Mixed vegetable in White sauce

Mixed vegetable  in White sauce

To prepare white sauce 
  • Butter- 2 tbsp
  • Maida -1 tblsp 
  • Milk-1/2 cup
  • Pepper powder-1/4 th tsp
  • Salt

In a bowl add Maida , pepper powder,  salt n milk, Mix well n ensure no lumps are formed n it should be watery .


Take a non stick pan n melt butter in it . Carefully add the flour mix n stir continuously ... till the sauce reaches bit thick consistency ... make sure its not too thick ! 

Pre boil vegetables like peas, carrot, baby corn , beans ,capsicum , Tomato ( Hard ones n remove the seeds ) ,cabbage etc  

In a kadai add olive oil , kasuri methi, ground green chillies , the boiled vegetables n sauce ..mix well , garnish with coriander leaves .

Angoori Pulov !

Angoori Pulov ! 
  •  Cooked Basmathi Rice - 2 cups 
  • Beans chopped-1/4 th cup
  • Carrot chopped -1/4 th cup 
  • Peas-1/4 th cup 

To grind to paste 
  • Coriander leaves - 1 bunch 
  • Grated Coconut-2 tsp 
  • Ginger-small piece
  • Garlic cloves-4
  • Cloves- 3 
  • Cinnamon - 1 inch piece  
  • Poppy Seeds- 1/4 th tsp 
  • Green chillies-3 or according to the taste
  • Salt to taste
Seasoning 
  • Ghee- 3 tsp 
  • Onion - 2 
  • Cashew nuts - A few 
  • Raisins - A few  

Garnishing 
  • Fresh Grapes 

Method 
Pressure cook the chopped vegetables for 1 whistle with little water . Drain n keep aside .

Grind all the ingredients meant to be ground to a fine paste .

In a kadai add Ghee, sliced onions n fry till pink , add in cashewnuts n raisins n fry for 2 mts .Add the ground paste ,salt n fry till the raw smell goes , add the cooked vegetables , Rice n mix well . Garnish with fresh grapes .

Chicken in Green Masala .

Chicken in Green Masala .

Chicken - 1/2 kg 

To grind to paste .
  • Green chillies-12 to 15 
  • Garlic cloves - 12 
  • Ginger -1 inch piece 
  • Salt to taste 

To make powder
  • Cloves- 5 
  • Cinnamon -1 inch piece
  • Cardamom - a pinch  
  • Marati Moggu / Badi Laung -3 

Seasoning 
  • Oil -4 tsp 
  • Onion -3
  • Tomato - 1 ( small ) 

Garnishing 
Butter-2 tsp 

Method 
Clean the chicken n keep it aside

Grind green chillies, garlic  n ginger to a fine paste . 

Cloves , Cinnamon , cardamom n marati moggu to be powdered fine .

In a kadai add oil , sliced onions n fry till transparent , add chopped tomato  n cook till the raw smell goes , add the ground paste n fry till the oil leaves the masala n cooked well. Add the powder n fry for a minute , then the chicken , salt n water , close with a lid n cook till the chicken is tender ... lastly add butter n boil again for a minute .

  • Eggs-5
  • Onion -2
  • Ginger Garlic paste-1 tsp
  • Cloves- 2
  • Cinnamon -1 inch piece
  • Dry red chillies-2
  •  Green chillies-1
  • Chilly powder-1 tsp
  • coriander powder-1 tsp
  • cumin powder-1/2 tsp
  • Fenugreek powder-1/4 th tsp
  • Thick tamarind paste-1 tsp
  • Oil-3 tsp
  • Salt to taste 

Method
Boil eggs with pinch of salt ..cool n remove the shell , prick with fork all over n keep aside

In a kadai add oil , chopped onions n fry till reddish brown , add red chilly, slit green chilly n ginger garlic paste n  fry for a minute . Add cloves, Cinnamon n all the powders along with tamarind paste n salt ... fry it well n then add the boiled eggs , mix well .

Sweet Akki Kadbu ( steamed rice dumplings ) in Plantain leaf

Sweet Akki Kadbu ( steamed rice dumplings )  in Plantain leaf 
  • Boiled Rice-1 cup
  • Raw Rice-1 cup
  • Grated coconut-1 cup 
  • Small piece jaggery 
  • Salt to taste 
  • Banana leaves cut into about 6"  approximately-12 to 15 


Method 
Soak both the  rice for about 3 to 4 hours ,wash  n then grind it with grated coconut , jaggery n salt to a fine paste

 The consistency of the batter should be thick. ( No need to ferment the batter )


Place the cut banana leaf n spread evenly the  batter with hands. use a little water to dip your  hands while spreading the batter  , fold it  once done , prepare the same way for the remaining batter n arrange them in a steamer n steam for  20 mts .

Serve with Ghee n chutney !

Eggless Carrot Cake .

  • 1 cup- Grated carrots
  • 1 cup - Chopped walnuts
  • ¼ cup -Brown sugar
  • ¾ cup- sugar
  • 1 tsp vanilla essence
  • ½ cup Softened butter or margarine
  • ½ tsp- salt
  • 1 ½ tsp- baking powder
  • 1 tsp- cinnamon powder
  • 1 ¼ cups-Refined  flour
  • ¼ cup - Milk
Method
Pre-heat oven to 325 F. Grease and dust  a 9-inch round or  square baking pan.

Combine vanilla, butter, salt, baking powder, cinnamon powder , sugar, flour and  milk .whisk until well mixed.

Fold in the grated carrot and chopped walnuts.

Spread batter evenly in baking pan. Bake for 45 minutes at 170 degrees Celsius.

Take it out and allow to cool on the rack.

Note : can do the icing once the cake is completely cooled .

Dried Prawns Kismuri-Version 1

Dried Prawns - 1 cup

To Grind
  • Grated Coconut-1/2 cup
  • Dry red chillies-  4 to 5 or according to the taste .
  • Garlic flakes- 2 or 3
  • Onion- 1/2 sliced
  • Curry leaves-1 sprig
  • Tamarind-Tamarind seed size
  • Salt to taste

Garnishing
  • Chopped Onion ( Medium )-1
  • Green chilly - 1 or 2 
  • Finley chopped coriander leaves -2tsp

Method
Separate the head n tail of dried prawns .

Soak it in water adding 1/2 a tsp of turmeric powder for 10 mts .

wash it properly until the sand particles are all gone . 

In a kadai add a tsp of oil ,add in cleaned dried prawns n  keep stirring for 2 to 3 mts .Keep aside . 

In a kadai add little oil n fry Grated coconut, red chillies , tamarind, sliced onions, crushed garlic  n curry leaves . cool n grind it with salt .. (dont add water )

Remove d ground mixture , add in chopped onions , coriander leaves, chopped green chilles  n sauteed dried prawns n mix well with hands .

Noguli/ Lady fish Rawa fries !


  • Lady Fish - 5
  • Red chilly powder- 2 tsp 
  • Turmeric powder- 1/4 th tsp
  • Asafoetida/Hing - 2 pinch 
  • Rice flour-3tsp
  • Semolina /Rawa- 3 tsp 
  • Salt to taste 

Method 
Clean the fish .

In a bowl add chilly powder , turmeric powder, hing, rice flour,  salt , add fish n mix well .Keep aside for 1/2 an hour . 

Roll the marinated fish over rawa n deep fry in oil .

  • Egg's - 5

For Grinding
  • Grated Coconut-1/2 cup
  • Ginger- 1 inch piece
  •  Garlic flakes - 4 to 6 
  • Whole Cardamom pod - 1or 2 
  • Cloves- 4
  • Cinnamon Stick- 1 inch piece
  • Turmeric powder- 1/2 tsp
  • Coriander powder- 1 Tsp
  • Red chilly powder -2 tsp 
  • Water-1/2 to 1 cup
  • Salt to taste

For seasoning 
  • Oil- 1 tblsp
  • Onion -1, chopped 
  • Tomatoes-2 ,chopped   
  • Green chilly -1or 2 ,chopped 

Garnishing
  • Coriander leaves chopped -2 tsp heaped 

Method

Boil eggs with pinch of salt . cool , remove the shell n cut it into 2 pieces . keep aside .

In little oil add cloves, Cinnamon , crushed garlic n fry for 2 mts. cool n grind it along with grated coconut , ginger, cardamom, red chilly powder, turmeric powder n coriander powder. 

In a kadai add oil ,add chopped onion n saute till reddish brown. Add slit green chillies n fry for a while .. add in tomatoes n cook till the raw smell goes . Add the ground paste n cook till the oil leaves the masala . Add water , salt and cut eggs . Cook till  the gravy is semi thick ..Garnish with coriander leaves .

Note : Goes well with rice / Chapatis /Roti

Gorikayi Thogrikayi Bhath !

Gorikayi Thogrikayi Bhath !
  •  Cooked Rice- 2 cups
  • Chopped Gorikayi /  Cluster beans - 1 cup 
  • Thogrikayi /peeled Fresh toor dal pods- 1 cup
  • Tomato - 1 medium
  • Mint leaves - a few ( optional ) i have added , as had abundance fresh ones growing in my garden


To Grind into Powder 
  • Urad dal -1/2 tsp  
  • Channa dal -1/2  tsp 
  • Cloves -2
  •  Cinnamon - small piece
  •  Coriander seeds -1 tsp 
  • Cumin seeds -1/4 th tsp 
  • Fenugreek seeds-1 pinch 
  •  Red chillies -Long 5 ,short 3 or according to the taste
  •  Peppercorns- 2 or 3
  • Small piece nutmeg 
  •  Turmeric powder -1/2 tsp 
  • Dry copra-1/4 th cup 
  • Oil- 2 tsp  
  • Salt to taste 

Seasoning 
  • Oil/ghee - 4 tsp  
  •  Mustard seeds-1/2 tsp  
  • Curry leaves-1 sprig 
  • Dry red chilly- 1 or 2 

Garnishing
  •  Lemon juice -1 Tsp
  • Coriander leaves 

Method

In a small pan , add oil n fry all the ingredient meant to powder separately ,cool n grind it to powder. 

Pressure cook cluster beans and fresh thur pods for 1 whistle with little water ...



Heat oil/ ghee in a pan  add mustard seeds, once it splutters then add torn red chilly , curry leaves,tomatoes n cook till the raw smell goes ,add mint leaves n fry for a while . 


Add the cooked vegetables n powdered masala , salt n then rice ..mix well .. 


Switch off and add lime juice n garnish with Chopped coriander leaves.



Serve with Raitha .

Jolada Rotti


Jolada Rotti 
  • Jowar flour- 2 cups
  • Water- 1 cup
  • Salt to taste
Method 
Boil water ... 
In a deep  kadai or vessel , add the  Jowar flour, salt n make a dip between the flour n add the boiled water . Mix  well n see to it that no lumps is formed .( in case its  hot to touch ,then  dip  hands in normal water n knead it )
Prepare small round dough balls n dust the flat surface with some dry flour , this will aid in preventing dough sticking to the base.

Press/beat the dough ball with the palm n make it into a round shaped rotti .

Once the rotti is huge enough n  done ,then carefully place it on a heated  tawa and press  the surface with wet cloth.

Roast  for about 2-3 min on each sides till  light golden brown on both sides.
    Serve the rottis with Badanekai Yennegai/Shenga chutney
    Note: You can even use rolling pin to bail out the rottis

  • Cows peas (Alsande b ) - 1/2 cup 
  • Mangalore yellow Cucumber -1/2 
  • Green chilles -2 or according to the taste 
  • Jaggery -a small piece 
  • Tamarind -marble size 
  • Huli Powder- 3 tsp 
  • Salt to taste 
Seasoning 
  • Oil-2 tsp
  • Mustard seeds- 1 tsp
  • Curry leaves-1 sprig 

Method 
Cook yellow cucumber , cow peas n slit green chillies till soft . Add jaggery piece n salt to taste . Extract tamarind juice n mix in huli powder ..add this to the cooked stuffs . Bring it to a boil ... n then give the seasoning.

  • Tamarind -lemon size 
  • Red chilly powder- 2 tsp 
  • Coriander seeds - 1/4 th  tsp 
  • Coriander leaves- 3 tsp 
  • Garlic flakes - 3 
  • Coriander powder-1/2 tsp
  • Cumin powder - 1/2 tsp 
  • Cumin seeds - 1/2 tsp
  • Oil - 4 tsp 
  • Salt to taste 
Method
Nicely pound tamarind, garlic , coriander seeds, coriander leaves, red chilly powder, garlic flakes n salt ...

In a pan add oil, cumin seeds ,  once it stops spluttering add the powders n then the pound paste n fry well ..

  • Broken wheat -1 cup
  • water-2 1/2 cups
  • Green peas-1/4 th cup
  • Chopped carrots -1/4 th cup
  •  Beans -1/4 th cup 
  • Tomato-1chopped 
  • Ginger grated ...1/4 th tsp 
  • Turmeric powder-1/4 th  tsp
  • Garam masala powder- 1/2 tsp 
  • Cumin seeds-1/4 th tsp
  • Cloves-3
  • Cinnamon -1 inch piece
  • Green Chillies - 2 slit 
  • Dry Kasuri Methi - 1/2 tsp
  • Coriander leaves-3 tsp
  • Mint leaves -3 tsp
  • Oil/ ghee - 2 tbsp
  • Salt to taste 
Method 
Wash the broken wheat ... 

Heat oil /ghee in a pressure cooker add cumin seeds , once it splutters add cinnamon, cloves, green chillies n fry for a few minutes , then add grated ginger, fry for a minute . Add tomato n cook till the raw smell goes n it turns mushy , add all the powders , Add in the vegetables , washed broken wheat n fry for few mts . add  water n salt ,chopped mint , coriander leaves , kasuri methi n mix well n cook for 2 whistle ...

  • Tamarind -lemon size 
  • Red chilly powder- 2 tsp 
  • Coriander seeds - 1/4 th  tsp 
  • Coriander leaves- 3 tsp 
  • Garlic flakes - 3 
  • Coriander powder-1/2 tsp
  • Cumin powder - 1/2 tsp 
  • Cumin seeds - 1/2 tsp
  • Oil - 4 tsp 
  • Salt to taste 
Method

Phova lemon baath !

Phova lemon baath ! 
  •  Ghatti Avalakki./Thick Phova ( beaten rice ) -2 cups
  • Oil - 3 tsp
  • Mustard seeds-1 tsp
  • Groundnuts- 3 tsp
  •  Curry leaves,-1 sprig 
  • Chana Dhal- 1 tsp
  • Green chilles-2 or according to the taste
  • Turmeric powder-1/4 th tsp
  • Salt to taste  
 
Garnishing 
Coriander leaves- 2 tsp
Lemon juice -2 tsp 

Method 
Wash Thick phova  and soak it in water till the phova level ( dont add more water ) n keep aside for an hour.

After an hour add  salt to taste.

In a kadai add oil  , splutter mustard seeds ,  Chana dhal , ground nuts , chopped green chillies , curry leaves  n fry for a while n then add turmeric powder . Add the soaked phova n  mix well. close the kadai n cook on low flame .. stir in between .
 
Switch off and add in chopped coriander leaves n lemon juice .

Serve Hot !


Soya Chunks Dry Masala

Soya Chunks Dry Masala .
  • Soya chunks – 1 cup
  • Onion – 2
  • Tomato –2 
  • Ginger –Garlic Paste – 1 tbsp
  • Green Chilly – 2
  •  Red chilly powder- 2 tsp
  • Turmeric powder – 1tsp
  • Coriander powder –1 tsp
  • Garam Masala -1/4 th tsp
  • Cumin seeds –1/4 tsp
  • Cloves – 2
  • Bay leaf –1
  • Cinnamon stick – 1/2” piece
  • Cardamom – 2
  • Cashew nuts - 5
  • Oil- 3 tsp
  • salt to taste 
Garnishing
Coriander leaves

Pressure cook soya chunks for 1 whistle .. drain the water , add cold water n then  squeeze them . Keep aside .
.
Heat oil in a pan. Add cumin seeds,cloves,bay leaf,cardamom ,cashew nuts and cinnamon n a fry for a minute .Then add chopped onions,n fry till golden brown , add ginger-garlic paste  saute for a minute .
Add  green chilly, tomatoes n cook till the raw smell goes then add all the powders and salt  .
Mix well and once the oil starts to leave the pan,add soy chunks and Stir well.
Add 1/2 cup of water to it.Cover and cook for 5 minutes .

Garnish with chopped coriander leaves.

Apple Rabdi

Apple Rabdi 
  • Apples -2 
  • Full fat Milk - 1 litre 
  • Jaggery grated - 4 tsp 
  • Cardamom powder-1 tsp 
  • Blanched Almonds slice-6 
  • Blanched Cashew nuts -4
  • Saffron strands- a few strands ( Soak in little warm milk for about 10 mts )  

Method 
Grate apples.

Boil Milk stirring continuously till it reduces . Add the grated apples n boil for about 2 to 4 mts  . Add grated jaggery n let it melt . switch off and add cardamon powder, blanched almonds ,cashewnuts n saffron strands .

Best served when chilled ;)

Grated coconut - 4 tbsp 
Sugar- 3 tsp
Bournvita powder- 1 cup 
Marie biscuit - 6 

Method 
Crush marie biscuit properly with hands ... 

In a bowl add crushed marie bicuits , Bournvita powder, Sugar n grated coconut .. mix well n then form into round small balls  n refrigerate it for 1/2 an hour .

Method
Crush Garlic flakes n green chilly . 

In a kadai add oil , cumin seeds ,hing n fry for a minute. Then add finely chopped onions n fry till reddish brown , then add crushed green chillies, garlic n fry till the raw smell goes ..add in tomatoes n cook till the raw smell goes n it becomes mushy . Add Red chilly  powder , turmeric powder n salt ...

Pav Bhaji

Pav Bhaji 
  • Pav - 8 
  •  Un-salted Butter - 3 tsp 

For Bhaji 
  •  Potatoes - 3
  • Capsicum - 1
  • Carrots -2
  • Green Peas - 1cup
  • Tomatoes - 2 
  • Onions - 2
  • Ginger Garlic paste - 1 tsp
  •  Pav bhaji masala -2 tsp
  • Garam Masala - 1 tsp
  • Turmeric Powder - 1/4 tsp
  • Red Chilly Powder - 11/2 tsp
  • water-11/2 cup
  • Salt to taste
  • Oil - 2 tbsps 
Garnishing 
  • Chopped onions -4 tsp
  • Lime  -1/2 
  • Coriander leaves-3 tsp 
  • Un salted butter - 3 tsp  

Method
Pressure cook the potatoes , cool , peel n mash well .

chop n pressure cook the vegetables . 
 
Heat oil in a heavy bottomed pan. Add the chopped onions n fry till pink , add ginger garlic paste n fry for a minute n then add tomatoes n cook till the raw smell goes n it becomes mushy . Add turmeric,  garam masala ,red chilly powders n mashed potatoes n the cooked veggies n mash it completely . Add salt n water n Cook on low flame . Then add pav bhaji masala n mix well .  
 
Heat a Tawa , place some butter and roast the pav on both sides 
 
Serve this pav hot with bhaji garnished with chopped onion, coriander leaves,lemon piece and a blob of butter.
 

Bitter gourd Gunu ( Bitter gourd in coconut milk gravy )


Bitter gourd Gunu ( Bitter gourd in coconut milk gravy )
  • Bitter gourd-2 medium
  • Potato-1 medium
  • Bimbul/bilimbis-2 or 3
  • Green chillies- 3 or according to the taste
  • Grated coconut-1 cup
  • Hing/asafoetida water - 1 tsp 
  • Salt to taste
Seasoning
  • oil-1 tsp
  • Mustard seeds-1/2 tsp
  • curry leaves-1 sprig 
Method 
Chop Bitter gourd , potato, bilmbul n green chillies.....lengthwise

Grind the coconut gratings n extract thick n thin coconut milk ... keep both aside .

Boil the vegetables in thin coconut milk till they are cooked ... add the thick coconut milk n give a quick boil n then do the seasoning n add hing water n salt .. mix well . 

Note : If bimbul is not available then either Sour hog pulms or thick tamarind paste can be used .

Ragi Duddali

Ragi Duddali
  • Whole Ragi - 3 cups 
  • Jaggery - 1 huge ball 
  • Ghee- 2 tsp 
  • Powdered cardamom - 1 tsp 

Method 
Soak whole ragi in water for 2 to 3 hours . 

Grind it finely . 

Strain the ground mixture through a cotton cloth n collect the extract in a vessel , repeat the process 2 or 3 times ... adding water to the residue left in cloth . 

Pour the extract from vessel  to a deep bottomed kadai ..add the jaggery n cook on medium flame ..stirring constantly ... cook well till it thickens . Switch off and then add cardamom powder n mix well n then pour  this to a ghee smeared thali ... when cool ,cut into desired shape .
