Chapathi with Methi Egg Burji .

Chapathi  with Methi Egg Burji .

Chapathi 
  • Whole wheat flour  -2 cups
  •  Salt to taste
  • Water to knead the dough
  • Oil..1 tblsp
  • Ghee as required to roast the chapathi  
Method 
In a bowl , add whole wheat flour , add oil , salt n water litle by little  at a time n knead it to a soft dough for about 5 to 8 mts ... keep side for about 1/2 an hour 

Divide the dough into equal sized balls , apply some flour n bail out thin chapthis .

Heat a tawa , place the Rottis on it n cook till puffed on both sides ..apply ghee n serve hot . 


Methi Egg Burji
  • Eggs ..4
  • Fresh Methi /Fenugreek leaves ... 2 cups
  • Oil..1 tblsp
  • Cumin seeds..1/2 tsp
  • Onion..1 huge
  • Garlic flakes..4
  • Ginger ..1/2 inch piece
  • Tomato..1
  • Green Chilly..2
  • Red Chilly powder..1 tsp
  • Turmeric Powder..1/4 th tsp
  • Salt to taste 

Method 
Wash eggs . 

Wash the methi leaves. 

Finely chop onion, tomato, ginger , garlic n green chilly .

In a kadai add oil , crackle cumin seeds, then add chopped garlic n chopped ginger n fry for a while . add chopped onion n fry till transparent . Add chopped tomato n cook till mushy. .Add  methi leaves n cook till the methi leaves wilt , then add chilly n turmeric powder, salt . Mix well n  add beaten eggs n stir well , till eggs are cooked .

Egg Masala
  • Boiled Eggs ..4 

Seasoning 

  • Oil..2 tsp
  • Onion ..1 
  • Tomato..2
  • Red chilly powder.. 1 tsp
  • Salt to taste 
Garnish 
  • Coriander leaves 

Method
Chop onion n tomatoes .

In a kadai add oil, Add chopped onion n fry till reddish brown . Add chopped tomatoes n cook till mushy n the raw smell goes. Add  red chilly powder n fry for few seconds ..Add little water , salt , boiled eggs n boil . Then do the garnishing .

Ukde Seeth , Ghardudde /Bottle Gourd Sambar adding crushed Garlic as seasoning , Spicy Egg Masala Roast , Curds n Terrace Grown Guava Slices 

Spicy Egg Masala Roast  


  • Boiled Eggs ..4

Seasoning 

  • Oil..1 tblsp
  • Mustard seeds..1/2 tsp
  • Curry leaves ... 2 sprigs 
  • Onion ..2 
  • Tomato..2 
  • Green chilly .. 2 
  • Ginger ..2 inch piece
  • Garlic cloves..3 
  • Red chilly powder.. 1 tsp
  • Chicken masala / egg masala powder..2 tsp 
  • Pepper powder..1/4 th tsp
  • Turmeric powder..1/4 th tsp
  • Coriander powder ..1 tsp 
  • Salt to taste 


Garnish 

  • Coriander leaves 

Method 
Chop onion length wise .Chop tomatoes .

Slit green chilles , finely chop ginger n garlic . 

In a kadai add oil, splutter mustard seeds, add curry leaves n add finely chopped ginger , garlic , slit green chilles n fry for a while till the aroma ooze . Add chopped onions n fry till reddish brown . Add chopped tomatoes n cook till mushy n the raw smell goes. Add salt n all the powders , fry for a minute ..Add little water , boiled eggs n boil . Then do the garnishing .



Ghardudde /Bottle Gourd Sambar adding crushed Garlic as seasoning .


Tender Ghardudde /Bottle Gourd- 1 , medium 
  • Thur Dhal- 1/2 cup
  • Onion ..1 
  • Tomato-1
  •  Sambar Powder- 2 tsp
  • Tamarind - marble size
  • Hing /Asafoetida- a pinch
  • Salt to taste 
Seasoning
  • Oil-2 tsp
  • Mustard seeds -1/2 tsp
  • Garlic flakes, crushed -8 to 10 
  • Cumin seeds -1/4 th tsp 
  • Curry leaves-  1 sprig
  • Dry red chilly -2 , broken 
Garnishing
  • Coriander leaves
Method  
Soak Thur dhal for 10 mts n then pressure cook it ..cool n churn it well . 

Peel tender   , chopped onion n chopped tomato in little water till soft .

 
Soak tamarind in water for 20 mts n extract juice n to it add sambar powder n mix well .


In a vessel add the cooked stuffs , tamarind sambar powder mix n salt . cook well , Add hing water . mix well . Then do the seasoning  n then garnish .

Rotti with Banarasi Egg Masala

Rotti with Banarasi Egg Masala


Rottis 
  • Wheat flour- 1 cup 
  • water as needed to prepare a soft dough 
  • Salt per taste . 


Method 

In a bowl add wheat flour , salt n just enough water n knead well to form a soft dough .. keep aside for 1/2 an hour. 

Knead the dough again n divide the dough into equal lemon sized balls .


Sprinkle little flour on the dry surface kitchen platform or a wooden chapathi maker n place the dough ball over it n roll with a rolling pin very gently n not too hard  to a round 5 inch disc . 

Heat a tawa n place the rotti over it. Cook on one side for half minute and flip on the second side. Cook for another half minute and smear some oil  on one side. Now flip this oiled side onto the tawa. Now you will see the rotti fluffing . Similarly add oil on the second side and fry both sides till rotti is completely cooked and brown spots appear on it.  Move each edge to middle of the tawa and cook so that all the edges are evenly cooked.



Banarasi Egg Masala

  • Hard Boiled eggs .... 4
  • Mint Leaves ..a handful 
  • Kasuri Methi ..2 tsp 
  • Tomato ... 1 ( make paste of it ) 
  • Oil..1tblsp 
  • Water ..1 cup 


To grind to a fine paste

  • Poppy seeds.. 2 tsp
  • White Sesame seeds... 2 tsp
  • Onion...  1 huge
  • Coriander leaves..1 fist
  • Chicken Masala powder..1 tsp 
  • Red Chilly Powder... 1 tsp 
  • Coriander Powder..1 tsp 
  • Ginger Garlic Powder.. 1 tsp 
  • Curds ...1/4 th cup 
  • Salt to taste 


Garnishing 

  • Coriander leaves
  • Lime juice ..1 tsp 

Method 
Dry roast poppy seeds n white sesame seeds on low flame . remove it 

Dry roast chopped onions on low flame . 

Cool all the above and then grind it to a fine paste along with coriander leaves, chicken masala powder, chilly powder, coriander powder, ginger garlic paste n curds .

In a kadai add oil n then add mint leaves .fry it for a while , add ground paste n fry till the raw smell goes, add water , kasuri methi, boiled eggs n cook for a while . Then do the garnishing  .

Chapathi 

  •   Wheat Flour - 1 cup
  • Oil- 2 to 3 tsp  
  • Water as needed to prepare the soft dough 
  • Salt to Tate 
  • Oil as required to roast 


Method

In a bowl add the wheat flour, salt, ,oil  , water n knead to a soft dough .. keep aside for about 20 mts . 

Divide the dough into equal lemon sized balls .

Boiled Rice n Egg Ghassi

Boiled  Rice n Egg Ghassi

Egg Ghassi
Hard Boiled eggs -5
Grated coconut -2 cup's 
Dry red chilly -  5 to 6 
Coriander Seeds -2 tsp
Cumin seeds -1 tsp
Methi/Fenugreek seeds - 1/4 th tsp
Black pepper corns -1/4 th tsp 
Tamarind -Tamarind Seed size 
Onion - Medium sized 2 ,one for grinding the masala n one while boiling the masala -chopped 
Garlic flakes , peeled -6 to 8 
Turmeric powder -1/4 th tsp
Salt to taste 

Method 
Peel the Boiled eggs ... make some cuts n set aside ... 

Dry roast dry red chilly , coriander seeds, cumin seeds, methi seeds n black pepper corns ..cool n grind to a fine paste along with grated coconut n tamarind ... then to the ground masala add one roughly chopped onion n peeled garlic flakes , turmeric powder n grind again to a very fine paste ... 

in a vessel add this ground paste , water for consistency , 1/2 chopped onion , cooked eggs n boil well for 5 to 7 mts ... adding salt

Phulkas n Spicy Egg Pepper Fry


Phulkas n Spicy Egg Pepper Fry 

Phulkas
  •  Whole wheat flour- 2 cup's 
  • Warm water  --1/2  cup or more if needed.
  • Oil ..few drops 
  • Salt per taste 

Method

 In a deep large  bowl, add whole wheat flour ,salt and mix it well , .add enough warm water and start mixing .Knead the dough  for about 10 mts till the dough is soft n smooth .

 Phulka/  Roti dough should be really smooth and elastic.

 Smear  little oil over the dough and cover with a kitchen towel and set aside for 1/2 an hour .

After 1/2 an hour ,  Knead the dough again for few seconds.

 Divide the dough into lemon sized balls ,

 Dip one dough ball into little  dry flour and flatten it..Roll it lightly without much force to a thin flat circle of about 6 inch disc


 Heat a tawa,   then put the rolled roti on it. When the bubbles is forming up, flip it and cook on the other side for few seconds , till the  brown spots.appear .

 Hold the roti with a tong and place it directly on the flame., when the  roti start to puff,flip it and cook on the other side too.




Spicy Egg Pepper Fry 
  • Boiled Eggs - 4
  • Salt to taste 

To dry Roast and Grind to a semi coarse powder

  • Whole Black Pepper- 2tsp 
  •  Cumin Seeds-1 tsp 
  •  Fennel Seeds-1tsp 
  • Coriander Seed-1tsp
Seasoning 
  • Oil- 2 tsp 
  • Mustard seeds-1/2 tsp
  • Hing /asafoetida - a pinch 
  • Curry leaves- 1 sprig 
  • Ginger Garlic Paste - 1 tsp ( pound them fresh to get a nice taste )
  •  Onion-2 
Garnishing 
  • Chopped coriander leaves 

Method 
Boil eggs, remove the shell n slice them .Keep aside 

Dry roast whole pepper corns, cumin seeds , fennel seeds n coriander seeds ... n powder them to semi coarse .

In a kadai add oil, splutter mustard seeds, add hing, curry leaves , ginger garlic paste n saute for few minutes.Add chopped onions n fry till transparent . Add the ground powder n fry well till the raw smell goes. Add little water  , salt n boil it well . Add the sliced egg n boil till the masala is dry n it gets coated on the eggs . Then garnish with coriander leaves

Rotti 
  • Wheat flour- 1 cup 
  • water as needed to prepare a soft dough 
  • Salt per taste .
  • Oil /Ghee as needed to rost the rotti 
  • Cheese Cubes -2 ( i used Amul Brand )  


Method 
In a bowl add wheat flour , salt n just enough water n knead well to form a soft dough .. keep aside for 1/2 an hour. 

Knead the dough again n divide the dough into equal lemon sized balls .

Sprinkle little flour on the dry surface kitchen platform or a wooden chapthi maker n place the dough ball over it n roll with a rolling pin very gently n not too hard  to a round 5 inch disc .

  • Onion..1 huge
  • Green chilly ... 3 
  •  Pepper Powder ... 1/4 th tsp  
  • Salt to taste 
  • Coriander leaves to garnish 

Method 
Wash eggs .

 Chop onion n green chilly .

In a kadai add oil , add chopped onion n fry till transparent . Add chopped green chilly n stir for few seconds ,add beaten eggs n stir well adding salt  till eggs are cooked , then add pepper powder n  Garnish with chopped coriander leaves ,Mix well

Ukde seeth , Terrace Grown vaali Ambat n Noguli/ Lady fish Rawa fries

Vaali  Ambat  ( Malabar  Spinach with dhal  coconut based gravy ) 
  • Malabar Spinach ( Vaali )-1Bunch  
  • Onion - 1 Medium 
  • Thoor dhal- 1/4 th  cup 

To grind

  • Grated Coconut- 1 cup
  • Roasted red dry chilles-4 or according to the spice 
  • Tamarind- Tamarind seed size 
  • Salt to taste 
Seasoning
  • Oil - 2 tsp
  • Chopped onion - 1 medium 

Method
Roughly chop Malabar  spinach  with tender stem.

Pressure cook Thur dhal , mash it well ..keep aside

Cook chopped malabar spinach along with chopped onion ..n cook till tender .

Grind grated coconut, roasted chilles, tamarind to a fine paste .


Add the ground paste  to the cooked stuffs along with cooked dhal . Give a boil n then do the seasoning .


Noguli/ Lady fish Rawa fries 
  • Lady Fish - 5
  • Red chilly powder- 2 tsp 
  • Turmeric powder- 1/4 th tsp
  • Asafoetida/Hing - 2 pinch 
  • Rice flour-3tsp
  • Semolina /Rawa- 3 tsp 
  • Salt to taste 

Method 
Clean the fish .

In a bowl add chilly powder , turmeric powder, hing, rice flour,  salt , add fish n mix well .Keep aside for 1/2 an hour . 

Roll the marinated fish over rawa n deep fry in oil .
