Ukde seeth, vaali Bhendi, Avnas Ambe Sasam , Drumstick Leaves Crispy Ambado n Spicy Butter Milk

Ukde seeth,  vaali Bhendi, Avnas Ambe Sasam , Drumstick Leaves Crispy Ambado n Spicy Butter Milk

  Vaali Bhendi ( Malabar  Spinach cooked in  coconut based spicy gravy ) 
  • Malabar Spinach ( Vaali )-1Bunch  

To grind

  • Grated Coconut- 2 cups
  • Roasted red dry chilles-8 to  10 or according to the taste
  • Tamarind- Tamarind seed size 
  • Salt to taste 

Seasoning

  • Oil - 2tsp 
  • Garlic flakes crushed  - 6 to 8 

Method
Roughly chop Malabar  spinach  with tender stem. 

Cook  chopped malabar spinach with tender stem till tender .

Grind grated coconut, roasted chilles n  tamarind to a fine paste .

Add the ground paste  to the cooked stuffs  n boil well n then do the seasoning .


Avnas Ambe Sasam ( Pineapple , Mango in coconut based gravy ) Version-2 
  • Pineapple- chopped into cubes ( 1 cup)
  • Mango - chopped into cubes- ( 1 cup)
  • Grapes - Green n Black fresh ones ( 1/2 cup each )
  • Grated coconut-1 cup
  • Roasted dry red chillies- 3 or according to the taste
  • Jaggery - chick pea size
  • Raw Mustard seeds- 1/2 tsp  
  • Salt to taste

Method 
Grind grated coconut, roasted dry red chillies n jaggery to a semi coarse  paste n just before removing the masala add raw mustard seeds n grind for a minute . Remove the ground paste add salt n mix well ..then add the fruits  n serve chilled 

Drumstick Leaves Ambado .
  • Drumstick leaves - 2 cups ( roughly chopped  )
  • Raw Rice-1 Cup
  •   Urid dhal -1/4 th cup
  • Dry red chillies - 5 to 7  or according to spice    (dont roast them ) 
  • Tamarind -Tamarind seed size 
  • Salt to taste 
  • Oil for deep frying 

MethodSoak raw rice for 2 hours .. 

 Dry roast urid dhal till it gives a nice aroma n changes its colour .cool n powder it 

 Grind the red  chilles n tamarind to a fine paste n then add the soaked rice n grind it to medium coarse  paste . Dont add water ..only sprinkle if required .. remove the batter ,add salt n then the ground urid flour n mix well,add in the roughly chopped drumstick leaves  n mix ..


Heat  oil , now take handful of batter n shape it to round balls n flatten a little .. n drop it in hot oil one by one .. around 4 to 6  balls at a time n deep fry in oil till golden brown .

 Spicy Butter Milk
  •  Curds ..1 cup
  •  water ..2 cups
  •  Ginger ..1/2 inch
  •  Cumin seeds ..1 tsp
  •  Green chilly 2
  •  Hing ..a pinch
  •  Coriander leaves ..1 tblsp
  •  Salt to taste 

Method
 Blend Curds, ginger, cumin seeds, green chilly coriander leaves n hing ... Remove add water ,salt n mix well ...
