Bedmi Poori n Mathura Ke Dubki Wale Aaloo 

  •  Urad Dhal- 1 cup 
  • Whole Wheat flour- 2 cup's
  • Semolina- 1/3 rd  cup
  • Ajwain /Carom Seeds- 1 tsp
  • Kasuri methi - 2 tsp 
  • Hing /Asafoetida- 1/4 th  tsp 
  • Ginger Paste -1/2 tsp  
  • Red Chilly Powder- 1 tsp 
  • Cumin  Powder- 1 tsp 
  • Garam Masala powder - 1/2 tsp 
  • Turmeric  Powder- 1/4 th  tsp 
  • Salt to taste
  • Oil for deep frying  


Method 
 Wash and soak the urid dhal overnight. Grind it into a paste without adding water , sprinkle very little water if needed to a not so smooth but granular consistency paste . 

 In a  bowl add the ground urid dhal paste ,whole wheat flour, semolina, Ajwain ,Kasuri methi,hing ginger paste , red chilly powder, cumin powder, garam masala powder, turmeric powder and salt . mix well n knead to a dough . Cover the dough with a cloth n keep aside for 10 mts. 

Make small balls of the dough n roll out  poori's with rolling pin .   

Heat oil in a kadai and deep fry the poori's one by one on medium flame . 

Mathura Ke Dubki Wale Aaloo

  • Potato-3 medium 
  •  Onion..1 medium 
  • Green Chilies..2 
  •  Tomato..1 huge 
  •  Oil..1 tblsp 
  •  Asafoetida/Hing..2 pinch 
  •  Cumin Seeds..1/2 tsp 
  • Mustard Seeds..1/2 tsp 
  • Ginger Garlic Paste..1 tsp 
  •  Red Chilly Powder..1 tsp 
  •  Coriander Powder..1 tsp 
  •  Turmeric Powder..1/4 th tsp 
  •  Garam Masala Powder..1/4 th tsp 
  •  Amchur  Powder..1/2 tsp 
  •  Water...4 cups 
  •  Salt to taste 


Garnish 
Chopped Coriander Leaves..1 tsp 
 Lemon juice ..1 tsp 

Method 
Slice onion, chop tomato , green chilles, peel and dice potato in cubes. 

In a pressure cooker add  oil ,splutter  mustard seeds , crackle cumin seeds, add hing n sliced onion saute till it  becomes light brown then add chopped green chilly , ginger-garlic paste and saute till raw smell goes . Add chopped tomato n cook till mushy.  Add cubed potatoes n saute for a minute or two . , Now add all the powders , water , salt , stir well n pressure cook for 3 whistles . Once the pressure is released ,open the lid , add chopped coriander leaves n lemon juice ..mix well .
