Ukde seeth ,Terrace grown Beans Upkari, Terrace grown kalalava Paan Alwathi, Dalithoy, Jeev Kadgi, Pagila Tawa Rawa Podi's n: Moogadhali Godse / Payasam

Ukde seeth ,Terrace grown  Beans Upkari, Terrace grown kalalava Paan Alwathi, Dalithoy, Jeev Kadgi, Pagila Tawa Rawa Podi's n Moogadhali Godse / Payasam 


 Creeper Beans Upkari/Beans Stir fry 
  • Tender French Beans- 1/4 th kg  
  • Oil- 2 tsp
  • Mustard seeds-1/2 tsp
  • Dry red chillies- 3 or according to the taste .
  • Grated coconut- 1 tblsp 
  • Salt to taste 

Method 
Wash Beans n Chop Beans 

In a kadai add oil, splutter mustard seeds n add torn dry red chillies , add the chopped vegetable n then little water along with salt n cook til done . Garnish with grated coconut n mix well  

Kalalva  Paan Alwathi ( Colocasia leaves in coconut based gravy )
  •   Colocasia leaves   -10 /12
  • Ambados (Sour Hog plum)-3
  • Ginger- 1 inch 
  • Green chillies- 2 
To grind to a semi coarse paste 
  • Grated coconut -1 cup
  •   Roasted Red chillies - 3
  • Salt to taste .
Seasoning
  • Oil-1 tsp
  •  Mustard seeds -1/2 tsp
  • Curry leaves-2 sprigs
Method
  Finely chop Colocasia leaves with stem (pathrade panna)

Crush hog plums.

Finely chop ginger n green chilles .

Cook chopped Colocasia leaves along with crushed hog plums with little water n then add chopped ginger n green chilles .

Grind grated  coconut and chillies. ( the ground masala shouldnt be too coarse nor too fine ) medium ! Add the ground masala to cooked stuffs add  salt and  boil well ! 

 Give  the seasoning.

Dalithoy 
  • Toor dal - 1 cup
  • Green chilly - 3 , slit 

Seasoning

  • Oil/Ghee -1 tsp
  • Mustard seeds - 1/2 tsp
  •  Curry leaves - 1 sprig 
  • Dry red chillies -2,broken 
  • Hing/Asafoetida water- 1 tsp
  • Salt to taste

Method
Pressure cook toor dal with 1 tsp of oil . It has to be cooked well ,then churn it . Add slit green chillies with salt n boil well .
In a seasoning  pan add oil or ghee , Add mustard seeds , when they splutter add torn red chillies n curry leaves...add this to the cooked dhal n then add hing water . 



Jeev Kadgi/Bread Fruit Tawa Rawa Fries 
  • Jeev Kadgi  /Bread fruit Slices  - 10
  • Red chilly powder- 1 tblsp
  • Turmeric powder- 1/2 tsp
  • Hing /Asafoetida- 2 pinch 
  • Semolina /Rawa - 1 tblsp 
  • Salt to taste 
Method 
In a bowl add the  red chilly powder, turmeric powder , hing ,salt n sliced bread fruit  .. mix well . keep aside for 5 minutes .

Run the marinated  pieces over rawa .

Heat a tawa , smear little oil n shallow fry on both sides till crisp.


Pagila/ Kantola Tawa Rawa Roast  

  • Pagila/Kantola..4 
  • Red chilly powder.. 1 tblsp
  • Hing/Asafoetida ..2 pinch
  • Turmeric powder..1/4 th tsp 
  • Rice flour..2 tsp
  • Salt to taste 
  •  Semolina/Rawa ..1 tblsp 
  • Oil for shallow fry 

Method 
Wash the Kantola n slice them .

In a bowl add red chilly powder, hing, turmeric powder ,rice flour n salt . Add the sliced kantola n mix well ..keep aside for 5 mts . 

Heat oil in a kadai , run the marinated kantola in semolina .Heat a tawa , drizzle oil n place the marinated kantola side by side n roast on both sides

Moogadhali Godse /Moong Dhal Payasam 
  • Moogadhali  /Split skinless yellow  green gram- 1 cup
  • Water - 2 cup's 
  • Jaggery - 1/2 to 3/4 th cup (adjust per the sweetness preferred )
  • Thick Coconut milk - 3/4 th cup
  • Cardamom Powder -1/2 tsp 
  • Ghee - 3 tsp 
  • Cashew nuts slit -6
  •  Raisins - 6 

Method 
Wash Mooga Dhali n drain the water completely. Allow it to dry for few mts .

In a pressure cooker , add a tsp of ghee, add the washed dried mooga dhali n roast for few mts till a nice aroma oozes . Add water n pressure cook only for 1 whistle . Slightly mash the cooked dhal , Add little water n jaggery powder n cook it till jaggery is dissolved  . Add thick coconut milk n give a quick boil , Switch off n add cardamom powder . 

In a small pan , melt ghee add slit cashew nuts n raisins ..stir for a second n pour this over the above Moog dhal Payasam . Mix well .
