Aaloo Kasuri Methi Stuffed Paratha Topped with Methamba 


Aaloo Kasuri Methi Stuffed Paratha


For the outer covering 


  • Whole wheat flour -2 cup's 
  • Water as needed to knead to a soft dough
  • Oil -2 tsp 
  • Salt to taste .


For the stuffing 


  • Potatoes -3 
  • Oil - 2 tsp 
  • Mustard seeds -1/2 tsp 
  • Saunf / Fennel seeds -1/2 tsp ( if u dont like the taste of saunf, u can add zeera /Cumin seeds instead ) 
  • Hing /Asafoetida - 2 pinch 
  • Curry leaves - 1 sprig , finely chopped 
  • Green chilly - 2, finely chopped 
  • Onion - 1 , finely chopped 
  • Turmeric powder-1/4 th tsp
  • Red chilly powder-1/2 tsp 
  • Kasuri methi/Dried Methi leaves  crushed -1 tblsp 
  • Lime juice - 1 tsp 
  • Salt to taste . 


Method 

For outer covering 
In a bowl add wheat flour ,  salt, oil , water litle by little and prepare a soft dough . Keep aside for 1/2 an hour under moist cloth  



Pressure cook potatoes .Cool , peel n mash the potatoes well .

For stuffing 
In a kadai add oil, splutter mustard seeds , add  hing , saunf , add finely chopped curry leaves n then add finely chopped green chilly , stir for few seconds . Add finely chopped onion n saute till transparent .. add salt , turmeric powder , n red chilly powder then add the well mashed potatoes n crushed kasuri methi n stir for few seconds . Switch off the gas n add lime juice ... mix well n allow  it to cool 

To make paratha 
Take small portion of the dough and flatten into a disc, place a tablespoon of the filling in the center of the disc and pinch the sides together around the filing and roll out as chapathis but with a thickness . Roast on both sides on hot tawa ,smeared with ghee . 



Methamba ... Sweet, Sour n Spicy Raw Mango Delicacy 
  • Raw Mango - 1 , i used Thotapuri variety 
  • Oil - 1 tblsp
  • Mustard seeds - 1 tsp
  • Cumin Seeds -1/2 tsp
  • Methi /Fenugreek seeds - 1 tsp
  • Hing /Asafoetida - 2 pinch
  • Red chilly powder- 2 tsp , increase or decrease as per the spice , i used Kashmiri laal
  • Turmeric Powder - 1/4 th tsp
  • Jaggery - 1/2 cup ( i used organic powdered )
  • Salt to taste

Method
Wash raw mango n pat it dry as no moisture retains , peel it and cut it into big pieces. 


Add oil in a kadai , splutter  mustard seeds , then add cumin seeds n methi seeds n roast for few seconds .n then add hing , stir again for a second . Add turmeric n red chilly powder , salt n add peeled chopped raw mango pieces , mix well ..Cover n cook on medium flame adding very little water  , stir in between , when raw mango pieces is 3/4 th  cooked add jaggery powder n cook for about 5 mts . Cool n store in air tight jar 

 It remains good for about 1 to 2 weeks

Paneer Paratha

Paneer Paratha

For dough

  • Whole Wheat Flour -2 cup's
  • Oil - 1 tbsp
  • Salt to taste
  • Water as needed to prepare the soft dough
  • Ghee /Oil as required to roast the paratha


For Stuffing

  • Paneer grated -3 cup's
  • Finely Grated ginger -1tsp
  • Red Chilly Powder- 1 tsp (Kashmiri powder )
  • Cumin Powder-1 tsp
  • Garam Masala Powder-1/2 tsp
  • Finely Chopped Green chilly - 1 or 2
  •  Finely chopped Coriander leaves - 1/4 th cup
  • Lime Juice - 1 tsp
  • Salt to taste .


Method for dough
In a large mixing bowl , add the wheat flour , salt , oil n water as required n knead to a very soft dough ..Keep covered under moist cloth for half n hour .

Method for stuffing
In a bowl add the grated paneer , finely grated ginger, red chilly powder, cumin seeds, garam masala powder , finely chopped green chilly , finely chopped coriander leaves , lime juice, salt n mix well .

Method for preparing paratha 
Now knead the dough again after 30 mts , for 2 to 3 mts .  

Divide the dough into equal golf sized balls . Take the dough ball , dust n roll into a disc shape  , place 2 or 3 spoons of the stuffing in the center n close from all sides . 

Roll into thick paratha 

Heat a tawa n place the paratha n roast on both sides applying  ghee. 


Serve warm with blob of butter , curds n pickle

Terrace Grown Spring Onion  Greens Paratha

  • Whole Wheat flour-2 Cup's 
  • Ghee - 2 tsp melted 
  • Luke warm water as needed to prepare the dough 
  • Spring onion greens- 1 cup heaped
  • Ajwain /Carom seeds -1/2 tsp  
  • Finely chopped Green chilly -2 
  • Chilly  Powder-1/2 tsp
  • Turmeric Powder- ½ tsp
  • Garam Masala powder  -1/2 tsp 
  • Salt to taste.
  • Ghee for roasting the paratha's as needed .

Method 
In a bowl add whole wheat flour , Ajwain, Chilly powder , Turmeric powder . Garam Masala powder , salt n mix well, then add finely chopped green chilly , chopped spring onion greens n mix again ..Now add melted ghee , little by little luke warm water n knead to a soft dough . Set aside covering with moist cloth for about 10 mts  

After 20 mts, knead the dough again for few seconds . Then make equal size golf balls , dust it n roll into slightly thicker than rotis . 

Heat a tawa n place the rolled paratha on it , smear ghee n cook till golden spots appear n then flip on the other side n keep pressing gently as its been cooked . 

Serve Hot with Curds n Pickle .

Matar Paratha/Stuffed Green Peas Paratha ..Version 2

For the outer dough

  • Whole wheat flour ..2 cup's
  • Oil ..2 tsp
  •  Salt to taste
  • Water as needed to prepare a soft dough .

For stuffing

  • Green Peas .. 2 cup's
  • Besan /Gramflour .. 1 tblsp
  • Green chilly ..3
  •  Coriander leaves chopped ...2 tsp
  • Oil.. 1 tsp
  • Cumin seeds ...1/2 tsp
  •  Hing/Asafoetida ..a generous pinch .
  • Salt to taste .


 Method for outer dough
 In a wide bottomed vessel add the wheat flour, oil,salt n mix ..add water n prepare a soft dough .Set aside for 1/2 an hour . Then make equal golf sized balls of the dough .

Method for stuffing
Wash n  pressure cook green peas just for a whistle .

 Pour the cooked green peas in a  colander ,so that all the water is drained n no moisture retains . Mash it well . 

In a kadai dry roast besan on sim flame , till warm dont burn it ... Remove it ..


In the same kadai add oil,add cumin seeds n stir till it gives a nice aroma ..Remove ..


Add the roasted besan n cumin seeds to the mashed cooked peas along with finely chopped green chilly n coriander leaves 'salt  n mix well ... Make lemon sized ball of it ...


 Divide the dough into equal sized balls . 


Take the dough ball , dust n roll into a disc , place the stuffing in the centre n close from all sides . 

Roll into thick paratha 

Heat a tawa n place the paratha n roast on both sides applying butter or ghee. 

Serve hot with curds n pickle .

Drumstick Flower Paratha

Drumstick Flower Paratha

  • Drumstick Flowers washed ..2 cup's
  • Whole wheat flour ... 1 cup
  •  Maize flour/Makki ka aata ..1 tblsp
  • Green chilly ...finely chopped ...3
  • Ajwain/ Carom seeds ..1/2 tsp
  • Grated Ginger ..1 tsp
  •  Turmeric Powder..1/2 tsp
  •  Oil .. 1 tsp ,
  • Salt to taste


Method
In a bowl add wheat flour.Maize flour, finely chopped green chilly,ajwain ,grated ginger , turmeric powder, oil , salt ..mix well , add water n knead to a soft dough ... Keep aside for 20 mts . Knead again n form golf sized ball of the dough . 

Take two plastic sheet , grease them,place golf sized dough on one sheet , place another plastic sheet over it n then place wooden chapathi maker n press it to a thick paratha size .

 Heat a tawa, place this on heated tawa , drizzle some ghee /oil n roast on both sides .

 Serve warm with pickle/Raitha

Mint Aalu Paratha

Mint Aalu Paratha
For outer dough
  • Wheat flour .. 2 cup's
  •  Oil ..2 tsp
  • Salt to taste
  •  Water as needed to prepare a soft dough .

 For Stuffing


  • Potatoes ...2 
  • Mint leaves .. a handful
  •  Garlic flakes ...5 
  • Ginger ...1/2 inch piece 
  • Green Chilly ..2 
  • Ajwain /Carom seeds..1/2 tsp
  •  Salt to taste 
Method for dough
 In a wide bottomed pan ,add  the wheat flour, salt,oil n water little by little n knead to a soft dough .

...Keep aside for 1/2 an hour ..n then make it to equal sized balls . 

Method
For stuffing
 
Pressure cook potatoes .Cool , peel n mash the potatoes well . 


Grind the mint levaes along with garlic flakes, ginger , green chilles ..dont add water while grinding .. now mix this ground paste to the mashed potates along with ajwain n salt ...Make equal sized round balls n keep aside

 To make paratha 

Take the dough ball  and flatten into a disc, filling  in the centre of the disc and pinch the sides together around the filling and roll out as chapathis but with a thickness . Roast on both sides on hot tawa ,smeared with ghee !

 Serve with Pickle n curds

Mooli /Radish Paratha ..Version 2

Mooli /Radish Paratha.. Version 2 

For outer dough

  • Wheat flour .. 2 cup's
  •  Oil ..2 tsp
  • Salt to taste
  •  Water as needed to prepare a soft dough .

 For Stuffing

  •  Mooli /Radish ... 4
  •  Onion ...1 huge ,
  •  Green chilly ..4
  • Coriander leaves ..1 tblsp
  • Grated Ginger ... 1 tsp
  •  Salt to taste .


Method for dough
 In a wide bottomed pan ,add  the wheat flour, salt,oil n water little by little n knead to a soft dough .

...Keep aside for 1/2 an hour ..

Method
For stuffing
  Wash n Peel d mooli n grate it ,  Sprinkle some salt , mix it well n keep aside for few minutes. 

 Chop onions n green chilly finely .


Squeeze the grated mooli mix ,so that the  excess water is removed. Squeeze it 2-3 times so  that it becomes dry n its easy to roll paratha. To this grated mooli  add  finely chopped onion, green chillies, grated ginger , chopped coriander leaves n little  salt as per taste n mix well .. 


 To make paratha 
Take the dough ball  and flatten into a disc, place the filling in the centre of the disc and pinch the sides together around the filing and roll out as chapathis but with a thickness . Roast on both sides on hot tawa ,smeared with ghee !

 Serve with Pickle n curds

  •  Whole wheat flour ... 1 cup
  •  Besan Gram flour .. 1/4 th cup
  •  Drumstick Leaves ..2 cup's ( wash them )
  •  Any Pickle Masala ..2 tsp
  •  Green chilly finely crushed ..2 
  • Grated Ginger ..1/2 tsp 
  • Turmeric Powder..1/4 th tsp 
  • Salt to taste
  • Water as needed to prepare the dough 
  •  Oil.. 1 tsp 
  •  Ghee .. as needed to roast the paratha . 


Method

 In a bowl add the whole wheat flour , besan, turmeric powder, finely crushed green chilly  , grated ginger , pickle masala ,salt n drumstick leaves .Mix well ,add water n make a soft dough ...Apply oil to the dough n keep aside for about 1/2 an hour . 

Again knead the dough n make into equal sized golf ball's . 


Dust a surface n place the dough ball on it n roll into round thick paratha's. 

 Heat a tawa , place this rolled paratha on it , add ghee n cook on both sides ... 

Serve hot

Black Chana Stuffed Lachha Paratha ( Multi Layered Crispy Soft , Stuffed Paratha ) with Dahi
For outer dough
  • Whole wheat flour ... 2 cup's 
  • Rice flour ..1 tblsp 
  • Ghee ,,,1 tblsp 
  • Salt to taste 
  • Water as needed to prepare a soft dough 
For the stuffing 
  • Black Chana ... 1 cup
  •  Potato ...1 
  • Green chilly ...3
  •  Red chilly flakes  ... 1/2 tsp
  •  Onion ..1 medium
  •  Ginger ...1 inch piece
  •  Amchur/Dry Mango Powder.. 1 tsp 
  • Ghee ... 2 tsp 
  • Coriander leaves ..few 
  • Salt to taste 
Method 
To prepare outer dough .

In a wide bottomed vessel add whole wheat flour , rice flour , salt n ghee . Mix well. then add little by little water n Knead it to a soft dough ,and let it rest for one hour. 


To prepare stuffing 

Wash n soak chana overnight ..Pressurec cook it till soft ..Strain n keep aside .

Wash n pressure cook Potato .. cool, peel it .. 


in a vessel add the boiled chana n boiled  peeled potato n mash well ... keep aside  . 


Grate ginger n onion .. Finely chop green chilly n coriander leaves . .


Add  ghee in a kadai , add grated onion and grated ginger n fry it well ... Now add mashed chana , potato mixture and fry it well adding chopped green chilly , red chilly flakes n salt  .. When it is fried well add  dry mango powder n chopped coriander leaves , mix well ..Stuffing is ready .. allow it to cool . 


To Make laccha stuffed paratha .

 Take the dough and knead it again to make it smooth . Take out a portion,make a flattened ball and roll it in flour like chapathi size n then  spread ghee on it  . Now start making fleets ( like paper fan ) n then coil , Take this round coil  on your palm and make space for stuffing .Put stuffing inside it n seal carefully n very gently .Roll gently such a way that the layers are formed . 


Heat tawa and apply ghee..Place the stuffed laccha paratha on it ... Flip n gently press adding little ghee ... cook on both sides till crisp till golden brown . 

Serve with dahi/Pickle /Chutney .

For outer dough

  • Whole Wheat Flour...1 cup
  • Water as needed to prepare a soft dough
  • Oil..1 tsp
  • Salt to taste


For the Stuffing

  • Oil..2 tsp
  • Mustard seeds..1 tsp
  • Cumin seeds...1/2 tsp
  • Ajwain/Carom seeds..1/2 tsp
  • Hing /Asafoetida..2 pinch
  • Finely chopped green chilles..2
  • Finely chopped onion... 1 cup
  • Red Chilly Powder ..1/2 tsp
  • Turmeric Powder..1/4 th tsp
  • Besan /Gram Flour ... 6 tsp
  • Finely chopped Coriander leaves..1 tblsp
  • Salt to taste .


Method to prepare the dough
In a bowl ,add the wheat flour, salt n just enough water to prepare a soft dough ..grease the dough with oil n set  aside for 1/2 an hour .

Method for stuffing
In a kadai add oil , splutter mustard seeds then add cumin , ajwain , hing n saute for a while ..add finely chopped green chilles n onions n fry till the onions turn soft . Add chilly n turmeric powder along with salt n mix well ... then add the gram flour n stir for a while . Lastly add chopped coriander leaves n mix again . Allow it to cool n mix well with hands n make equal sized golf sized balls  ...

Whole Wheat Butter Naan

Whole Wheat Butter Naan 
  • Whole Wheat Flour ..2 cup's
  • Melted Ghee..1 tblsp 
  • Curd ..3 tsp 
  • Dry Yeast .1 tsp 
  •  Sugar ..1 tsp 
  •  Warm water..1/2 cup 
  •   white sesame seeds .. 3 tsp 
  • Salt to taste 
  • Butter for brushing the naan 

Method 
In a cup add dry yeast , sugar n warm water n mix well ... keep aside for 10 mts , till it becomes frothy . 

Sieve whole wheat flour n salt .

In a bowl add the seived flour , curds, ghee , yeast mixture n knead  well to a soft elastic dough .  . Keep aside for about for 4 hours , covered with a lid , so that the dough will raise . 
After 4 hours , knead it again for 5 mts  

Divide the dough into medium sized balls 
Dust a platform n roll the dough ball into 7 inch circle for round naan n can even make oblong shape .

Sprinkle a few white sesame  seeds on it n gently roll , so that the sesame seeds  stick to the naan . 

Heat a kadai n then place the rolled naan on it n just for a second cook n flip over ..Then like phulka ,Roast them direct on flame... Apply butter to the cooked naan . 

Serve hot with any spicy gravy .

For the dough


  • Wheat flour ... 1 cup 
  • Ajwain /carom seeds .. 1 tsp 
  • Kasuri Methi...  2 tsp 
  • Oil ..2 tsp
  • Water as needed to prepare a soft dough 
  • Salt to taste 
For the stuffing 


  • Potatoes...2 
  • Finely chopped green chilles..2 
  • Finely chopped coriander leaves ..1 tblsp 
  • salt to taste 

Method 
In a bowl add wheat flour , crushed kasuri methi , ajwain , salt, oil , water and prepare a soft dough . Keep aside for 1/2 an hour . 

Pressure cook potatoes .Cool , peel n mash the potatoes well . To it add salt, chopped green chilles n coriander leaves ... mix well

Gobhi Paratha

Gobhi Paratha

For the outer dough

  • Wheat flour ..1 cup
  • Oil ..1 tsp
  • Salt to taste
  • Water as needed to prepare a soft dough


For the stuffing

  • Oil ..2 tsp
  • Cauliflower florets ... 1 cup
  • AjwainCarrom seeds .. 1/2 tsp
  • Green chilly ..2
  • Garlic flakes .. 4
  • Ginger ..1/4 th inch
  • Chilly powder..1/2 tsp
  • Turmeric Powder..1/4 th tsp
  • Coriander leaves ... a few sprigs
  • Lime Juice..1 tsp
  • Salt to taste


Method
In a bowl add wheat flour ,salt, oil n enough water n knead to  a soft dough .Keep the dough aside for about 20 mts .

Boil water , add salt n cauliflower florets .Keep covered for about 10 mts .Drain well .

Grate the cauliflower florets . grate ginger n garlic .

Finely Chop the green chilly  n coriander leaves.

In a kadai add oil ,add ajwain, then grated ginger n garlic . Allow to fry for a while .Then add the chopped green chilly , chopped cauliflower florets n fry again for sometime .Add chilly powder, turmeric powder , salt n mix well .Switch off and add coriander leaves n add lime juice .Mix well n allow to cool .Prepare equal lime sized balls of the stuffing . 

Divide the dough into equal sized balls . 

Take the dough ball , dust n roll into a disc , place the stuffing in the centre n close from all sides . 

Roll into thick paratha 

Heat a tawa n place the paratha n roast on both sides applying butter . 

Serve hot with curds n pickle .

Red Amaranthus leaves Paratha

Red Amaranthus leaves Paratha

  • Wheat Flour..1 cup
  • Red Amaranthus leaves ..finely chopped..1 cup
  • Sambar Powder.. 2 tsp
  • Oil..2 tsp
  • Salt to taste

Method 
In a bowl add wheat flour, sambar powder , oil, salt , chopped Amaranthus leaves n just enough water ,knead well n  prepare a soft dough n keep aside for 20 mts. 

Make lemon sized balls of the dough .

Dust a wooden platform n roll out each dough balls into 5 inch round paratha . 

Heat a tawa , place the paratha n  roast on both sides adding ghee or butter .

Serve hot with pickle/chutney powder .
