White Rice, Mixed Vegetable /Kolmbo Sambar, Garlic roasted potatoes,Egg Masala Gravy n Karathe Podi /Bitter Gourd Fries
Mixed Vegetable /Kolmbo Sambar
Wash and chop vegetables to 2 inch big pieces .
Soak Thur dhal for 10 mts n then pressure cook it ..cool n churn it well .
Boil vegetables , chopped onion n chopped tomato .
Soak tamarind in water for 20 mts n extract juice n to it add sambar powder n mix well .
In a vessel add the cooked stuffs , tamarind sambar powder mix n salt . cook well , Add hing water . mix well . Then do the seasoning n then garnish .
Garlic roasted potatoes .
Garlic -1 bulb
Red chilly powder- 3 tsp
Turmeric powder- 1/2 tsp
Oil- 4 tsp
Salt to taste .
Cook potatoes ... cool, peel n cut into reasonable pieces ... keep aside ( dont over cook the potatoes )
In a kadai add oil, crushed garlic n saute for sometime till the raw smell goes ... add all the powders along with salt n then add the cooked chopped potatoes ... n roast well .
Note : More the oil n garlic .... More tastier will be the dish
Egg Masala Gravy .
Chop onions , tomato n green chilly .
In a kadai add oil , add in Cinnamon stick, cloves, green cardamom n allow it to sweat for a while .Then add chopped onions n fry till pinkish red .Add chopped green chilly , curry leaves n saute for a while . Now add tomato chopped n cook till mushy . Add all the powders except garam masala n just stir for few seconds , add water about a cup , crushed kasuri methi , garam masala powder , salt n mix . Add boiled eggs n cook for a while .
Karathe Podi /Bitter Gourd Fries
Wash the bitter gourd's , scarp the skin roughly n chop into thin roundels . wash this in water for about 4 to 5 times n apply salt to it n keep aside for 1 hour . After one hour , squeeze well the salted bitter gourd roundels n set aside
In a bowl add red chilly powder , Coriander powder , turmeric powder n adjust salt as the bitter gourd roundels is already salted .. add the bitter gourd roundels n mix well .. set aside for few mts.
Now dip the marinated bitter gourd roundels over rice flour n deep fry few at a time until crisp in heated oil .
