A thali of Ukde seetha, Dhali Rasam , Yam Fries, chapathi, Happala kismoori , Ripe Mango Gojju, Raw Banana n Yam Elechakeri n Sprouted Green Gram Usli

A thali of Ukde seetha, Dhali Rasam  , Yam Fries, chapathi, Happala kismoori , Ripe Mango Gojju, Raw Banana n Yam  Elechakeri  n Sprouted Green Gram  Usli 

Dhali Rasam 


  • Thoor Dhal..1/2 cup 
  • Tomatoes ..2 chopped roughly 
  • Tamarind ... marble size 
  • Rasam Powder..1 tsp 
  • Green Chilly ..1 chopped 


Seasoning 

  • Oil..1 tsp
  • Garlic flakes ..4 ( crushed ) 


Garnish 

  • Chopped coriander  leaves ..2 tsp 


Method 
Soak tamarind in little water for about 10 mts, Squeeze it well , discard the residue n to that tamarind water add the rasam powder n mix well . 

Wash n pressure cook the thoor dhal along with chopped tomatoes n mash well . 

Add enough water to the cooked stuffs for rasam consistency , add chopped green chilly . Rasam powder tamarind water . salt n boil well . Then give the Seasoning  n garnish . 

Yam Fries 

  • Yam cleaned , peeled n cut into slant thin slices ... 6 
  • Rice flour ... 1 tblsp
  • Red chilly powder ... 1 tsp
  • Hing/Asafoetida ..2 pinch
  • Turmeric powder ... 1/4 th tsp
  • Salt to taste .
  • Oil for deep frying 


Method 
In a bowl add rice flour, chilly powder , hing, turmeric powder , salt n sliced yam ..mix well ..sprinkle little water n set aside just for 5 mts . 

Deep fry till crisp 

Chapathi
  • Whole wheat flour ( i have used Multigrain atta ) -1 cup
  •  Salt to taste
  • Water to knead the dough
  • Ghee 
Method 
In a bowl , add whole wheat flour , salt n water little by little  at a time n knead it to a soft dough for about 5 to 8 mts ... keep covered under moist cloth for 1/2 an hour . 

Divide the dough into equal sized balls , apply some flour n bail out chapthi size  .

Heat a tawa , place the chapthi  on it n cook just for 1/2 a minute n toss over ..pressing on both sides ..apply ghee n serve hot . 



Mirsange Happala Kismuri ( Spicy Red Papad Mixture ) 
  • Spicy Papad - 6
  • Onion - 1 ( Medium ) 
  • Green chillies - 1 
  • Grated coconut- 4 tsp

Method
 Fry spicy papad n crush it with hands .

Chop onion n green chillies .

In a deep bowl add the crushed spicy Papad n just before serving add the chopped onion, chopped green chillies n grated coconut ..mix well .

Serve Immediately . 

Note : You can even roast the papad instead of deep frying . 


Ripe Mango Gojju !!!! 
  • Ripe firm mango-1
  •  Tamarind paste-1/2 tsp
    Jaggery-1 tsp 
  • water-1 cup
  •  Sambar powder-1/2 tsp
  •  Turmeric powder-a pinch
  • Salt to taste

To grind  

  • Chana dal- 2 tsps
    Urad dal-2 tsps
    Fenugreek seeds- 1/4 th  tsp
    Coriander seeds- 1 tsp
    Red chillies- 2 

Seasoning 

  • Oil-1 tsp
  • Mustard seeds-1/2 tsp
  • Hing/Asafoetida-2 pinch 
  • Curry leaves-1 sprig  

Method 
Wash and cut ripe mango into reasonable pieces.Add water  n boil it .
 .
 In little oil roast the ingredients meant for grinding .Allow it to cool and finely grind it ..Add this mixture to the boiling water.Add tamarind pate, turmeric , sambar powder ,jaggery n salt .Allow the mixture to cook for 7 to 8 mts  . 

Do the seasoning !




Raw Banana n Yam  Elechakeri
  • Raw Banana .. 2 ( Wash , roughly remove the skin n chop into slighty bigger pieces ) 
  • Yam ... 1/4 th kg , chopped to slighty bigger pieces 
  • Salt to taste
To grind to a coarse paste
  • Grated Coconut -1/2 cup
  • Roasted dry Red chillies -3 
  • Turmeric powder- ½ tsp.
  • Cumin seeds- 1/2 tsp
Seasoning
  • Oil - 1 tsp
  • Mustard seeds-1 tsp .
  • Cumin seeds- ½ tsp
  • Curry leaves - 1 sprig
Garnish
  • Roasted grated coconut- 2 tbsp
Method
Cook the raw banana n yam pieces with salt and keep aside..
Grind the grated coconut , roasted red chilies,cumin seeds n turmeric powder to a coarse paste.
Add this ground paste to the cooked vegetables and cook it till it mixes well with it. Then do the seasoning n garnish . 
No tamarind is added to this dish.


Sprouted Green Gram  Usli 
  • Whole green gram - 1 cup
  • Oil - 2 tsp
  • Onion- 1 huge
  • Green chillies- 2 chopped
  • Lime juice - 1 tsp
  • Salt to taste .


Method 
 Wash n soak whole green gram overnight n then tie it in a cotton cloth n allow  it to sprout .

In a kadai add oil , add chopped onions n fry till pinkish red .. Add chopped green chilles n fry for a while ,  then add  sprouted green gram along with water, salt  n cook till done .. switch off and add in lime juice n mix well .
