Bharali Vangi (Stuffed Brinjal ) Maharastrian Delicacy !
- Small Variety Purple Brinjal-8 to 10
- Oil - 2 tsp
- Grated Coconut-3/4 th cup
- Peanuts -1/4 th cup
- White Sesame Seeds-2 tsp
- Coriander seeds-1/2 tsp
- Cumin seeds-1/2 tsp
- Tamarind Pulp-1tsp
- Chilly powder-2 tsp
- Goda Masala or Garam Masala -2 tsp
- Grated Jaggery-1tsp
- Water-2 cups
- Salt to taste
Seasoning
- Oil-2 tsp
- Hing -a pinch
- Mustard Seeds-1/2 tsp
- Turmeric powder -1//2 tsp
Garnishing
- Coriander leaves Chopped .. 1 tblsp
Method
Wash the brinjals n make four vertical slits of Brinjal ..keep the stem .. n dip it in water for 20 mts ..
Dry roast groundnuts , cool n remove the skin
In a kadai add 2 tsp oil n add coriander seeds, sesame seeds, cumin seeds n grated coconut n fry for a while , cool n grind it along with Roasted skinless groundnuts Goda/garam masala, chilly powder , jaggery and make it into power . .. add salt n tamarind pulp .. stuff brinjal with the above masala ..
In a kadai add oil , splutter mustard seeds , then add hing ,turmeric powder and stuffed brinjals n add the remaining ground masala n water .. cook till the brinjals are soft .. check in between n stir to check the brinjal doesn't get struck to the kadai .. garnish with coriander leaves !
