Ukde Seeth , Kultha Koddel with mittagallale Keerlu n Ambado , Kultha Saaru , Semebadane Palya , Bitter Gourd n Raw Banana Tawa Rawa Fries

Ukde Seeth , Kultha Koddel with mittagallale Keerlu n Ambado , Kultha Saaru , Semebadane Palya , Bitter Gourd n Raw Banana Tawa Rawa Fries ...

Kultha Koddel with mittagallale Keerlu n Ambado ( Horse Gram cooked in coconut based gravy with brined Bamboo Shoots n Sour Hog Plum's )  .
  • Kulithu ( Horse Gram ) .... 1/2 cup
  • Brined Bamboo Shoots  ..8 to 10 pieces 
  • Sour Hog Plum  .. 2 or 3 crushed 
  • Salt to taste 

To grind to a fine paste 

  • Grated coconut ... 1 cup
  • Roasted dry red chillies... 6  

Seasoning 

  • Oil..2 tsp
  • Crushed garlic flakes ..8 

Method 

Wash horse gram n Pressure cook it for about 10 t0 12 whistles or till cooked ( dont over cook n make it mushy ) 

Soak brined bamboo shoot pieces in enough water overnight or for few hours n wash it as much as around 5 times to remove the access salt .  


Roughly rush sour hog pulm . Pressure cook washed brined bamboo shoots 


Grind grated coconut, roasted dry red chillies  to a fine paste .


Add the ground paste to the cooked stuffs n boil well adding salt .


Then give the seasoning . 


Horse gram saaru /Rasam with garlic seasoning 
Retain the water in which Horse gram was cooked ... to it add slit green chilly 1 or 2 , boil well adding salt . Give seasoning with crushed garlic n dry red chilly . 

Semebadane Palya 

  • Semebadane / Chayote squash- 2 
  • Oil- 2 tsp 
  • Mustard seeds-1/2 tsp
  • Urid dhal- 1 tsp 
  • Chana Dhal-1 tsp 
  • Green chillies- 3 
  • Curry leaves- 1 sprig 
  • Coriander leaves chopped - 3 tsp
  • Grated coconut- 4 tsp 
  • Lime juice- 1 tsp 
  • Salt to taste .

Method

Wash n chop semebadane to 1/2 inch pieces.

In a kadai add oil n splutter mustard seeds, add urid chana dhal n fry for a minute. Add curry leaves, chopped green chillies n fry again for a minute . Add chopped semebadane along with water n salt .cook till done . Add grated coconut n coriander leaves. switch off and add lime juice . 

Raw Banana n Bitter Gourd Tawa Rawa Fries 

Randai Kela Tawa Rawa Podi /Raw Banana Tawa Rawa Fries ;)

  • Raw Banana   - 1 ( wash ,peel n chop it into roundels  )
  • Red chilly powder- 2 tsp  
  • Turmeric powder- 1/4 th  tsp
  • Hing /Asafoetida- 1 pinch 
  • Rice Flour ... 4 tsp 
  • Salt to taste 
  • Rawa/Semolina ..1 tblsp  
Method 
In a bowl add the  red chilly powder, turmeric powder , hing ,rice flour  salt n chopped raw banana roundels , sprinkle water  .. mix well . keep aside for 5 minutes .

Run the marinated  roundels over semolina  .

Heat a tawa , smear little oil n shallow fry on both sides till crisp.

Bitter Gourd Tawa Rawa Fries
  • Bitter Gourd -  1 
  • Red chilly powder- 2 tsp  
  • Turmeric powder- 1/4 th  tsp
  • Hing /Asafoetida- 1 pinch 
  • Rice Flour ... 4 tsp 
  • Salt to taste 
  • Rawa/Semolina ..1 tblsp  
  • Method 
    Wash the bitter gourd's , chop into roundels . wash this in water for about 4 to 5 times n apply salt to it n keep aside for 1 hour . 
    Squeeze well the salted bitter gourd roundels . 
    In a bowl add the  red chilly powder, turmeric powder , hing ,rice flour , salt n chopped bitter gourd roundels , sprinkle water  .. mix well . keep aside for 5 minutes .
    Run the marinated  roundels over semolina  .
    Heat a tawa , smear little oil n shallow fry on both sides till crisp.
