Cucumber Tomato Onion Raitha

Cucumber Tomato Onion Raitha
  • Tender Cucumber -2 
  • Tomato-1
  • Onion -1 
  • Green chilly -2
  • Curds -2 cup's 
  • Salt to taste 

Seasoning 

  • Oil -1 tsp
  • Mustard seeds-1/2 tsp
  • Hing/Asafoetida-2 pinch 
  • Dry red chilly -1 , broken
  • Curry leaves -1 sprig 

Method 
Wash , remove the skin of cucumbers n chop them into small pieces , chop tomato ,onion n green chilly ... Add curds into a bowl , add salt n mix ..add the chopped vegetables n mix well ..then season ..

Dry Fruits Kosambari  

  • Dry fruits like Almonds,  Cashew nut , Pista, Raisins, Fibs , Walnut ,Apricot, Dates ...Chopped ..1 cup heaped
  •  Green chilly ..2 chopped 
  • Hing/Asafoetida water ...1/4 th tsp 
  • Grated coconut .. 1 tblsp 
  • Salt to taste .


Seasoning 

  • Oil..1 tsp 
  • Mustard seeds ..1/2 tsp
  •  Curry leaves ..1 sprig


Method
 In a bowl add the chopped Dry fruits, green chilly , grated coconut , hing water n salt ..Mix well n then give the seasoning

Raw Mango, Cucumber ,Chanadhal Kosambari,

Raw Mango, Cucumber ,Chanadhal Kosambari, 
  • Chana Dhal - 1 tblsp 
  • Chopped Green chillies...3 
  •   Finely chopped Cucumber,without skin ..1 cup 
  • Chopped Raw Mango with skin  .. 1/2 cup 
  • Grated coconut.. 2 tsp 
Seasoning  
  • Oil ...2 tsp 
  • Mustard seeds: 1/2 tsp
  • Hing /Asafoetida -a pinch 
  • Curry leaves-1 sprig 

Garnishing 
  • chopped coriander leaves -2 tsp
  • Salt: to taste

 Method:
Soak chana dhal in water for about an hour n drain the water completely .. keep aside ..

In a bowl add chana  dhal, chopped cucumber,chopped raw mango , chopped  green chillies, grated coconut , salt , chopped coriander leaves n mix thoroughly.

Give the  seasoning  and mix well .

  • Cucumber ..2 
  • Chopped Green chillies...4 
  • Salt to taste 

Seasoning 

  • Mustard seeds: 1/2 tsp
  • Hing /Asafoetida -a pinch 
  • Curry leaves-1 sprig 

Garnishing 

  • chopped coriander leaves -2 tsp
  • Lime juice -1/4 tsp
  • Grated coconut.. 1 tbsp 

 Method
wash n peel the cucumber , remove the skin n chop them to 1 inch pieces . Chop green chilles . 

In a bowl add chopped cucumber, green chillies, grated coconut , salt , chopped coriander leaves n mix thoroughly.

Heat oil and do seasoning ,add lime juice and stir well !.

Karathe Kismuri /Bitter Gourd Kosmburi ...

Karathe Kismuri /Bitter Gourd Kosmbari ..

  • Bitter Gourd ... 1 huge
  •  Salt to taste 
  • Oil to deep fry 
  • Grated coconut...1/2 cup 
  • Green chilly 2 or 3 
  • Tamarind ...Goose berry size ( soak in little water for 10 mts , squeeze well n discard the residue n retain the water ) 
  • Onion ...finely chopped ... 1

 Method
 Wash the bitter gourd n slightly scrap it ..Chop it into 1 inch pieces ..apply salt n set aside for 1/2 an hour .


Heat oil in a kadai , squeeze well the bitter gourd pieces n deep fry till crisp ...remove it on tissue paper to remove excess oil .. 

In a bowl add the grated coconut, chopped green chilly, tamarind water , chopped onion n mix well with hands ... add in fried bitter gourd pieces ,mix again n serve immediately .

 Note : u can prepare this bitter gourd fries n keep in air tight container n use as n when to prepare kismuri ..

  • Cherry tomatoes..a hand full 
  • Fresh Basil leaves chopped ..1/2 cup 
  • Onion chopped ...1/2 cup
  • Black pepper powder..1/2 tsp
  • Lime juice..1/2 tsp
  • Olive oil..1 tsp
  • Salt to taste . 


Method 
In a mixing bowl add cherry tomatoes, chopped sweet basil , chopped onion ,black pepper powder, lime juice, salt n olive oil ..mix well n serve .

Carrot Groundnut Salad

Carrot Groundnut   Salad 


  • Carrot – 2 large grated
  • Groundnut  –  1/4 th cup crushed
  • Coriander leaves – 2 tblsp finely chopped
  • Lemon Juice – 2 tsp
  • Pepper to taste as per the spice one requires . 
  • Salt to taste

Method
Wash the carrot n grate it . 

Dry roast the groundnuts , peel n crush it . 

Chop coriander leaves . 

In a bowl add the grated carrot, crushed peanut , chopped coriander leaves, lime juice , pepper powder n salt . Toss well .


Serve immediately.

  • Curry leaves- 1 sprig 


Method 
Chop tomatoes n onions . To it add chopped green chillies, curds n salt .Mix well n then give the seasoning

Mango Raitha 


  • Curds- 2 cups 
  • Sugar- 1 tsp 
  • Ripe Mangoes- 2 ( chopped ) 
  • Salt to taste 


Seasoning 

  • Oil - 1 tsp
  • Mustard seeds- 1/2 tsp 
  • Dry red chillies- 2 


Garnishing 

  • Few pieces of  chopped mango 


Method 
In a bowl add curds, sugar n salt ..mix well ..then add chopped mangoes n stir again .. Give the seasoning n then do the garnish .

Corn Pomegranate Kosambari !!

Corn Pomegranate Kosambari !!


  •  Corn kernels - 1 cup 
  • Pomegranate seeds - 1 cup 
  • Green chillies - 2 or according to the spice
  • Salt to taste 


Seasoning 

  • Oil - 1 tsp 
  • Mustard seeds- 1/2 tsp
  • Curry leaves - 1 sprig 


Garnishing 

  • Grated coconut- 4 tsp 
  • Hing water- 1 tsp 
  • Coriander leaves chopped - 2 tsp 
  • Lime Juice - 1 tsp 


Method
Wash n pressure cook corn kernels for one whistle with very little water ..drain n keep aside. 

In a wide bottomed vessel add the cooked corn kernels, pomegranate seeds , chopped green chillies, salt n toss it well ..then do the seasoning n garnish .

Beetroot pachadi /Raitha 


  • Beetroot - 1  
  • Curd - 1 cup 


To grind 

  • Grated coconut- 1/2 cup 
  • Green chillies-3 
  • Hing/Asafoetida- 2 pinch 
  • Mustard seeds-1/4 th tsp 
  • Salt to taste 


Seasoning

  • Oil-1 tsp
  • Mustard seeds-1/2 tsp
  • Urid dhal- 1 tsp 
  • Curry leaves- 1 sprig 


Method
Wash well , peel the beetroot  n grate it . 

Cook the grated beetroot in a pan without adding any water , once cooked add the ground paste n cook for about 5 minutes, then add curds, mix well  ... switch off immediately n then do the seasoning .

Dudhi Raitha
  • Dudhi/Bottle gourd ( peeled n grated ) 1 cup 
  • Curds-1 cup
  • Salt to taste

Seasoning
  • Oil-2 tsp 
  • Mustard seeds-1/4 th tsp 
  • Cumin seeds-1/2 tsp
  • Crushed garlic- 1 tsp 
  • Crushed green chillies- 1/2 tsp 
  • Turmeric powder-1/2 tsp

Method
Boil grated dudhi in little water ... once cooled add it to curds along with salt n mix well ... give the seasoning .

Carrot Kosambari.
  • Grated carrots - 2 cups 
  • Finely chopped onions- 1/2  cup 
  • Chopped green chillies- 3 or according to the taste
  • Grated coconut- 3 tsp
  • Salt to taste 

Seasoning
  • Oil-2 tsp
  • Mustard seeds-1/2 tsp
  • Curry leaves-1 sprig
  • Hing /Asafoetida-2 pinch 

Method
In a bowl , add grated carrots,  finely chopped onions, chopped green chillies, grated coconut.

Heat oil in  a pan n splutter mustard, add curry leaves , hing n pour this over the carrot mix ... n mix well .

Methi Leaves Salad !


Methi Leaves Salad !
 Chopped Methi leaves - 1 cup 
Onions - 1 medium 
Red chilly powder- 1 tsp
Roasted cumin powder-1/4 th tsp
Olive oil-1tsp 
Salt to taste .

Method 
In a bowl add chopped methi leaves, chopped onions, red chilly powder, cumin powder, salt n olive oil .. mix well  .

Goes well with Rotis !

Moong dhal n Cucumber Kosambari ! 
  • Moong dhal - 4 tbsp
  • Chopped Green chillies: 1-2
  •   Finely chopped Cucumber: 1/2 cup
  • Grated coconut: 1 tbsp 

Seasoning
  • Mustard seeds: 1/2 tsp
  • Hing /Asafoetida -a pinch 
  • Curry leaves-1 sprig 

Garnishing
  • chopped coriander leaves -2 tsp
  • Lime juice -1/4 tsp
  • Salt: to taste

 Method:
