Carrot Semolina Kheer adding Powdered Jaggery

  • Semolina / Fine Rawa - 1 tblsp
  • Ghee -1 tsp to roast the semolina
  • Carrots - 2 or 3 , i used Delhi seasonal carrots ( peeled n grated )
  • Ghee -2 tsp, to roast grated carrots
  • Jaggery powder - 3/4 th cup , increase as per sweetness
  • Water - 1/2 cup 
  • Boiled n cooled milk -2 cup's
  • Cardamom Powder - 1/2 tsp 
  • Roasted Raisins n Cashew-nuts in a tsp of ghee-8 to 10 each 
  • Almonds -6 to 8 , Add in hot water for about 1/2 n hour n remove the skin
  • Safforn /Kesar -few strands ( Add in 1 tblsp of hot milk for about 20 mts ) - Optional 

In a kadai add ghee n roast semolina on sim flame till the color changes ... remove on a plate 

In the same kadai add ghee again , add the grated carrots n stir continuously for some time till it softens n raw smell goes . Add powdered jaggery n mix well till all the jaggery power melts . Add roasted semolina, hot water n cook stirring n then add  boiled ,cooled milk n mix well till semolina n carrots is cooked . stirring continuously ... Switch off n add the ghee roasted Cashew-nuts, raisins , peeled almonds , cardamon powder n saffron milk 

Serve warm or cold .
