In a bowl add ragi flour, wheat flour , salt n water n make it as a batter ..add cumin seeds , chopped onions, chopped green chilles, chopped coriander leaves and mix well .

Heat a dosa tawa n apply oil n spread a laddlefull batter , dont sporead too much ... roast on both sides . 

Tomato Onion Dip 
Tomatoes Large -5 
Onion - 3 Medium 
Red chilly powder- 2 tsp 
Cumin powder- 1 tsp
Coriander Powder-1tsp
Sugar- 1/2 tsp 
Oil- 3tsp
Salt to taste 

Method 
Wash n boil tomatoes in water till soft . cool, remove the skin n puree it .

In a kadai ,add oil n then add chopped onions n fry till reddish pink . Add the tomato puree n fry nicely till the raw smell goes .Add salt n all the powders along with sugar n fry for 3 minutes .
