Kaali Thori Saaru N Kaali Thori Upkari

Kaali Thori Saaru N Kaali Thori Upkari 

  • Kaali Thori ( Black Beans )- 1 cup 
  • Salt to taste 

Seasoning for Saaru (Rasam) 

  • Oil-1 tsp 
  • Dry red chillies-  2 or 3
  • Crushed Garlic flakes - 6 

Seasoning for Upkari 

  • Oil-1tsp
  • Mustard seeds-1/2 tsp
  • Hing/Asafoetida- 2 pinch 
  • Dry Red chillies- 2 or 3 
  • Grated coconut- 4 tsp  

Method for Saaru ( Rasam ) 
Wash and soak kaali thori  in water overnight .  Pressure cook them for about 4 to 5 whistles or till completely cooked. ( dont over cook n make them mushy ). 

Separate the cooked liquid and the cooked black beans ( Kaali thori )  .

In a vessel add the cooked liquid along with salt and water ( adjust the consistency as required ) . Boil it n later give the seasoning . 

Method for upkari
In a kadai add oil , splutter mustard seeds, add torn dry red chillies , hing n then the cooked kaali thori, salt  n cook ... lastly garnish with grated coconut . switch off the gas . 

Red Raw Rice Panpolo

Red Raw Rice Panpolo 

  • Red Raw Rice- 1 cup
  • Grated coconut-1/4 th  cup 
  • salt to taste 

Soak Red Raw Rice for 2 hrs n grind it along with grated coconut to a fine paste ,add salt n dilute the batter by adding the water .let the batter be of pouring consistency 

Heat a tawa , smear oil n pour a ladle full batter , it has to spread on its own ,cover the pan n roast on one side ..fold it twice to make 4 folds !

Serve hot with any spicy dip .

Heerekayi Dose ( Ridge Gourd spicy Dosa )

  • Heerekayi ( Ridge Gourd ) 1 or 2

To grind 

  • Raw Rice- 1 cup 
  • Grated coconut- 1/2 cup
  • Cumin seeds-1/2 tsp
  • Coriander seeds-1/2 tsp 
  • Asafoetida/Hing- a pinch 
  • Tamarind- Tamarind seed size 
  • Urid dhal- 1 tbsp
  • Chana Dhal-1tbsp 
  • Dry Red chillies- 8 to 10 
  • salt to taste .

Soak Raw Rice, Urid dhal, chana dhal for about 2 to 3 hours n then grind it to a fine paste along with grated coconut, cumin seeds, coriander seeds, hing, tamarind, dry red chillies . Remove the batter . Add salt n mix well . 

wash the ridge gourd n peel the skin . Cut it into roundels . 

Heat a dosa tawa , smear oil ... Dip the ridge gourd roundels in the ground batter n place it on the tawa , touching each other into a circle ..fill the gap with the batter n cook on low to medium heat keeping covered with a lid n cook on both the sides . 

Note : Can prepare the same spicy dosa with Brinjal  as well as Raw Banana . 

Beans n Potato Stir fry

Beans n Potato Stir fry 

  • Tender French Beans- 1/4 th kg 
  • Potato-2 
  • Oil- 2 tsp
  • Mustard seeds-1/2 tsp
  • Dry red chillies- 3 or 4 or according to the taste .
  • Grated coconut- 3 tsp 
  • Salt to taste 

Wash Beans n Potato .

Chop Beans , peel the potato n then chop it into small cubes.

In a kadai add oil, splutter mustard seeds n add torn dry red chillies , add the chopped vegetable n then water along with salt . Cover n cook till done ..Add grated coconut , mix well .

Kaali Thori with Kadgi Ghassi ( Black Beans with Raw Jackfruit in Coconut Based Gravy )

Kaali Thori with Kadgi Ghassi ( Black Beans with Raw Jackfruit in Coconut Based Gravy )

  • Kaali Thori ( Black beans )- 1  cup 
  • Raw Jackfruit pieces- 1/2 cup 

To grind 

  • Grated coconut- 1 cup
  • Roasted dry red chillies- 6 to 8 or according to the taste 
  • Tamarind- Tamarind seed size 
  • Salt to taste 


  • Oil-1tsp
  • Mustard seeds- 1/2 tsp
  • Curry Leaves- 1 sprig 


Soak kaali thori ( Black Beans ) overnight.

Pressure cook Kali thori and raw jack fruit pieces .

Grind grated coconut,Roasted  dry red chillies, tamarind to a fine paste .

Add the ground paste to the cooked stuffs, along with salt  n boil well.Then later give the seasoning .

Layered Mushroom Masala stuffed Cheesy Sandwich 

  • Brown Bread Slice - 6 
  • Butter- 2 tsp 

For filling 

  • Button Mushroom - 1 cup ( cut into pieces )
  • Tomato-1
  • Onion -1
  • Ginger-garlic paste - 1 Tsp 
  • Turmeric powder - 1/4 th Tsp
  • Chilly powder  - 1 Tsp
  • Cumin powder-1/2 tsp
  • Coriander powder-1 tsp 
  • Garam Masala- 1/4 th tsp 
  • Oil - 2 Tbsp 
  • Salt to taste

  • Cheese 


In a kadai, add oil , chopped onions n fry till reddish pink , then add chopped tomatoes n cook till the raw smell goes, add ginger garlic paste n cook for a minute ..add all the powders , salt n chopped mushrooms with very little water n cook till done n the masala becomes thick .  

Apply butter on one side of the bread , spread spoon full of the masala , place another bread slice n spread another spoon full masala on it ... heat a tawa , n place this on it n roast well on both the sides ... Grate cheese n allow it to melt . 

Cut into desired shape's  n serve hot .

Red Raw Rice Set Dosa

Red Raw Rice Set Dosa 

  • Red Raw Rice-1 cup
  • Urid Dhal-1/2 cup
  • Chana Dhal-1/4 th cup
  • Fenugreek seeds- 1/2 tsp 
  • Salt to taste 

Soak red raw rice, urid dhal, chana dhal , fenugreek seeds in water for about 4 hours n then grind to a fine paste .Add salt n then allow it to ferment overnight .

Heat a Dosa tawa , smear oil n spread a ladle full batter , keep covered n roast on both the sides . 

Serve hot with chutney or Sambar .

Dried Grapes Gojju

  • Dried Grapes ( Kismis ) - 1tblsp ( a few for garnishing )  
  • White Sesame seeds- 1/4 th tsp 
  • Dry Red chillies- 3 or according to the taste 
  • Urid Dhal - 1/2 tsp 
  • Cumin seeds-1/4 th tsp
  • Coriander seeds-1/2 tsp
  • Fenugreek seeds- 2 pinch 
  • Grated Coconut- 4 tsp 
  • Tamarind pulp - 1 tsp 
  • Jaggery - chick pea size
  • Oil- 2 tsp 
  • Mustard seeds- 1/2 tsp 
  • Curry leaves- 1 sprig
  • Turmeric powder-1/4 th tsp 
  • Salt to taste
Soak dry grapes in water for about 2 hours .

In a pan , dry roast  the white sesame seeds n take it out .

In a pan add little oil n roast  dry red chilles, urid dhal, coriander seeds, cumin seeds, fenugreek seeds ... cool it .

Grind grated coconut along with the roasted ingredients to a fine paste n then add the soaked kismis n grind it coarsely .

In a kadai add oil, splutter mustard seeds ,add  curry leaves , tamarind pulp , jaggery and the ground paste along with salt n turmeric powder ... n boil well , lastly garnish with few soaked Kismis .

Goes well with Rottis as well as Rice too .

Heralekayi Chitrana

Heralekayi  Chitrana 

  • Heralkai  Fruit -1(  Extract the juice )  
  • Cooked Rice -2 cups 
  • Oil- 2 tbsp 
  • Mustard seeds-1/4 th tsp 
  • Urid Dhal-1 tsp
  • Chana Dhal- 1 tsp 
  • Groundnuts- 2 tsp 
  • Green Chillies -2 
  • Dry red chillies- 3 
  • Curry leaves-1 sprig  
  • Turmeric Powder- 1/4 th tsp 
  • Coriander leaves - 2 tsp chopped
  • Salt - to taste 

In a kadai add oil, splutter Mustard seeds, then add chana dhal, urid dhal n groundnuts n fry for a minute , add curry leaves , slit green chillies, dry red chillies n fry again for a minute . Add salt n turmeric powder ,then the  cooked rice  , add Heralkai fruit juice , chopped coriander leaves n mix well .

Brined Bamboo shoot fries 

  • Brined Bamboo Shoots- 15 

To grind to a paste 

  • Raw Rice- 1 cup 
  • Dry red chilles- 10 to 12 or according to the taste 
  • Hing-2 pinch 
  • Salt only if required  

Soak Brined Bamboo shoot pieces in water overnight . wash it well n rinse around 4 to 5 times to remove excess salt . crush them roughly .keep aside . 

Soak Raw rice for about 2 hours n then grind it with dry red chilly , hing to a very fine paste ( dont add much water while grinding )  check salt n add only if required as the brined bamboo shoot already has enough salt .

Apply this ground paste to the roughly crushed bamboo shoot n keep aside for 1/2 an hour n then deep fry till crisp .  

Mango Vermicelli Kheer

Mango Vermicelli Kheer 

  • Full Fat Milk - 3 cups 
  • Vermicelli - 4 tbsp  
  • Sugar   - 1/4 th  cup or 1/2  cup ( according to the sweetness ) 
  • Mango Puree -   1/2 cup 
  • Ghee -  1 tsp
  • Cashew nuts  - a few 
  • Raisins  - a few  
  • Cardamom  powder-1/2 tsp   

Melt ghee in a pan, add cashew nuts n Raisins n take it out .. In the same ghee pan , roast the vermicelli  till brown n then keep aside . 

Boil Milk , then add the roasted vermicelli  n cook for about 3 to 5 minutes, then add sugar n cook again for about 5 minutes . Add the ghee roasted cashew nuts , raisins along with cardamom power ..allow it to cool completely n then add the mango pulp n mix well .

Serve chilled !
