Subway Indian Style Paneer Tikka Sandwich , with Terrace Grwon Lettuce leaves , Tomatoes n Mint leaves .


Subway Indian Style Paneer Tikka Sandwich , with Terrace Grwon Lettuce leaves , Tomatoes n Mint leaves .


  • Foot Long Bread-2 
  • Butter-1 tblsp 
  • Green Chutney-1/2 cup 
  • Few lettuce leaves
  • Sliced Cucumbers -few 
  • Sliced Tomatoes-few 
  • Sliced Onions-few
  • Paneer Tikka- 12 to 15 pieces 
  • Tomato Sauce-1 tblsp 

Method for Paneer Tikka 

  • Paneer pieces-12  to 15 pieces
  • Oil-2 tblspn for shallow frying 

For Marinate

  • Thick Curd-1/4 th cup
  • Coriander Powder- 1 tsp
  • Red chilly Powder-1/2 tsp
  • Cumin Powder -1 tsp
  • Garam Masala Powder-1 tsp
  • Turmeric Powder -1/4 th tsp
  • Ginger Garlic Paste-1 tsp
  • Chat Masala Powder-1/2 tsp 
  • Lemon juice-1 tsp 
  • Salt to taste

Method 
In a wide mixing bowl add thick curd, coriander powder, red chilly powder, cumin powder, garam masala powder, Turmeric powder, Ginger garlic paste , Chat Masala , Lime juice , salt n mix well . Then add the paneer pieces mix again gently , so that all the marinade coats to the paneer pieces . Refrigerate it for 3 to 4 hours .

After 3 hours , bring it back to room temperature .

Heat a non stick tawa , add oil , place the marinated paneer pieces side by side gently n shallow fry on both sides till cooked . Keep aside . 

For green chutney
  • Mint leaves ..1/2 cup
  • Coriander leaves..1/2 cup
  • Ginger..1/2 inch piece 
  • Garlic flakes..2 or 4 
  • Onion..1, small or 1/2 of 1 big 
  • Green chilly ..3
  • Jaggery.. marble size 
  • Lime juice ..1 tblsp
  • Salt to taste 


Method  
Grind all the ingredients except lime juice to a fine paste without adding water . Remove add lime juice n mix well 

Method for Preparing the Sandwich 
Slice the foot-long bread. slightly toast it on tawa . 

When the bread is still warm, apply butter on both sides . 
On the base side of the bread apply green chutney .
Place the lettuce leaves, 1st n over that place tomato slices and cucumber slices . side by side . 
Place the paneer tikkas in random order and place onions slices on top 
Drizzle some green chutney and some tomato ketchup on top and cover with the other slice of the toasted bread ...

Serve with any juice .

Bread Besan Masala Toast


Bread Besan Masala Toast


  • Brown Bread or any other bread -- 4 slice 
  • Besan /Gram flour -1/2 cup 
  • Green chilly - 2 , finely chopped 
  • Onion -1 ,finely chopped 
  • Coriander leaves , finely chopped -1 tblsp 
  • Red chilly powder .1/2 tsp , adjust as per spice 
  • Turmeric powder -1/4 th tsp 
  • Semolina / Rawa- 2 tsp 
  • Kasuri Methi -1/2 tsp ( optional )
  • Ajwain/Carom seeds -1/2 tsp ( optional ) 
  • Salt to taste 
  • Water as required to prepare the semi solid batter .
  • Ghee/Butter/Oil as required to tawa roast 


Method 

.In a deep  bowl add  besan then add finely chopped green chilly , onion, coriander leaves , red chilly powder , turmeric powder , semolina  .. kasuri methi n ajwain ( these two optional ) n salt .... mix well n add water n make a semi solid batter . slice the bread in triangle shape ,  dip it in this batter n immediately place on a heated tawa drizzled with ghee/ oil or butter n roast on both sides 

Serve warm with tomato ketchup

Mixed Vegetable Burger

Mixed Vegetable Burger
  •  Burger Bun ..2
  • Butter ..2 tsp 
  • Lettuce Leaves...  4
  • Mayonnaise Sauce .. 1 tblsp
  •  Tomato Slices ...few 
  • Cucumber slices .. few
  • Onion ..few 
  • Cheese Slice ..2 
 Eggless Mayonnaise Sauce  


  • Milk – 1/2 cup + 1/2 cup
  • Corn flour  – 3 tbsp
  • Olive oil – 2 tbsp
  • White Vinegar – 1 tsp
  • Sugar – 1 tsp
  • Mustard seeds – 1/4 th tsp
  •  Pepper powder – 1/4 th tsp
  • Salt to taste 

Method 

Take mustard seeds and powder it coarsely, either by rolling pin or crushing it.. keep aside.

In a bowl add cornflour n add 1/2 cup of milk n mix well without forming any lump . 

Add another 1/2 cup milk in a vessel n boil it . Now add the corn flour milk mixture n keep stirring till it thickens on sim flame .Cool it completely and  blend it to a smooth paste .Add this blend paste to a bowl, add pepper powder,mustard  powder,sugar,salt, olive oil , vinegar n mix it well till its creamy.

Store in airtight container and refrigerate it.


 Vegetable  Pattice 

  •  Potatoes – 2 medium  
  • Mixed Vegetables – 2  cups together ( Green peas, carrots, Beans  )
  • Onion – 1 medium  
  • Ginger ..1/2 inch piece 
  •  Garlic Fakes - 4 to 6 
  • Green Chillies – 2 
  • Coriander leaves – few 
  • Lemon Juice  – 2 tsp
  • Red Chilly Powder – 1/2 tsp or to taste
  • Cumin Powder – 1/2 tsp
  • Turmeric Powder ..1/4 th tsp 
  • Salt – to taste


To prepare thin Batter  
  • Maida - 2 tblsp 
  • Water -1 /2 cup 


To Coat pattice 
  • Bread Crumbs – about 1 cup 
  • Oil – for shallow  frying
 
Method 

Pressure cook the  potatoes and drain the water  immediately to prevent the potatoes from absorbing lot of water. Peel and mash it well n keep aside.

. Wash n finely chop the vegetables like carrots n beans 

Chop the onion n green chilly finely 

Peel the skin of ginger n garlic flakes n crush it to a fine paste . 

 . Boil the chopped vegetables till soft . Drain the water completely n put in a colander so that no moisture retains ..smash it with backside of the spoon 

 Add oil in a pan and saute the finely chopped onion , finely crushed  ginger garlic paste for few minutes as to remove the rawness . 

 Make a very thin batter with the maida and water.  

Spread the breadcrumbs also in a plate to coat the cutlets before frying

In a bowl add  boiled well smashed potatoes,   vegetables ,sauteed mixture , finely chopped green chilly , coriander leaves , all the powders , salt n lime juice ..mix well n form into round shaped pattice . 
Heat a tawa, drizzle oil .. dip the pattice in maida batter , run over bread crumbs evenly n place these pattice side by side ..cook on both sides till crisp . 
To assemble Burger 
Slice the burger bun ,apply butter n Slightly toast the bun.Apply mayonnaise sauce generously to the toasted bun n  place the pattice, then place Onion, cucumber , tomato slice , then cheese slice n Lettuce leaf ,spread mayonnaise sauce to another half of the bun n place this on top . 

Serve with tomato ketchup

Method 
Apply ghee to both sides of the bread slices n roast on tawa till crisp ... 

Serve with Tea / Coffee .

Green Chutney Sandwich

Green Chutney Sandwich 

  • Bread Slices ... 6 
  • Butter ..1 tblsp



For green chutney

  • Mint leaves ..1/2 cup
  • Coriander leaves..1/2 cup
  • Ginger..1/2 inch piece 
  • Garlic flakes..2
  • Onion..1
  • Green chilly ..3
  • Jaggery.. marble size 
  • Lime juice ..1 tblsp
  • Salt to taste 


Method 
Grind all the ingredients except lime juice to a fine paste without adding water . Remove add lime juice n mix well 

For sandwich 
Apply butter to one side of the bread n then apply the chutney , place another bread slice n apply butter on top of it . 

Heat a tawa n place the buttered sandwich n roast on both sides . 

Note : to make it healthy place cucumber, onion n tomato roundels in between the sandwich before roasting .

Aaloo Masala Sandwich Toast

Aaloo Masala Sandwich Toast 

  • Bread Slices...10 
  • Butter..1 tblsp


For the stuffing 


  • Potatoes... 4
  • Oil..2 tsp
  • Cumin seeds..1 tsp 
  • Onion ..2 
  • Red chilly powder... 1 tsp 
  • Garam Masala Powder..1/2 tsp
  • Dry Mango powder/Amchur powder..1/4th tsp or Lime juice ..1 tsp 
  • Turmeric powder..1/4 th tsp 
  • Chopped coriander leaves ..1 tblsp 
  • Salt to taste . 

Method 
Wash n pressure cook the potatoes.cool, peel n mash the potatoes well . 

In a kadai add oil, crackle cumin seeds then add chopped onion n fry till transparent .Add all the powders, mashed potatoes ,salt n  mix well .Then add chopped coriander leaves n mix again . Allow it to cool

Butter one side of the bread n spread the potato masala stuffing evenly n place another bead bread slice on it n apply butter . 

Place it inside a toaster n roast both the sides of the toaster for few seconds or till done . 

Serve hot with ketchup

Garlic Herb Bread

Garlic Herb Bread 

  • Bread Slices ... 4 
  • Butter .. 2 tblsp 
  • Garlic bulb ... 2 
  • Coriander leaves ... one small bunch or can use Italian mixed herb too . 

Method 
Remove the skin of garlic cloves n finely grate it . 

Finely chop coriander leaves 

In a pan add butter n just melt it on low flame .. add the grated garlic and chopped coriander leaves n saute for just a few seconds so that the aroma is infused in the butter n make sure not to brown the grated garlic  Remove it .. 

Butter one side of the bread slice , apply the garlic herb mixture on the other side n place the buttered side on a heated pan n roast only that side on low flame till crisp .

Mushroom Hot dog !

Mushroom Hot dog 


  •  Hot dog buns.. 3 
  • Butter..6 tsp ( I used Nutralite ) 
  • Cheese cubes..2 ( I used Amul )
  • Oil.. 3 tsp  
  • Chopped mushrooms.. 11/2 cups 
  • Chopped capsicum... 1/2 cup 
  • Onion.. 1 
  • Garlic cloves...5 
  •  Chilly powder..1/2 tsp 
  • Pav bhaji masala..1 tsp 
  • Turmeric powder..1/4 th tsp 
  • Salt to taste 


Method 
Chop the onions n garlic cloves . 

In a kadai add oil , add chopped garlic, chopped onion n fry till transparent . Then add chopped mushroom, chopped capsicum ,salt  and cook it without adding water . Then add all the powders , mix well . 

Slit the bun , ,apply butter on both sides and place the cooked mushroom  sabzi n grate cheese all over it .

Roast on tawa . 

Serve with tomato ketchup

Bangalorean Iyengar Style Bread Toast

  • Bread Slices... 6
  • Oil... 1 tblsp
  • Mustard seeds..1 tsp
  • Onion ..2
  • Tomato..1
  • Green chilles..3 or according to the spice
  • Coriander leaves .. few
  • Cumin powder..1/2 tsp
  • Coriander powder..1 tsp
  • Garam Masala Powder..1 tsp 
  • Butter as needed to toast the bread
  • Salt to taste


Method
Wash n grate Carrots . Slice Onions length wise ,Chop tomatoes n  coriander leaves. Finely chop green chilles.

In a kadai, add oil n splutter mustard seeds, add sliced onion n fry till transparent, add chopped green chilles n fry for a while .Add chopped tomato n fry well . Then add grated carrots n fry . Add all the powders , salt  , chopped coriander leaves  n mix .Allow it to cool .

Apply butter on One side of the bread and on the other side apply a generous portion of the mixture. On a hot tawa toast the buttered side well. 

Serve hot .

Veg French Toast ( Version 1 )

Veg French Toast ( Version 1 ) 


  • Whole wheat bread slices-3
  • Gram Flour/Besan - 3 tblsp 
  • Rice flour- 1 tblsp 
  • Onion finely chopped - 1/4 th cup 
  • Chilly powder- 1 tsp
  • Ajwain /carom seeds - 1/2 tsp 
  • Chopped coriander leaves- 1 tblsp 
  • water as needed to prepare the batter 
  • Salt to taste . 


Method 
Slice bread to two pieces .

In a bowl add besan, rice flour, chopped onion, chilly powder, ajwain , chopped coriander leaves n just enough water to prepare a batter ( dosa consistency ) . 

Heat a tawa , add in little oil . Dip the bread pieces in the above batter n place it on the heated tawa n roast on both sides .

Serve hot with Tomato Ketchup .

Bread Toast with Tomato Onion Masala Bhaji !


  • Brown Bread Slices - 4 
  • Butter-2 tsp 


For Bhaji Masala

  • Oil- 2 tsp
  • Fennel Seeds- 1/4 th tsp  
  • Onion -3
  • Tomato-2
  • Ginger Garlic paste- 1 tsp
  • Red chilly powder-1 tsp
  • Garam Masala Powder-1/2 tsp
  • Coriander powder-1/2 tsp 
  • Crushed Kasuri methi - 1/2 tsp 
  • Coriander leaves chopped -2 tsp   
  • Salt to taste 


Method 
In a kadai add fennel seeds n when it stop spluttering  add chopped onions n fry till reddish brown ,then add chopped tomatoes n fry till the raw smell goes n it becomes mushy . Add ginger garlic paste n fry for a minute . Add all the powders along with salt n crushed kasuri methi n fry well for a minute or two . Garnish with coriander leaves n mix well . 

Heat a tawa , apply butter to one side of the bread , place it on the tawa n then apply 2 or 3 tsp full of bhaji masala n roast on one side in Sim flame ... 

Serve hot !

Layered Mushroom Masala stuffed Cheesy Sandwich 


  • Brown Bread Slice - 6 
  • Butter- 2 tsp 

For filling 

  • Button Mushroom - 1 cup ( cut into pieces )
  • Tomato-1
  • Onion -1
  • Ginger-garlic paste - 1 Tsp 
  • Turmeric powder - 1/4 th Tsp
  • Chilly powder  - 1 Tsp
  • Cumin powder-1/2 tsp
  • Coriander powder-1 tsp 
  • Garam Masala- 1/4 th tsp 
  • Oil - 2 Tbsp 
  • Salt to taste



Garnishing 
  • Cheese 

Method

In a kadai, add oil , chopped onions n fry till reddish pink , then add chopped tomatoes n cook till the raw smell goes, add ginger garlic paste n cook for a minute ..add all the powders , salt n chopped mushrooms with very little water n cook till done n the masala becomes thick .  



Apply butter on one side of the bread , spread spoon full of the masala , place another bread slice n spread another spoon full masala on it ... heat a tawa , n place this on it n roast well on both the sides ... Grate cheese n allow it to melt . 

Cut into desired shape's  n serve hot .

Peas Corn Multi grain Masala  bread baath ! 
  • Muti grain bread slices-6 
  • Green peas - 1/4 th cup
  • American corn -1/4 th cup
  • Onion - 1 medium 
  • Tomato-1 medium 
  • Green chilies-1
  • Oil- 2 tsp
  • Mustard seeds-1/2 tsp 
  • Urid dhal- 1/2 tsp
  • Curry leaves-1 sprig 
  • Vangi baath powder- 1 tsp 
  • Salt to taste 

Method 
Pressure cook corn n peas for one whistle with salt ..keep aside.

Roughly tear multi grain bread to pieces .keep aside  

In  a kadai add oil n splutter mustard, add urid dhal , curry leaves n  chopped green chillies n fry for minute . Add chopped onions n fry till transparent , add chopped tomatoes n cook till the raw smell goes . add salt n Vangi baath powder, fry for a minute n then add peas n corn pre-boiled along with Bread pieces n mix well . 

Serve hot .

Bread upma / upakari 
  • Bread Slices - 10 ( torn to pieces, probably 1/2 inch  )
Seasoning
  • Oil -2 tsp
  • Mustard seeds- 1/2 tsp
  • Urid dhal - 1/2 tsp 
  • Onion - 1 
  • Green chillies -2 
  • Curry leaves- 1 sprig 
  • Turmeric powder-1/4 th tsp
  • Sugar- 1/2 tsp 
  • Salt to taste 
Method 
In a kadai add oil , mustard seeds. When the mustard seeds splutter, add urid n fry till it turns reddish brown , add chopped onions n fry till pink .. add curry leaves n slit green chillies n fry for a minute . Add sugar , turmeric powder n salt . Add the torn bread pieces . Sprinkle some water to soften the bread. stir for a minute or two n mix well . serve hot.

Noodle Sandwich

Noodle Sandwich 
  • Maggie Noodles -1 packet
  •   Brown bread-4 slice 
  • Tomato ketchup-2 tsp
  • Butter- 2tsp 
Method
Heat water in a kadai ..add the maggie masala n tomato ketchup ,mix well n then d noodles .. stir .. remove 4m flame when it cooks well .
 
Take one bread slice n spread noodles n cover with another bread slice . spread butter on both side of the sandwich n roast on tawa till crisp. 
Serve hot with tomato ketchup.

Cocoa Sandwich

Cocoa Sandwich 
  • Brown bread slice -3
  • Nutella hazelnut cocoa spread-4 tsp
  • Fresh Black grapes chopped- 1/2 cup
  • Butter for greasing
Garnishing
Drinking chocolate-3 tsp

Method
Spread the nutella hazelnut cocoa spread on 2 bread slices evenly. Place one layer of chopped grapes and cover with bread slice.Now grease the butter on non-stick pan or tawa and fry till its golden brown. 

 Garnish with drinking chocolate.

Spinach corn paneer sandwich

Spinach corn paneer sandwich .
  • Bread slices-6
  • oil-2 tsp
  • Onion-1 small
  • Cumin seeds-1/4 th tsp 
  • Chopped spinach-2 cups
  • corn kernels-1/2 cup 
  • Scrambled paneer-1/4 th cup 
  • Pepper powder-1/2 tsp 
  • Butter or ghee -3 tsp 
  • salt to taste .
 
Method 
Pressure cook corn kernels for 1 whistle..keep aside 

In a kadai add oil , add in cumin seeds, chopped onions n fry till pink, add spinach , scrambled paneer, cooked corn kernels ,salt n saute till spinach starts to wilt .then add pepper powder n mix well !

Spread this mixture over the bread slice n place another bread slice over it  .. apply butter over it n tawa fry it till crisp !
