White Rice, Dhal Rasam, Matti gulla Masinga Sanga n Bimbul Talasani , Nendrabale kela /Kerala Banana Tawa Rawa Roast ,Ambuli Nonche, Matti gulla n Bimbul Bajji, Salla ( Brined Raw Jackfruit sanna polo n Pathrado

White Rice, Dhal Rasam, Matti gulla Masinga Sanga n Bimbul Talasani , Nendrabale kela /Kerala Banana Tawa Rawa Roast ,Ambuli Nonche,  Matti gulla n Bimbul Bajji, Salla ( Brined Raw Jackfruit sanna polo n  Pathrado

Dhal Rasam 

  • Thur Dhal ..1/2 cup 
  • Tomatoes ...3 fully ripened 
  •   Tamarind ...Goose Berry size 
  • Rasam Powder..2 tsp 
  • Salt to tatse 

Seasoning 

  • Oil 2 tsp
  •  Garlic Flakes ...6 

Garnishing

  •  Coriander leaves ...2 tsp chopped . 
Method
 Wash thur dhal .. 

Chop Tomatoes roughly 

Pressure cook thur dhal n chopped tomatoes .. Cool n churn it well . 

Soak Tamarind in little water for 10 mts , squeeze it well . Add rasam powder to it n mix well . add this to the cooked ingredients , water for consistency ,salt n boil well . Give the seasoning n then garnish 



Matti Gulla Talasani with Bimbul  ( Seasonal Brinjal stir fry with Bilimbi  )


  • Matti Gulla/Seasonal round brinjal ... 2
  • Drumstick ..2
  • Bimbul /Bilimbi .. 2 
  • Salt to taste


Seasoing

  • Oil.. 2 tsp
  • Mustard seeds.. 1 tsp
  • Dry red chilles ... 4


Method
Wash n chop the matti gulla into 2 inch pieces .

Wash , chop the drumstick to 2 inch pieces n remove the fibre .

Wash n chop the bimbul length wise .

In a kadai add oil, splutter mustard seeds, add torn dry red chilles, chopped matti gulla, chopped drumstick , bimbul , little water , salt n cook till done 



Nendrabale banana (Kerala Banana ) Tawa Rawa fries ! 
  • Kerala Banana- 2 
  • Red chilly powder- 2 tsp
  • Hing /asafoetida- 1/4 th tsp 
  • Rice flour - 4 tsp
  • Rawa/Semolina ..1 tblsp 
  • Salt to taste 
  • Oil as required to shallow fry 

Method
Wash  remove the skin n Slice the kerala banana lengthwise .

In a bowl ,add chilly powder,  hing, Rice flour , salt n  then add  sliced kerala banana ... n mix well ... keep for about  10 mts( sprinkle water only if needed ) 

Run the marinated sliced  banana with rawa  .

Heat a dosa tawa , add a tsp or 2  of oil n then place the rawa coated sliced banana side by side n shallow fry on both sides till done . 



Gulla Bhajji ( Roasted Brinjal Gojju With Bimbul/Bilimbi ) 


  •  Gulla / Seasonal Round Brinjal ( Mattu Gulla )  ..if not any other round variety .. 3
  • Bimbul/Bilimbi..3 or 4 
  • Green Chilly ...4 ,chopped 
  • Salt to taste

Season


  • Coconut oil ..1 tsp
  •  Mustard seeds ..1/2 tsp
  • Curry leaves..1 sprig

Garnish


  • Chopped coriander leaves..2 tsp
  • Hing water ..1 tsp ( i use solid hing .so soak it in little water for sometime n dissolve well )


Method
Wash the Round Brinjal's and wipe them , apply oil n directly  roast them over the flame,turning around till it shrinks ... Cool n remove the skin ... Mash them well n Keep aside .

Wash n cook bilimbi in little  water till soft .Cool it . mash it well .


In a bowl, add chopped green chilies , mashed brinjal's , mashed bilimbi's , salt n mix well with hands . Add the seasoning n then garnish ..Mix well again .



Salla Sanna Polo/Brined jackfruit Spicy Dosa

  •  Saala/ brined jackfruit segments-10 to 12 ,  chopped ( keep 2 tblsp of chopped salla to add to the ground  batter ) 
  • Raw Rice -1/2  cup 
  •  Grated coconut-3/4 th cup 
  • Red chillies- 6 to 8 
  • Hing/Asafoetida -1 pinch 
  • Tamarind - Tamarind seed size 
  • Salt adjust as raw jackfruit segments is already brined . 


Method 
Soak rice in water about 3  hrs ..

Soak salla/Brined raw jack fruit segments in enough water for about 2 hours n rinse it well ..couple of times . n squeeze well . 

Grind grated coconut , dry red chilly, tamarind n chopped salla to a semi coarse batter ,,Add the soaked rice n grind again n make sure with little water n the batter need to be semi coarse .

Remove the ground batter add salt n the remaing chopped salla  
Heat a dosa tawa, smear little oil , take a fist full batter , place it on the heated tawa n pat with hands , dipping fingers in water , to a round shape , cover n cook on both sides ..adding oil at the edges 

Pathrado 
  • Raw Rice- 1 cup
  • Thur dhal-1/2 fist 
  • Grated Coconut -2 cup's
  • Hing/Asafoetida-pea  piece 
  • Tamarind -Marble size 
  • Roasted dry red chilly -8 to 10  or according to the spice 
  • Salt a required 
  • Pathrade paan /colocasia leaves -14 /18 tender ones ..
Method 
Soak rice n thur dhal for 2 hours .  

Grind grated coconut, roasted dry chillies,hing n tamarind to a fine paste ... then add soaked rice n thur dhal n grind to a coarse paste (  without adding water . Can sprinkle water if required ! take the batter and add salt ! 

Remove fibre from the leaves n wash thoroughly .

Place a huge leaf on the wooden board with back surface up and stalk end towards you . smear ground masala all over ,place smaller leaf over it and repeat the procedure for 4 to 5 leaves ,and fold and roll them ,smear the fold with paste ,d shape of a cylinder .. n steam it for 20 mts . 

cool n cut into slices of desired thickness .

Ukde Seeth , Thaikila Khadi n Tawa Rawa Shallow fried North Kanara- Karwar Amchi style Pathrado

Ukde Seeth , Thaikila Khadi   n Tawa Rawa Shallow fried North Kanara- Karwar Amchi style Pathrado  

.Thaikela khadi 
  • Thaikelo - 1 bunch 
  • Ghee - 1 tsp 
  • Cumin seeds- 1/4 th tsp
  • Pepper corns- 1/4 th tsp 
  • Dry red chilly - 2 
  • Grated coconut - 1/2 cup 
  • Tamarind-Tamarind seed size 
  • Salt to taste 


Seasoning 
  • Ghee- 1 tsp
  • Crushed garlic flakes- 5 


Method
Wash the thaikela leaves well n  dry them for sometime on a tissue paper . 

In 1 tsp ghee , roast cumin n pepper corns, dry red chillies . Then add the washed thaikelo leaves n fry well , add  grated coconut n fry for a minute or two . cool n grind it  along with tamarind to a smooth paste . 

Remove it add salt , water n boil .Then season . 

Note : The consistency should not be too watery or too thick . 


 Tawa Rawa Shallow fried North Kanara- Karwar Amchi style Pathrado  
  • Tender Colocassia /Pathrade leaves 10
  • Semolina /fine rawa  1/2 cup
  • Oil as required to shallow fry .


To soak n grind to a coarse paste 
  • Thur dhal 1 full fist
  • Raw Rice 1 tblsp heaped
  • Grated coconut  1 cup
  • Coriander seeds 1 tsp
  • Urid dhal 1/2 tsp
  • Roasted dry red chilles 12 or according to the spice
  • Tamarind  Marble size
  • Hing/Asafoetida  generous pinch
  • Jaggery  a small piece
  • Salt to taste

Method
Wash the colocassia leaves well . Remove the fibre n pat dry .

Soak thur dhal n rice for about 2 hours .

In little oil, roast coriander seeds n Urid dhal separately n  cool it .

Grind roasted dry red chillies , grated coconut, hing, jaggery, tamarind to a fine paste ..then add the roasted coriander seeds, roasted urid dhal,  thur dhal n rice n then grind to a coarse paste . Remove it n add salt .Mix well .

cool well n cut into thin slices  . Roll them over semolina . 

Heat a tawa , add in little oil , n place the semolina rolled pathrade n shallow fry till crisp on both sides . 

Happolu /Spicy Pappad Roasted n Smeared with Coconut Oil

  • Happolu/Spicy Pappad ..6 
  • Coconut Oil ...2 tsp 


Method 
Roast the spicy pappad on gas flame .. allow it to cool n just before serving apply little oil on both sides . 

Navil kosu Upkari /Knol Khol stir fry

Navil kosu Upkari /Knol Khol stir fry 
  • Tender Navil Kosu/Knol Khol - 3 
  • Onion -1 huge 
  • Oil - 2 tsp
  • Mustard seeds- 1/2 tsp
  • Hing/Asafoetida -2 pinch 
  • Dry red chilly -3 or 4 broken 
  • Salt to taste 
  • Grated coconut - 1 tblsp 


Method 
Wash the navil kosu n roughly scrap it n chop into 2 inch cubical 

Chop onion 

In a kadai add oil n splutter mustard seeds , add hing n stir for a second n then add the chopped onion n fry till transparent , Add the broken dry red chillies n stir for few seconds . Add the chopped cubicles , water n cook till soft but not mushy .Add grated coconut n mix well . 

Kultha /Horse gram Ramdonu Steamed in Plantain leaf with Hing Chutney n Coconut Oil

    • Urid Dhal-1 cup 
    • Idly Rawa/Rice Semolina -2 Cup's 
    • Kulithu /Horse Gram -1 cup 
    • Salt to taste 
    • Banana Leaf -2 ( cut into square pieces 

  • Method  
    Soak urid dhal for 3 hours n then grind it to a fine paste .. remove the ground batter ,add the idly rawa , salt n ferment overnight . mix the batter with hands Wash n soak kulith/Horsegram overnight n 
    next day morning grind it to a paste n add it to the above fermented batter n mix well .  if time constraint to grind it then grind the previous night and make sure to refrigerate it as horsegram ground batter should not ferment . 
     Place the cut banana leaves in a deep plate n pour the batter till 3/4 th n steam for 20 mts . 
    Hing Chutney 
    • Hing-  Pea size  
    • Dry Red chillies- 3
    • Tamarind -tamarind seed size 
    • Grated coconut-1 cup
    •  oil ..1 tsp  
    • salt to taste
    seasoning
    • Oil-1 tsp
    • Mustard seeds-1/2 tsp
    •  Curry leaves -1 sprig  
    Method  
     In 1 tsp  oil fry red chillies n hing .cool it n grind along with grated coconut n tamarind to a semi coarse paste n then season it. 
    Serve kultha Ramdonu drizzled with coconut oil n hing chutney . 

Varahi /Barnyard Millet Pulov with Ground Green Masala with Tomato Onion Raitha .

Varahi /Barnyard Millet  Pulov with Ground Green Masala with Tomato Onion Raitha . 
  • Varahi /Barnyard Millet -1 cup 
  • Water-1-3/4 th cups
  • Onion-2 medium 
  • Whole green cardamon -2 
  • Broken cashew nuts - a few 
  • Cloves - 3 
  • Cinnamon stick -1/2 inch piece  
  • Green peas-1/2 cup
  • Beans -10
  • Carrot-1 
  • Ghee-4 tsp

To grind to a fine paste . 
  • Onion -1 medium
  • Tomatoes -2 medium 
  • Garlic-6 flakes
  •  Cinnamon-1 inch stick
  • Cloves-4 
  • Ginger..1/2 inch piece 
  • Coriander leaves-one fist
  • Mint leaves- one fist 
  • Green chillies -4 or according to the taste 
  • Salt to taste 

Method 

Dry roast barnyard  millet on sim flame till warm.. cool n then wash it .

chop the vegetables .


Grind chopped onion , tomatoes, garlic flakes , ginger ,cinnamon, cloves, green chillies ,coriander leaves,mint leaves ,  to a fine paste without adding water 

In a pressure cooker  add ghee , whole cardamom, 
cashew nuts, cloves n Cinnamon stick n roast it for few seconds .. then add chopped  onion n fry till transparent , add the ground paste n fry till the raw smell goes , add the dry roasted barnyard  millet n roast for few seconds then  add the chopped vegetable along with green peas  , add in water , salt n mix well n cook for 2 whistle .


Serve with Raitha .

 
Note :for extra flavour, cloves n Cinnamon can be added along with onions while frying

Kukka Upkari ( Chinese Potato stir fry ) n Drumstick Deep Fries

Kukka Upkari ( Chinese Potato stir fry ) 
  • Kukka/ Chinese Potato.. 1/4 th kg 
  • Dry red chillies- 6 or according to the spice 
  • Oil-2 tsp
  • Mustard seeds-1/2 tsp
  • Grated coconut- 1/4 th cup ( finely grated ) 
  • Water as needed to cook 
  • Salt to taste 
Method
Wash the Chinese potatoes well , n remove the mud on it ... Put it in a shack cloth n beat it well . This helps in easy removal of the skin . Put them in water n scrap the extra skin with a knife or backside of the spoon . 

Chop them into longish  pieces.
In a kadai add oil n splutter mustard seeds , add torn dry red chillies, add chopped chinese potato pieces along with little water n salt .Cover n cook well till done .Add grated coconut , stir well .  

Drumstick Deep Fries
  • Drumsticks-3 
  • Chilly powder-2 tsp
  • Rice flour-1 tblsp 
  • Turmeric powder-1/4 tsp
  • Hing -a pinch 
  • Salt to taste
  • Oil for deep frying 
Method 
wash the drumsticks n cut crosswise into 2 -1/2 inch long pieces..remove the fibre roughly .

In a bowl add chilly powder,turmeric powder, hing  n salt ,  add the cut drumsticks.. sprinkle little water .. mix properly ..roll over rice flour n deep fry a few at a time in heated oil .

White Rice ,Batani Ambat, Raw Banana Tawa Roast n Beans Batate Upkari / Beans n Potato Stir fry

White Rice ,Batani Ambat,  Raw  Banana  Tawa  Roast n Beans Batate Upkari / Beans n Potato Stir fry 

Batani Ambat ( Green peas cooked  in coconut based gravy ) 
  • Fresh Green Peas - 2 cup 's
  • Potato- 2 medium   
  • Onion - 1 medium, roughly chopped  
To grind
  • Grated Coconut- 2 cups
  • Roasted red dry chillies- 4 to 6
  • Tamarind- Tamarind seed size 
  • Salt to taste 

Seasoning

  • Oil - 2tsp
  • Chopped onion - 1 medium 

Method 
Peel potatoes n chop into 2 inch pieces .

Pressure cook  freesh green peas , chopped potatoes along with chopped onion for 1 whistle .
 

Grind grated coconut, roasted chillies, tamarind to a fine paste . 
Add the ground paste , salt to the cooked stuffs , boil it n then do the seasoning .


Raw  Banana  Tawa  Roast . 
  • Raw Banana- 2 
  • Red chilly powder- 2 tsp
  • Hing /asafoetida- 1/4 th tsp 
  • Rice flour - 1 tblsp 
  • Salt to taste 
  • Oil as required to shallow fry 

Method
Wash  remove the skin of raw banana roughly n Slice them   lengthwise .

In a bowl ,add chilly powder,  hing ,  salt n  then add  sliced raw  banana ... n mix well ... keep for about  10 mts( sprinkle water only if needed ) 

Run the marinated sliced  banana with rice flour .   .

Heat a dosa tawa , add a tsp or 2  of oil n then place the rice flour  coated sliced raw banana side by side n shallow fry on both sides till done . 


Beans Batate Upkari / Beans n Potato Stir fry 
  • Tender French Beans- 1/4 th kg 
  • Potato-2 
  • Oil- 2 tsp
  • Mustard seeds-1/2 tsp
  • Dry red chillies- 3 or 4 or according to the taste .
  • Grated coconut- 3 tsp 
  • Salt to taste 


Method 
Wash Beans n Potato .

Chop Beans , peel the potato n then chop it into small cubes.

In a kadai add oil, splutter mustard seeds n add torn dry red chillies , add the chopped vegetable n then water along with salt . Cover n cook till done ..Add grated coconut , mix well .

Raw Banana Tawa Roast .

  • Raw Banana- 2 
  • Red chilly powder- 2 tsp
  • Hing /asafoetida- 1/4 th tsp 
  • Rice flour - 1 tblsp 
  • Salt to taste 
  • Oil as required to shallow fry 

Method
