Rajasthani Aaloo Pyaz ki Sabzi

Rajasthani Aaloo Pyaz ki Sabzi
  • 2 medium  -potatoes
  • 2 medium - Onions
  • 1 medium- tomato
  • 1 tsp -cumin seeds
  • 3-Garlic flakes
  • 1/2 tsp- Mustard
  • little hing
  • Kasuri methi-1/2 tsp
  • Red chilly powder -1 tsp
  • Turmeri powder-1/2 tsp
  • Coriender powder-3/4th  tsp
  • Cumin powder-1/2 tsp
  • salt to taste

In a kadai add 3 tsp oil , mustard, cumin seeds, hing, chopped garlic, onions n fry till pink ,add tomatoes ..fry till d raw smell goes , add in all d powders fry for  2 mts .. add salt , cubed potatoes ,water n crushed kasuri methi . cook till done !

  • 1/4 kg tender Bhindi
  • Green Chilles-2
  • Hing - little
  • Garlic -3 flakes
  • Cumin Seeds-1/2 tsp
  • Turmeri powder-1/2 tsp
  • Red chilly powder-1 tsp
  • Coriender powder-1/2 tsp
  • Cumin powder-1/2 tsp
  • 1 sprig- curry leaves
  • Tomatoes -1
  • Mustard seeds-1/4 th tsp
  • oil-2 tsp
  • salt to taste

Chop Bhindi ...
In a kadai add oil, mustard seeds, cumin seeds, Chopped garlic, hing, green chilles ,curry leaves, n all d powders .. add in chopped bhindi ..fry till d stickiness goes .. add in salt n add tomatoes ..cook till done !

Tadka Dhal !

Tadka Dhal !

  • 1/2 cup -Thoor Dhal
  • 1/2 cup- Moong Dhal
  • 1 tbsp- Chana dhal
  • 2- green chillies
  • 1 -small piece ginger
  • 1/2 tsp- turmeric powder
  • 1-Tomato
  • 1/2 tsp-cumin seeds
  • little hing
  • 2- dry red chilly
  • 1/4 th tsp- red chily powder
  • Ghee - 1 tsp

Soak chanadhal in water for 15 mts and pressure cook it along with thoor dhal , Moong dhal ,green chilles, chopped ginger ,tomato n turmeric powder ...

add in salt and season with ghee, cumin seeds, hing , dry red chilly n red chilly powder !

Kancheepuram Dosa

Kancheepuram Dosa
  • 2 Cups -Dosa Rice
  • 1/2 cup- Urid Dhal
  • 1 tsp - chana dhal
  • 1 tsp-  peper corns
  • 1/2 tsp-turmeri powder
  • 1/2 tsp -Methi seeds
  • a pinch hing 
  • salt to taste  ..

Soak rice, urid , chana dhal n methi seeds for 3 hrs and grind to a fine paste along with pepper corns, turmeric, and hing .. add in salt n ferment the batter overnight .. 

Heat the tawa , smear a tsp of oil n spread a ladle full batter n roast on both sides !

Tuppa Dosa - Version 1

Tuppa Dosa - Version 1
  •  Urad Dhal -1 Cup 
  • Dosa Rice-1/2 Cup
  • Maida-4 tbsp
  •  Sugar-1 tsp 
  • Salt to taste  
Method 

Wash n soak urid dhal n Dosa rice for 5 to 6 hrs n grind it to a fine paste n ferment overnight ..  
 
Next morning soak maida in little water for 20 mts n discard the water n mix soaked maida to the fermented  batter ., mix well .Add salt and sugar .Mix it 

Heat the Dosa tawa ,smear ghee n  spread the batter a little thicker n dont spread too  much .. roast on both sides till crisp .

Note : The batter has to be little thicker than the regular dosa batter .


Ghee Roast Sada Dosa

Ghee Roast Sada Dosa

  • Urid Dhal-1 cup
  • Raw Rice-3 cups
  • Methi /Fenugreek seeds-1tsp
  • Salt to taste
Method
Soak urid dhal, rice and methi seeds for 5 hours  n then grind to a fine paste ..Remove the batter add salt n ferment overnight .

Heat the dosa  tawa .. sprinkle little water n wipe it with a tissue or cloth n pour a ladle full of batter n spread evenly in circular motion . Cover and cook , after a minute add a tsp of melted ghee to the edges of the dosa n cook on both sides till crisp .

Serve hot with chutney /Sambar or any dip of your choice .


Pumkin Vadas

  • Pumpkin - 2 cups finely chopped/ coarsely grated
  • Onion- 1 finely chopped
  • Coriander leaves- one handful chopped
  • Garlic - 1-2 cloves (Optional)
  • Chickpea flour - ¾ th cup
  • Rice flour - ¼ th cup
  • Green Chillies - 2 finely chopped
  • Red Chilly Powder-1/2 tsp
  • Salt to taste
  • Oil for frying
    Method

     In a mixing bowl add all the ingredients expect oil n mix well ... Sprinkle little water if the mix is too thick ..

     Add oil in a kadai , heat it n When oil is hot enough, take little  batter and make a ball and flatten it on your palm. Drop it in oil and fry till brown on both sides few at a time .

    Musti polo -Version 1

    Musti Polo--Version 1 
    •  Dosa Rice-1-1/2 cup's
    • Urid Dhal-1/2 Cup 
    • Methi Seeds-1tsp
    • Laayi /Popped Rice -4 fist 
    • Grated Coconut -2 Fist 
    Method

    Soak rice, urid dhal n methi seeds for 4 hours n grind it along with grated coconut n laayi (soaked in water for 10 mts ) to smooth paste ..add salt ..ferment overnt 


    Heat a Dosa tawa ..smear oil, add a ladle full batter n dont spread too much , cook  only on one side .


    Serve Hot with dollop of butter ,coconut chutney /any dips
    .

    Adai Dosa

    Adai Dosa
    • 1 Glass-Dosa Rice
    • 1/4 th cup -Thur Dhal
    • 1/4th cup-Chana Dhal
    • 1/4 th cup-Moong Dhal
    • 1/4 th Cup-urid Dhal
    • 2-green chilles
    • 1-red chilly
    • small piece -Ginger
    • small piece-onion
    • little coriender leaves
    • 2 sprigs -curry leaves
    • 1 fist full -grated coconut
    • little -hing
    Method
    soak rice n all dhals for 3 hrs n grind it along with both chillies, ginger ,coriender leaves, hing,curry leaves, n grated coconut .. grind to a little coarse paste ..
    can Season the batter with mustard n can even add chopped drumstick leaves ! no need to ferment ..keep d batter for 1/2 an hr .. add salt .. 

    heat a tawa .. smear oil ..take a ladle full batter .. n roast on both sides !

    Serve hot with chutney !

    Cucumber Doddak !

    Cucumber Doddak !
    • 1 -small tender cucumber
    • 1glass-Rice Rawa
    • 1/4 th-cup- wheat flour
    • 3 -green chilles
    • 1-small piece jaggery
    • 1-small piece ginger
    • 2tsp-grated coconut
    • salt to taste

    Method
    Peel the cucumber n grate it .. to it add rice rawa, wheat flour, add in crushed ginger,green chilles ,jaggery n  grated coconut along with salt ..prepare a thick batter ..add little water if required .. 

    Heat a tawa .. smear a tsp of oil  .. take a handful of batter n flaten it on the tawa patting with fingers .. (dip fingers in water ) roast on both sides ! 

    Serve hot with butter/ ghee /chutney pudi !

    Udidu Maida Polo

    Udidu Maida Polo
    • Urad Dhal -1 cup
    • Maida -3 Cups
    • water-8 cups 
    • salt to taste  
    Soak Dhal for 3 hrs , drain n grind to a fine paste .. soak Maida in 8 glass of water for an hour ..drain all the water from the top slowly from maida and mix with the ground dhal with enough water to make a pouring consistency .. ferment overnt

    Heat a tawa ,,appy a tsp of oil ..spread a ladle full of batter n roast on both sides .. 
    serve hot with coconut chutney !

    Paneer Tikka Tawa !

    Paneer Tikka Tawa !

    1 packet cubed
    Capsicum-1 cubed
    Tomato-2 deseeded and cubed
    Onion-1 cubed
    Oil-2 tblspn
     
    For Marinate

    • Curd-1 cup
    • Coriander powder- 1 tblspn
    • Red chilli powder-1 tsp
    • Cumin powder -1 tsp
    • Garam masala powder-2 tsp
    • Turmeric powder -1 tsp
    • Ginger Garlic paste-1 tblspn
    • Chat masala powder-1 tblspn
    • Lemon juice-2 tblspn
    • Salt to taste

    Method 
    prepare the marinate to a smooth paste.. 

    Add in chopped tomato, onion, capcicum and paneer cubes in this and marinate for 5-6 hours in fridge ..remove it out n set it to room temperature ..arrange the paneer ,onion, tomato n capcicum in a  skewer Alternately...
     
    Now heat 1 tblspn of oil in a nonstick pan n gently place the skewer ..shallow fryon both sides for 4-5 mins till cooked..
     
     

    Paneer Butter Masala

    Paneer Butter Masala

    • 1/4 th kg- paneer .. (Cut into cubes n shallow or deeep fried )
    • 3 -big onions,
    •  3- tomatoes( make puree )
    •  cashewnuts-1 fist make paste ..
    • 2tsp-Ginger Garlic Paste
    • 11/2tsp -Garam Masala
    • 1 tsp -haldi
    • 11/2 tsp -coriender powder,
    • 1 tsp- zeera powder
    • 100 gms -Unsalted Butter
    • 1 glass -Milk
    • salt to taste
    • coriender leaves for garnishing
    Method

    Heat 2 tsp of oil n add finely chopped onions fry till pink add Ginger garlic paste  ..
    .. fry for a while ..  add in tomatoo puree , cook till d raw smell goes.... add garam masala powder, haldi powder, coriender powder, zeera powder fry it for a while .. then add cashewnut paste , fry for a mt add in unsalted butter , salt , when it melts add milk ..then add d fried paneer n garnish with coriender leaves!

    Charmburi /puffed rice dosa




    Charmburi (Puffed rice ) Dosa  with Brahmi Leaves Chutney !

    • 1 Cup -Dosa Rice
    • 1/2 Cup -Urad Dhal
    • 1/2 tsp -Methi seeds
    • 3/4 th Cup -Charmburi(puffed rice )
    Method
    Soak Dosa Rice , Urad Dhal n Methi Seeds for 3 hrs n grind with Charmburi ( soaked in water for 10 mts ) .. to a fine paste .. add salt n ferment overnight ..

    Heat the tawa ..apply 1 tsp oil and take a ladle full batter and dont spread the batter too much ..roast on both sides ..Serve Hot with chutney of ones choice !

    Crispy Paper Dosa !

    Crispy Paper Dosa !

    • 1 Cup- Moong Dhal
    • 1 Cup- Dosa Rice
    • 1 Cup- Urad Dhal
    • 1 Cup -Maida
    • 1Cup- Rice Flour

    Soak Moong Dhal , Dosa Rice, Urad Dhal together for 4 hours n grind it to a fine paste
    Mix Maida N Rice Flour in 3 cups of water for 4 hours ..
    add this soaked and drained powders to the ground batter n ferment overnight add salt to the batter

    Heat dosa tawa .. apply 1 tsp of oil and spread d dosa batter n roast on both the sides ..
      
    Serve hot with coconut chutney !

    Vaangi Baath

    • Cooked Rice -2 cups 
    • Brinjals -4 medium sized 
    • Home made Vaangi Baath powder-3tsp
    • salt to taste 

    Seasoning
    • Oil-2tsp
    • Mustard- 1 tsp
    • Turmeric powder-1/4 th tsp  

    Method
     in a pan add oil, mustard,  turmeric powder, add cut brinjals n fry till soft add in the baath powder ..add cooked rice, salt .. can squeeze in lime 4 tangy flavour !

    How to prepare vaangi baath powder at home !..
    1) 1 cup chana dhal
    2) 1 cup urid dhal
    3) 1cup coriender seeds
    4) 1/2 tsp cumin seeds
    5) 1/2 tsp fenugreek seeds
    6 ) one small piece nutmeg
    7)  6 -cloves
    8) dalchini 2 or 3 pieces
    9) dry red chillies 2 fist ( 10 long n 10 short  )
    10) 1 cup dry copra  
    in little oil fry all d above from 1 to 9 n then grind it to powder add dry copra n powder again .. add in salt !
