Carrot Poriyal/Carrot Stir Fry

Carrot Poriyal/Carrot Stir Fry 

  • Carrot ..peeled n diced to 2 inch pieces ...2 cups
  •  Onion ...1 chopped
  •  Oil...2 tsp 
  • Mustard seeds ...1/2 tsp 
  • Urid dhal...1 tsp 
  • Chana dhal..1 tsp 
  • Curry leaves .. 1 sprig 
  • Green chilles ...3 or 4 slit .
  • Grated coconut..1 tblsp
  •  Salt to taste 

Method 
 Add oil in a kadai n splutter mustard seeds , then add urid dhal. when it turns to a golden brown,, add chana dhal n stir for a while .. add the slit green chilly ,  curry leaves n fry it for few seconds .. add chopped onion n fry till transparent then add the diced carrots. Saute for few minutes, add  salt n little water .. cover n cook till done .Garnish with grated coconut n mix well .
