Ukde Seeth , Cauliflower Podi's/Fritters ,Lashoni Radish Leaves Dhal,Beetroot Onion Upkari , Bhenda /Ladies Finger Thambali n Roasted Lemon Pickle .

Ukde Seeth , Cauliflower Podi's/Fritters  ,Lashoni Radish Leaves Dhal,Beetroot Onion Upkari  , Bhenda /Ladies Finger Thambali n Roasted Lemon Pickle .


Cauliflower Podi's/Fritters  
  • Cauliflower florets - 10 /12 
  • Rice flour- 1 tblsp 
  • Red chilly powder- 1 tsp
  • Hing /Asafoetida - 2 big pinch 
  • Salt to taste 
  • Oil -for deep fry 
Method 
Boil water n add cauliflower florets to the boiled water with salt n turmeric powder .. keep covered for sometime 

Drain the Cauliflower florets, pat dry and keep aside.

 In a bowl add Rice flour, red chilly powder, hing,  salt n mix well  , keep aide for 10 mts. 

Heat oil in a kadai  n drop 3 to 5 marinated cauliflower florets at a time n fry till crispy . 

Lashoni Radish Leaves Dhal
  • Radish  Leaves - 1 bunch , chopped 
  • Thur Dhal -3/4 th cup 
  • Onion-1,chopped 
  • Tomato-1,chopped  
  • Green Chilly -2 ,chopped 
  • Turmeric powder-1/4 th  tsp
  • Ginger - 1/2 inch 
  • Salt to taste 

Seasoning  

  • Ghee /oil -1 tsp
  • Mustard seeds -1/2 tsp 
  • Cumin seeds-1/4 th tsp
  • Hing - 2 pinch
  • Curry leaves-1 sprig
  • Garlic -6  flakes ( chopped ) 
  • Red Chilly Powder -1/2 tsp 
  • Dry red chilly - 2 ,broken 
Method 
Wash n pressure cook thur dhal for few whistle .



Add  chopped onion, chopped tomato, chopped green chilly , chopped radish leaves ,chopped ginger n  turmeric powder for one whistle . 


in a kadai add oil,  splutter mustard  seeds, then add cumin seeds, hing , curry leaves , broken dry red chilly n fry for a while Add chopped garlic n stir till it turns brown . switch off and add red chilly powder .  Add this  to the cooked  stuffs ,along with salt n stir well . 

Beetroot Onion Upkari 
  • Beetroot-1 
  • Onion -2 medium 
  • Oil- 3 tsp
  •  Mustard seeds - 1/2 tsp
  • Dry red chilly- 3 or 4 ,broken
  • Salt to taste 


Method
Wash , peel the skin of beetroot n chop it into 2 inch cubical's .
Chop onions .

In a kadai add oil, splutter mustard seeds, then add chopped onions n fry till pink ,add broken dry red chilly ... add all the chopped  beetroot cubical's ,  water , salt n cook till done . 

Bhenda /Ladies Finger Thambali 
  • Bhenda /Tender Ladies Finger -12 to 15 
  • Oil - 1 tblsp 
  • Salt as required to roast the ladies finger 
  • Curds , preferably sweet - 1 cup 
  • Green chilly - 2 , roughly crushed 
Seasoning 
  • Oil - 1 tsp
  • Mustard seeds-1/2 tsp
  • Hing/Asafoetida -1 pinch 
  • Curry leaves - 1 sprig 
  • Dry red chilly  -1, broken

Method 
Wash the ladies finger , n pat dry with a cotton towel ... remove the top n bottom n chop into 2 inch roundels ...

In a kadai add oil , add the chopped ladies finger roundels n roast on slim flame till crisp adding salt .

In a bowl add curds, roughly crushed green chilly n mix well . Give the seasoning n just before serving add roasted crispy ladies finger n mix well n serve immediately  ..Adjust salt as per taste .
