Ukde seeth,  Alsande Upkari, Mysuru Badane /Green Long BrInjal Tawa fries, Ambuli Nonche, Sprouted Moong Ghassi n Curds

 Alsande Upkari /cow pea beans palya (Amchi style stir fry )
  • Chopped Alsando /Cow Pea beans-2 cups 
  • Oil-2 tsp
  • Mustard seeds-1/2 tsp 
  • Dry red chillies-2 or 3 according to the taste
  • Grated coconut - 1/4 th cup 
  • Water -1/4 th cup 
  • Salt to taste 
Method 
In a kadai add oil, mustard seeds once it stops spluttering add red chillies n fry for a sec n then add chopped alsando along with water n salt ..stir once n cook it covered till all the water evaporates . add grated coconut n mix well .


 Mysooru Badanekaayi / Long green Brinjals Tawa Fries 

  • Mysooru Badanekaayi / Long green Brinjals..3
  •  Dry red chilly ...2 tsp
  •  Turmeric powder ..1/4 th tsp
  •  Hing /Asafoetida .. 2 pinch
  •   Rice Flour ..1 tblsp
  •  Salt to taste .
  • Oil just a tsp to tawa roast .. 


 Method
 Wash n pat dry the brinjal's .Slice them . 

 In a bowl add red chilly powder , turmeric powder, hing, salt n  cut  brinjal's ,mix well n sprinkle little water n set aside for about 5 mts .

 In a plate, add rice flour ... run the marinated brinjals over it .

Heat a tawa , drizzle oil ...place the marinated brinjal slices,side by side n roast on both sides . 



 Keerlayile Mooga Ghassi  /Sprouted Green Gram cooked in cocount based Masala  ) 

Gud Gud Alambe Ambado/Seasonal Thunder Mushroom Fritters .

Gud Gud Alambe Ambado/Seasonal Thunder Mushroom Fritters . 
Gud Gud Alambe /Thunder Mushroom .. washed, cleaned n peeled ...2 cup's 
Raw Rice ..1/2 cup 
Grated coconut .. 2 tsp  
Dry Red Chilly ... 3 or 4 
 Besan /Bengal Gram Powder... 2 or 3 tsp
 Salt to taste .
  Oil to deep fry . 

Method 

Soak raw rice for 1/2 an hour n grind with grated coconut, dry red chilly ,salt to a semi coarse paste . Dont add water while grinding ... remove the paste n then add cleaned peeled thunder mushrooms n besan ... Mix well .

Make into round balls n deep fry immediately. dont keep the batter after adding thunder mushrooms .

Urid Rawa /Semolina Doddaka adding Grated Coconut 

  • Urid Dhal ..1/2 cup
  •  Semolina /Rawa ...1 cup heaped . 
  • Salt to taste . 


To Crush to semi coarse . 

  •  Grated coconut ..1 tblsp heaped 
  • Green chilly ..2 or 3 
  • Ginger ..1 inch piece 
  • Hing/Asafoeitda ..2 pinch  


Method 
Soak urid dhal for 3 to 4 hours n grind to a fine batter ..Add salt n ferment overnight .

 Next day to the fermented batter add semolina n mix well without any lumps . 

Crush grated coconut, green chilly , ginger n hing
 coarsely . Add this to the above batter n set aside for few mts .. Add water for consistency but the batter should be thick like idly batter ... 

 Heat a dosa tawa , smear oil n pour ladle full batter but dont spread too much ..cook on medium flame ... covering n flip on the other side till done . 

Serve hot with chutney .

A thali of Ukde seetha, Dhal Rasam, Tendle Batate Upkari, Coriender leaves Gojju , Chane Ghassi with Kadgi , Jeev Kadgi Podi n Butter MilK 

Dhal Rasam 
  • Thur Dhal ..1/2 cup 
  • Tomatoes ...3 fully ripened 
  •   Tamarind ...Goose Berry size 
  • Rasam Powder..2 tsp 
  • Salt to tatse 
Seasoning 
  • Oil 2 tsp
  •  Garlic Flakes ...6 

Garnishing
  •  Coriander leaves ...2 tsp chopped . 

Method
 Wash thur dhal .. 

Chop Tomatoes roughly 

Pressure cook thur dhal n chopped tomatoes .. Cool n churn it well . 

Soak Tamarind in little water for 10 mts , squeeze it well . Add rasam powder to it n mix well . add this to the cooked ingredients , water for consistency ,salt n boil well . Give the seasoning n then garnish 

Tendle Upkari/ Ivy Gourd Stir fry
  •  Tendle /Ivy gourd... 1/4 th kg 
  • Oil..2 tsp 
  • Mustard seeds ...1/2 tsp 
  • Dry red chilly ...3 broken 
  • Water ..just little 
  •  Salt to taste
  • Grated coconut ..1 tblsp 

 Method 
Wash the ivy gourd's n slice them thinly . 

In a kadai add oil n splutter mustard seeds , add torn dry red chilly n stir for a few seconds Add sliced ivy gourd, little water n salt ..keep covered n cook till done n then garnish with grated coconut . 

Coriander leaves Gojju 
  • Grated coconut- 1/4 th cup 
  • Coriander leaves- 1 cup 
  • Roasted dry red chillies- 5 or according o the taste
  • Tamarind-Tamarind seed size 
  • Jaggery - Tamarind seed size 
  • Salt to taste 

Seasoning
  • Oil-1tsp
  • Mustard seeds-1/2 tsp
  • Curry leaves-1 sprig 

Method
Grind grated coconut, coriander leaves , roasted dry red chillies, tamarind, jaggery n salt to a fine paste n then do the seasoning 

Chane Ghassi with Kadgi ( Chickpeas Coconut Gravy with Raw Jackfruit )

Kala chana/chickpeas -1 cup  
Raw jackfruit pieces-1/2 cup

To grind to a fine paste 
Grated coconut -11/2 cups 
Fenugreek seeds-5 to 6 seeds  
Red chilies -10 to 12 or according to the taste 
Tamarind - tamarind seed size 

Seasoning 
Oil-1 tsp
Mustard-1/2 tsp
Curry leaves -1 sprig  

Method 

Soak Chana/Chick peas overnight ,n pressure cook it for 8 to 10 whistles or till cooked ! dont discard the water ! Pressure cook d raw jackfruit too for 1 whistle .. 
Separately roast red chillies n fenugreek seeds in little oil ..
Now grind grated coconut, red chillies n tamarind , when half ground add the roasted fenugreek seeds n grind to a fine paste .. 
Add the ground masala,along with salt  to the cooked chana and raw jackfruit n boil it for 5 mts !
Season the gravy with mustard seeds n curry leaves.
Jeev Kadgi Tandala pitti podis  ( Bread fruit fries using rice flour ) 
  • Bread Fruit/Jeev Kadgi  - 1 
  • Rice Flour ..1/4 th cup 
  • Oil as required to deep  fry 
For the batter 
  • Red chilly powder..2 tblsp 
  • Turmeric Powder.. 1/2 tsp 
  • Hing/Asafoetida - a generous pinch 
  • Salt to taste 

Method 
Peel the bread fruit n slice it 

In a bowl add chilly powder, turmeric powder, hing  n salt , mix well  .. it should be a thick batter  so add little water   .  Add the sliced breadfruit in the prepared batter , marinate it for 10 mts . 

Heat oil in a kadai ,   Run each marinated bread fruit pieces over rice flour  n deep fry till crisp  at  4 to 5 at a time .

Dhal Rasam

  • Thur Dhal ..1/ 4 th cup 
  • Tomatoes ...3 fully ripened 
  •   Tamarind ...Goose Berry size 
  • Rasam Powder..2 tsp 
  • Salt to tatse 


Seasoning 

  • Oil 2 tsp
  •  Garlic Flakes ...6 


Garnishing

  •  Coriander leaves ...2 tsp chopped . 


Method
 Wash thur dhal ..

Jeev Kadgi Ghassi with Ambado ( Bread Fruit cooked in Coconut Based Gravy adding Sour Hog Plum )

 .Jeev Kadgi Ghassi with Ambado  ( Bread Fruit cooked in Coconut Based Gravy adding Sour Hog Plum ) 

  • Jeev Kadgi/Bread fruit  ... 1 Medium 
  • Sour Hog Plum ...2 or 3 Medium 

To grind to a fine paste 

  • Grated coconut..2 cup's
  • Roasted dry red chillies.. 5 to 7 
  • Urid Dhal..1 tsp heaped  ( roast in little oil, till reddish ) 
  • Salt to taste 

Seasoning

  • Oil..1 tsp
  • Mustard seeds..1/2 tsp 
  • Methi/Fenugreek  Seeds ..1/4 th tsp 
  • Curry leaves..1 sprig 


Method 
Wash the bread fruit , peel  n chop into 2 inch elongated pieces. Wash n slightly crush the sour hog plum  n cook both till  soft in little water .

Grind grated coconut, roasted dry red chillies  to a fine paste .n just before removing the masala add the roasted urid dhal n grind for just a second . Add the ground paste to the cooked stuff's n boil .Later give the seasoning .


 Note : if no sour hog plum's then add little tamarind while grinding the masala .

Semolina Banana Pudding

Semolina Banana Pudding 

  • Rawa /Semolina .. 1  Cup
  • Boiled Milk ... 1 Cup
  • Boiled Water ..1 cup
  • Powdered Jaggery .. 3 /4 th  Cup ( adjust as per sweetness ) 
  • Banana .. 2 sliced ..keep few for garnishing
  •  Ghee ..1 tblsp ( 3 tsp for Roasting Rawa n 1 tsp for roasting Raisins n Cashew nuts  )
  • Raisins .. 8
  • Cashew nuts  Broken ..6
  • Almond  ..10
  •  Walnut : 6
  • Cardamom powder .. 1/2 tsp
  • Pinch of Salt.
  • Ghee ..2 tsp
Method 
In kadai melt  ghee n add in rawa , roast till it gives a nice aroma on sim flame . Remove it .

With rolling pin crush almonds n walnut . set aside 

In little ghee roast cashew nuts  n raisins , remove it

In a kadai add little water n melt jaggery ( strain it to remove any dirt ) . Add sliced banana & add dry roasted rawa n mix well ..add boiled milk n boiled water . Mix it properly . Keep it on low flame till all milk &  water mixture evaporates n the rawa gets cooked .Add salt , cardamom powder , crushed almond n cashew nut powder a tsp or 2 of ghee n mix again .

 Garnish it with roasted cashew nuts ,raisins, and  banana slices .
