White Rice,Dalithoy ,Baingan Masala Palya (( Brinjals cooked in coconut based dry masala  n Spicy Radish Dosa



Dalithoy 
  • Toor dal - 1 cup
  • Green chilly - 3  

Seasoning

  • Oil/Ghee -1 tsp
  • Mustard seeds - 1 tsp
  •  Curry leaves - 1 sprig 
  • Dry red chillies -2
  • Hing/Asafoetida water- 1 tsp
  • Salt to taste

Method
Pressure cook toor dal with 1 tsp of oil . It has to be cooked well ,then churn it . Add slit green chillies with salt n boil well .
In a seasoning  pan add oil or ghee , Add mustard seeds , when they splutter add torn red chillies n curry leaves...add this to the cooked dhal n then add hing water . 





Baingan Masala Palya (( Brinjals cooked in coconut based dry masala ) 


  • Baingan .. ( i used purple long )  ... 1/4 th kg 
  • Grated coconut..1 cup 
  • Tamarind ..Marble size 
  • Jaggery .. Marble size 
  • Turmeric powder... 1/4 th tsp 

To roast n grind 

  • Oil..2 tsp
  • Coriander seeds.. 2 tblsp 
  • Cumin seeds ..1 tsp
  • Methi seeds/Fenugreek seeds .. 2 pinch 
  • Dry red chilly...  6 or according to spice 
  • Salt to taste 


Seasoing 

  • Oil.. 2 tblsp 
  • Mustard seeds..1 tsp
  • Urid dhal.. 1 tsp
  • Dry red chilly ..1 
  • Curry leaves..1 sprig 


Method '
Wash the brinjal's and then chop into 2 inch pieces 

In a kadai add oil n roast all the ingredients meant to roast n grind along with grated coconut, tamarind, jaggery n turmeric powder to a semi coarse paste . 

In a kadai add oil, splutter mustard seeds, add urid dhal n fry till brown , add torn red chilly, curry leaves n then the chopped baingan n fry till soft ..add masala n fry ... add little water n cook till done . 
More the oil ..tastier is the recipe ;) 



Spicy Radish Dosa


  • Raw Rice/Dosa Rice.. 1 cup
  • Radish..2
  • Onion ..1
  • Dry red chilly..4
  • Coriander seeds..1 tsp
  • Cumin seeds..1/2 tsp
  • Tamarind ..Tamarind seed size 
  • Salt to taste


Method
Wash n soak rice for about 2 hours .

Grind the soaked rice, dry red chilles , coriander seeds , cumin seeds n tamarind  to a semi coarse batter ( The batter has to be thick ) .

Wash n grate Radish

Chop the onion .

Add salt, grated radish, chopped onion to the ground batter , mix well . 

Heat a dosa tawa, smear a tsp of oil , take a handful of batter n pat it on the heated tawa , with fingers that is been dipped in water .. .Roast for a while .pour in few drops of oil .. n then turn over ..roast on the other side too .

White Rice ,Jeev Thori With Magge Ghassi ( Tender Thur pod with Mangalore yellow cucumber ,coconut based gravy ) n Ambuli Nonchenthule Ambuli/Pickled Raw Mango 


Jeev Thori With Magge Ghassi ( Tender Thur pod with Mangalore yellow cucumber ,coconut based gravy ) 

  • Jeev thori/Tender thur pod ..1 cup ( peeled )
  • Magge /Mlore yellow cucumber ... 1/4 th  kg 

To grind to a fine paste 

  • Grated coconut..1 cup
  • Roasted dry red chilles..4 
  • Tamarind..Tamarind seed size 
  • Salt to taste 


Seasoning

  • Oil..1 tsp
  • Mustard seeds..1/2 tsp
  • Curry leaves..1 sprig 

Method 
Wash the tender thur pods n pressure cook it for 1 whistle . 

Wash the magge/Mangalore yellow cucumber , peel the skin n chop them to 2 inch cubes . Cook in little water till soft but not mushy . 

Grind all the ingredients meant to grind to a fine paste .Add the ground paste to the cooked stuffs n boil .Later give the seasoning .

Mangalore Buns / Bhubhus Roti.Version 3 

  • Banana.1, Fully ripened , if over ripened then best .( i used one Pacchabale as its huge) ..or use 2 if any other small variety banana . 
  • Curd..1/2 cup
  • Sugar -2 tblsp , increase if need the buns more sweet . 
  • Cumin seeds..1 tsp  
  • Cooking Soda..1/2 tsp
  • Maida...1.5 cups or more, as u add you get to know where to stop 
  • Oil - 1 tblsp 
  • Salt to taste  
  • Oil to deep fry

Method 

Peel the banana , add it in a wide bottomed bowl n mash well with hands, then add curds, sugar n mix again till the sugar dissolves then add cumin seeds ,cooking soda, salt n mix again, add oil n maida little by little and keep mixing , stop adding maida once it gets dough consistency .Knead it well for at-least 10 to 15 mts , till it becomes soft n sticky .Grease the dough with little oil n set aside in warm place , covered for at least 5 to 6 hours or overnight .

Make golf size balls of the dough ... dust a platform n roll into thick poori  size ..Make so for rest of the dough balls .

Heat oil in a kadai  and carefully drop in the hot oil.. , press gently in the middle to puff up n  deep fry turning both the sides in medium flame .


Note : For soft and fluffy buns kneading the dough for at least 10 to 15 mts is very important .

Ambe upkari  

  • Ambe gointa ( a small variety of  mango which is prefered for this,as its sweet n sour  ) ..if not use any other variety .. 8 
  • Green chillies...2
  •  jaggery..Goose berry size 
  • Rice flour or maida..1 tsp
  • water..1 cup 
  • salt to taste
Seasoning 
  • Oil..1 tsp 
  • Mustard seeds..1/2 tsp 
  •  Curry leaves..1 sprig 
  • Dry red chilly ..2 
Method

Wash mangoes n peel the skin . Now add water to the peeled mango skin n squeeze it .. discard the squeezed skin .. to this water add the peeled mangoes, slit green chillies,salt  n jaggery .. cook till the mango is cooked  .. in little water add maida or rice flour n prepare a paste , see to it that no lumps is formed .Add this to the dish , stir n give a quick boil .. season with mustard, dry chillies and curry leaves ! This gravy sholudnt be too thick nor watery .. 


Gud Gud Alambe ambat ( Thunder Mushrooms in coconut based gravy ) n Gud Gud Alambe Spicy songa with ground masala . Thunder Mushrooms in spicy tangy ground gravy 


  • Cleaned n peeled Gud Gud Alambe -1 kg 
  • onion huge-1 (1/2 for boiling , 1/2 for seasoning ) 
  • Magge ( Mangalore yellow cucumber ) Peeled n cut into small pieces -1/2 cup 
  • Grated coconut-1 cup 
  • Roasted red chillies - 8 to 10 depends on d spice 
  • Tamarind - Tamarind seed size 
  • salt to taste 

Method 
Pressure cook Alambe n Magge with 1/2 chopped onions n salt  for 1 whistle ..dont discard the water n keep it aside ...
Grind red chillies, grated coconut n tamarind to a fine paste . Add this ground masala to the cooked Alambe n give a quick boil n season with 1/2 chopped onions ..

Pagila Podi/ Kantola /Spine Gourd fries n Jeev Kadgi Podi/ Bread fruit fries

Pagila Podi/ Kantola /Spine Gourd  fries 
  • Pagila/Kantola..10 to 12  
  • Red chilly powder.. 2 or 3 tsp 
  • Hing/Asafoetida ..2 pinch
  • Turmeric powder..1/4 th tsp 
  • Rice flour.-1 tblsp 
  • Salt to taste 
  • Oil for deep frying . 

Method 
Wash the Kantola n slice them .

In a bowl add red chilly powder, hing, turmeric powder, n salt . Add the sliced kantola n mix well ..keep aside for 5 mts . 

Heat oil in a kadai , dip the marinated kantola  in rice flour  n deep fry few at a time till crisp .


Jeev Kadgi Podi/ Bread fruit fries  
  • Bread Fruit/Jeev Kadgi  - 1 
  • Rice Flour ..1/4 th cup 
  • Oil as required to deep  fry 
For the batter 
  • Red chilly powder..1 tblsp 
  • Turmeric Powder.. 1/2 tsp 
  • Hing/Asafoetida - a generous pinch 
  • Salt to taste 

Method 
Peel the bread fruit n slice it 

In a bowl add chilly powder, turmeric powder, hing  n salt , mix well  .. it should be a thick batter  so add little water   .  Add the sliced breadfruit in the prepared batter , marinate it for 10 mts .

Heat oil in a kadai ,   Run each marinated bread fruit pieces over rice flour  n deep fry till crisp  at  4 to 5 at a time . 

Bread Masala Toast

Bread Masala Toast


  • Bread Slices - 4
  • Eggs -2
  • Milk - 2 tsp
  • Onion -1 finely chopped
  • Green chilly-2 finely chopped
  • Pepper Powder-1/4 th tsp
  • Coriander leaves -finely chopped , 2 tsp
  • Salt to taste 
  • Butter - 2 tsp 


Method 
In a wide bottomed bowl break the eggs , add milk, whisk and beat it well.. To it add pepper powder  finely chopped onion, green chilly , coriander leaves , salt  n mix well . 

Heat a tawa , add butter .. 

Dip the bread slice in the egg mixture n immediately place on the heated tawa n cook on both sides till crisp  .

Serve with Tomato Ketchup .

Proso Millet /Baragu Dosa


  • Proso Millet/Baragu - 1 cup
  • Urid Dhal - 1/2 cup 
  • Methi seeds -1 tsp 
  • Salt to taste 


Method 
Wash n soak Proso Millet , Urid dhal n methi seeds for about 4 to 5 hours n grind to a smooth batter . Add salt n ferment overnight .


Heat a dosa tawa, drizzle oil n pour a ladle full batter , close the lid n cook on both sides . 

Serve hot with sambar/Chutney 

Ukde Seeth, Dalithoy , Keerla Neele Sukke . ( Tender Bamboo Shoots with Jackfruit seeds Cooked in coconut based dry masala) n Mango Slices .

Method

Keerla Neele Sukke . ( Tender Bamboo Shoots with Jackfruit seeds Cooked in coconut based dry masala) !

  • Finely Chopped tender bamboo shoots-1 cup heaped   
  • Finely Chopped jackfruit seeds -1/2 cup
  • Jaggery- Lemon sized 
To grind to a semi coarse paste 
  • Grated coconut-2 cup's
  • Roasted dry red chillies -6  or according to the  taste
  • Tamarind- Tamarind seed size
  • Urid dhal- 2 tsp heaped 
  • Salt to taste 
Seasoning 
  • Mustard seeds-1/2 tsp
  • Curry leaves-1 sprig
  • Oil-2 tsp 
Method 
Soak the chopped tender bamboo shoolts in enough water for about 1 hour , wash well n drain it . 

Pressure cook chopped bamboo shoots with chopped jackfruit seeds for 1 whistle in little water  .. cool n keep aside . 

In little oil roast urid dhal till it gives an aroma n the color changes to light brown on sim flame .cool it 

Grind little grated coconut, with chillies n tamarind to a fine paste . when about to remove the ground paste , add the roasted urid dhal n rest of the grated coconut n grind coarsely ..

in a kadai add oil, splutter mustard seeds then add curry leaves ,add the ground masala , jaggery ,salt n cooked bamboo shoots n jackfruit seeds  n cook till dry .

  • Tender fresh Beans ..1/4 th kg
  • Oil- 2 tsp
  • Garlic flakes 10 -12
  • Red Chilly Powder - 1 tsp
  • Salt to taste


Garnish

  • Grated coconut-1 tblsp


Method
Wash n chop the beans .

Crush Garlic flakes roughly

In a kadai add oil , add crushed garlic flakes n roast till reddish brown . Add chilly powder, chopped beans , salt , mix well , add little water n cook till soft but not mushy , then finally add grated  coconut n mix well .

 Crispy Roasted whole wheat flour Machkat 

  • Whole wheat flour..2 cup's
  • Grated coconut .. 1 cup heaped 
  • Green chilles..4 or according to the spcie 
  • Salt to taste .


Method


Crush Grated coconut n green chilly . 

In a mixing bowl add wheat flour , salt,  crushed green chillies, grated coconut , enough water to prepare a thick paste  ( shouldnt be like chapathi dough nor watery like dosa batter ) .


Heat a tawa, smear oil , place a handful of the above paste thick , dip fingers in water n spread evenly .. on sim flame n roast on both sides adding oil at the edges n center .

Dalithoy 
  • Toor dal - 1 cup
  • Green chilly - 4  or according to the taste 

Seasoning 

  • Oil/Ghee -1 tsp
  • Mustard seeds - 1 tsp
  •  Curry leaves - 1 sprig 
  • Dry red chillies -2
  • Hing/Asafoetida water- 1 tsp
  • Salt to taste

Method
Pressure cook toor dal . It has to be cooked well ,then churn it . Add slit green chillies with salt n boil well .Add water for desired consistency ( medium , neither too thin nor too thick ) 


In a seasoning  pan add oil or ghee , Add mustard seeds , when they splutter add torn red chillies n curry leaves...add this to the cooked dhal n then add hing water . Mix well 



Jeev Kadgi Upkari ( Bread fruit stir fry )
  • Jeev kadgi/Bread fruit ... chopped lengthwise into thin strips n washed  ( 2 cup's )
  • Oil..1 tblsp 
  • Mustard seeds..1/2 tsp
  • Hing/Asafoetida..a pinch 
  • Dry red chilly broken ...3 
  • Salt to taste . 


Method 
In a kadai add oil, splutter mustard seeds, add hing n then  broken dry red chilles n fry for a second then add the chopped bread fruit , salt mix well ... sprinkle water ( tastes heavenly with coconut oil without water ;) so more the oil its yummy to taste ) . cover n cook till crisp n done .Stir in between to avoid sticking . 


Jeev Kadgi/Bread Fruit  Rawa Fries 
  • Jeev Kadgi  /Bread fruit Slices  - 10
  • Red chilly powder- 1 tblsp
  • Turmeric powder- 1/2 tsp
  • Hing /Asafoetida- 2 pinch 
  • Semolina /Rawa - 1 tblsp 
  • Salt to taste 
  • Oil for deep frying 
Method 
In a bowl add the  red chilly powder, turmeric powder , hing ,salt n sliced bread fruit  .. mix well . keep aside for 5 minutes .

Run the marinated  pieces over rawa .

Heat oil in a deep kadai  , add the marinated bread fruit pieces 3 to 4 at a time n  fry on both sides till crisp.

Hinga Taaka /Asafoetida Butter Milk
Curds ..1/2 cup
Water ..2 cups 
Asafoetida /Hing ..2 huge pinch 
Water ..2 tsp 
Salt to taste 

Method 
Add hing in water n mix well .

In a bowl add the curds  water n churn it well . Add hing water n salt. Mix well 

Methi Phalle Ambat adding Ambado ( Fenugreek Leaves Cooked in Coconut Based Gravy adding sour hog plum )

  • Fresh Methi leaves / Fenugreek leaves  - 1 bunch 
  • Onion -1
  • Ambado /Sour Hog Plum -2 small or 1 big 
  •  Thur Dhal ..1/2 cup
To grind
  • Grated coconut- 1 cup
  • Roasted dry red chilies- 4
  • Salt to taste 
Seasoning 
  • Oil- 2 tsp 
  • Onion - 1 ( chopped ) 
Method 
Wash the Methi leaves n tear them with hands  

Chop onion roughly .


Wash , remove the tips of sour hog plum n roughly crush them . 

Wash n pressure cook thur dhal , cool n mash it well. 

In a vessel add little water, methi leaves  , chopped onion , roughly crushed sour hog plum n boil till cooked .

Grind all the ingredients meant to grind to a fine paste . 

Add the ground paste to all the cooked stuffs along with salt  n boil well n then do the seasoning .
