Spicy Roasted Phool Makhana / Lotus Seeds

Spicy Roasted Phool Makhana / Lotus Seeds 

  • Phool Makhana/Lotus Seeds ...2 Cup's 
  • Ghee ... 1 tblsp 
  • Curry leaves .. 2 sprig's 
  • Red chilly powder .. 2  tsp ( i used Kashmiri chilly powder )
  •  Garam Masala ..1/2 tsp 
  • Cumin powder..1/4 th tsp 
  • Salt to taste 


Method 
Dry roast phool makhana on sim flame for about 6 to 10 mts till crisp n crunchy .  Take it out . 

In a kadai melt ghee n add curry leaves n stir for a second ...Switch off , add all the powders n salt ..Mix it ...Add the roasted makhana , switch on the flame ...n mix well till all the masala is coated well .

 Store in an air tight container ...

Barley Flakes Chivda

Barley Flakes Chivda
  • Barley Flakes - 2 cups
  • Oil - 3 tsp 
  • Mustard seeds-1/2 tsp 
  • Cumin seeds ...1/2 tsp 
  •  Hing/Asafoetida..2 pinch 
  • Green chilles chopped - 2 
  • Dry Red Chilly ...2 broken  
  • Curry leaves- 2 sprigs
  • Groundnuts- 3 tsp 
  • Cashewnuts - a few 
  • Puttani/ Roasted gram - 3 tsp 
  • Dry Roasted White Sesame seeds ..1 tsp 
  • Turmeric powder-1/4 th tsp
  •  Coriander Powder..1 tsp 
  • Salt to taste  
Method In a kadai add oil n  Mustard seeds once sputters , add cumin seeds n allow it to swell ,add hing,  chopped green chilles, dry red chilly broken , curry leaves,  groundnuts,Roasted gram n fry for few minutes n then add roasted white sesame seeds, turmeric powder ,coriander powder n salt  .. fry for a minute .Add barley flakes n fry till crisp . 

Cool n store in air tight container .

Congress Kadlebeeja / Spicy Peanuts 

  • Kadlebeeja /Peanuts ...2 cup's
  •  Curry leaves ...4 sprigs
  •  Oil...2 tsp
  •  Hing/Asafoetida ..2 pinch 
  • Chilly Powder..1 tsp 
  • Turmeric powder ..1/2 tsp 
  • Pepper Powder ..1/2 tsp 
  • Salt to taste .

Method
 In a kadai ,dry roast groundnuts ... cool  n de-skin them ..In the same kadai add curry leaves n dry roast till crisp ... cool n crush it with hands ... In a bowl mix both peeled peanuts, n crushed curry leaves ...

 in a plate add chilly powder ,turmeric powder ,salt n pepper powder ..mix well ...

in a kadai add oil n hing ,stir for few seconds , switch off the flame n add the masala powders ... mix ... then add the groundnut curry leaves mix ... switch on the gas n on sim flame mix well for a few seconds ,
Cool n store in air tight container

Khara Khaddi /Spicy Kharo

Khara Khaddi /Spicy Kharo 

  • Besan/ Gram Flour ... 1/4 th kg 
  • Cumin seeds .. 1 tsp
  •  Hing /Asafoetida water ..1 tsp
  •  Red chilly powder ..2 tsp 
  • Ajwain ...1 tsp 
  • Hot oil.. 2 tblsp  
  •  Water as needed to prepare a thick dough as chapati dough . 
  •  Salt to taste 
  • Oil for deep frying . 


Method 
Pound  cumin seeds n ajwain .

 Seive besan n to it add salt, chilly powder,  hing water , pound mixture n mix these well , add water little by little n prepare a thick dough n then add hot oil n knead again ..

  Fill this dough in Khara Shev mould ... 

Heat oil in a kadai ... directly press the mould in circular way ... fry on both sides till crisp .. 

Remove on a tissue paper .Allow it to cool n then slightly break it into pieces of above size ..

Store in air tight container ..

Puffed Wheat Masala

Puffed Wheat Masala


  • Puffed Wheat ..3 cup's
  • Oil ..1 tblsp
  • Mustard seeds .. 1 tsp
  • Cumin seeds..1/2 tsp
  • Hingu/Asafoetida..generous pinch 
  • Curry leaves ..2 sprig 
  • Roasted gram/Hurikadale ..2 tsp
  • Groundnuts ... 2 tsp 
  • White sesame seeds..1 tsp
  • Red chilly powder..1 tsp
  • Cumin powder..1/2 tsp
  • Coriander powder..1 tsp
  • Turmeric powder ..1/4 th tsp 
  • Dry copra slices ... 1/2 cup 
  • Salt to taste 


Method
Dry roast puffed wheat till crisp on low flame  for few mts in a kadai . Remove it .

Dry roast white sesame seeds .Remove it 

In a kadai add oil n saute the dry copra slices till reddish brown . Remove it 

In the same kadai add rest of the oil , splutter mustard  seeds, add cumin seeds n once they crackle add hing, curry leaves  groundnuts n fry for a while, then add roasted gram n fry even this for a while , add all the powders, salt n mix well .Add the roasted puffed wheat, roasted sesame seeds n roasted coconut dry copra slices , stir well .  

Cool n store in airtight container .
