Phova Chutney with Ground Masala drizzled with Mangalorean Ghee Shev ,Jeev Thori Upkari , Broken Wheat Ladoo n Godda/Jaggery Kaapi ..

Phova Chutney with Ground Masala drizzled with Mangalorean Ghee Shev ,Jeev Thori Upkari , Broken Wheat Ladoo n Godda/Jaggery Kaapi .. 


Phova Chutney with Ground Masala
  • Thin Phova/Beaten rice- 2 cup 
  • Grated coconut- 1/2 cup 
  • Coriander seeds - 2 tsp ( raw n not roasted ) 
  • Cumin seeds- 1/2 tsp (raw n not roasted )
  • Roasted dry red chilles- 3 
  • Jaggery - Marble size 
  • Tamarind- Tamarind seed size
  • Salt to taste .

Seasoning 
  • Oil- 1 tsp
  • Mustard seeds-1/2 tsp
  • Curry leaves- 1 sprig 

Method

Grind Roasted dry red chillies, tamarind, jaggery , around 4 tsp of grated coconut , cumin seeds to a fine powder  n just before removing  the ground powder  add the coriander seeds n grind just for a minute as this will enhance the taste of the masala . 

Add the ground masala powder in a wide bottomed vessel , salt , remaining grated coconut n mix well with hands . Add the thin phova , mix well n then give the seasoning .

 Serve Immediately or else the phova becomes soggy . 

Jeev Thori Upkari (  Tender Thur Pod's stir fry )

  • Jeev thori/ Tender thur ... 1 cup
  • Oil..2 tsp
  • Mustard seeds..1/2 tsp
  • Urid dhal.. 1 tsp
  • Hing/Asafoetida ..1 pinch
  • Green chilles ..2 chopped
  • Curry leaves..1 sprig
  • Grated coconut..1 tblsp
  • Lime juice..1 tsp
  • Salt taste.


Method 
Wash the thur pods n pressure cook it for only 1 whistle in very little water .

In a kadai add oil, splutter mustard seeds, then add urid dhal n fry till light brown, add hing, chopped green chilly , curry leaves n saute for a while . Add cooked thur pods , salt n cook for a minute .Add grated coconut .Switch off and add lime juice .Mix well .

Govan Kane Undo /Broken Wheat Ladoo adding Jaggery

  • Govan Kano  /Broken Wheat ..1 Cup
  •  Jaggery .. Lemon size ..3 adjust according to the sweetness .
  • Water ..1/2 cup ..  
  • Cashew nuts  .. 12
  •  Almonds ..12 
  • Cardamom Powder..1/2 tsp
  •  Ghee ..2 tsp heaped . 
  • Ghee ... 1/2 tsp to grease the palm . 


Method 
Dry roast broken wheat till the color changes on low flame ..Remove it

Dry roast Cashew nuts n Almonds separately ..

Allow all the 3 roasted ingredients to cool completely .n then grind it to a semi coarse powder .. like idly rawa consistency .

In a kadai melt Jaggery in water for 1 string .. Remove from fire ..add roasted ground broken wheat mix along with ghee n cardamom powder n mix well .

Grease the palm n take little mixture of the above n form into round ladoo shape

Store in air tight container . 



Jaggery Coffee 


  • Milk- 1 cup
  • Water- 2 cups 
  • Jaggery cubes- 2 piece 
  • Coffee Powder- 1 tsp heaped . 


Method 
Add 2 cups of water with  jaggery cubes in a vessel n let it boil well n reduce the water to 1 cup ... add coffee powder, switch off , keep covered so for about 10 mts . Strain it . Add 1 cup of hot milk ... 

Serve Hot .

Note: Coffee Jaggery is used here ... its called chitte bella ... if this is not got then can use any other jaggery .
