Ukde Seeth, Cabbage Dhal , Tendle Talasani . Ivy gourd sauteed in garlic ,Bimbla Gojju /Bilimbi fruit Gojju ,Capsium Bajo /Besan Fries n Lime Pickle .

Ukde Seeth, Cabbage Dhal , Tendle Talasani . Ivy gourd sauteed in garlic ,Bimbla  Gojju /Bilimbi fruit Gojju ,Capsium Bajo /Besan Fries  n Lime Pickle . 

Cabbage Dhal 
  • Thur Dhal-1 cup 
  • Cabbage Shredded -1/4 th cup
  • Tomatoes-2 medium 
  • Turmeric powder-1/4 th tsp 
  • Salt to taste  

For seasoning

  • Ghee - 2 tsp 
  • Green chillies-2 or according to the taste 
  • Crushed Garlic flakes-3 
  • cumin seeds-1/2 tsp
  • Mustard seeds-1/2 tsp
  • Curry leaves-1 sprig
  • Red chilly powder-1/2 tsp 

Chopped Coriander leaves-1 tsp 

Pressure cook Thur dhal, cabbage shredded , tomatoes n turmeric powder. churn it for a second ,then add salt , water as required and bring it to boil ..

In a kadai add ghee, cumin seeds, mustard seeds ..once it stops spluttering add slit green chillies, crushed garlic n fry for few mts ... add curry leaves n then red chilly powder n add this seasoning to the cooked dhal .

Garnish with coriander leaves .

Tendle Talasani . Ivy gourd sauteed in garlic .
  • Ivy Gourd -1/2 kg
  • Garlic flakes-10 or 12  
  • Oil - 1 tblsp 
  • Dry red chillies-4 
  • water- Little
  • Salt to taste

wash n cut d end points of Ivy gourd n crush them lightly ..apply salt n keep it aside for 10 mts ..

In a kadai add oil, crushed garlic flakes  ,when it turns golden brown add dry chilly flakes n fry for sometime .. now squeeze d ivy gourd n roast it .. sprinkle water n cook it covered , on low flame ! saute in between , n cook till the veggies turn light brown .

Bimbla  Gojju /Bilimbi fruit Gojju
  • Ripened bimbul -5 to 6
  • Dry Red chilly -1 or 2 according to the taste
  • Hing -a pinch
  • oil-1 tsp

Boil Bimbul's in little water till soft , keep aside n cool it .
In oil, roast red chilly n hing 
Now add the roasted chilly , hing ,salt to the boiled bimbul 's n squeeze well .
Tangy Gojju is done .

Capsium Bajo /Besan Fries  
  • Capsicum ..2 

To make a semi solid batter
  • Besan /Gram flour- 1/4 th  cup
  • Hing/Asafoetida..2 huge pinch
  • Chilly Powder - 1/2 tsp 
  • Water as needed to prepare the batter
  • Salt to taste 
  • Oil as required to deep fry 

Wash n Slice the capsicum to desired shape ..

Prepare a batter using besan, hing,chilly powder , salt n water to a medium consistency .

Heat oil in a deep kadai , dip the  sliced capsicum  in the batter few at a time n deep fry till crisp . 

Unsweetened Spicy n Sweet Cucumber Idly adding Wheat Rawa/Semolina

 Unsweetened Spicy n Sweet  Cucumber Idly adding Wheat Rawa/Semolina 

Unsweetened Spicy  Cucumber Idly 
  • Tender fresh Cucumber - 1
  • Bansi Rawa /Wheat Semolina  -1/2 cup 
  • Grated coconut-3/4 th cup  
  • Green chillies - 2 or according to the taste
  • Ginger - 1 small piece 
  • Salt to taste

Wash n skin cucumber n grate it . 

Wash  wheat semolina/Bansi Rawa   

Mince green chillies n ginger n grind grated coconut .. 

In a bowl add semolina  , salt, grated cucumber , minced chillies , ginger , ground coconut n mix the  batter well ..set aside  for about 10 mts . 

Sweetened Cucumber Idly 
  • Tender Cucumber -1
  • Bansi Rawa / Wheat Semolina  - 1/2 cup 
  • Coconut - 3/4 th  cup
    Jaggery - Lemon sized , increase or decrease as per sweetness .  
  •  Cardamom powder 1/4 th tsp 
  •  Salt to taste


Wash n skin cucumber n grate it

Wash  wheat semolina/Bansi Rawa   

Grind grated coconut n jaggery . 

In a bowl add semolina  , grated cucumber , ground coconut jaggery mix ,salt n cardamom powder , mix  the  batter well ..set aside  for about 10 mts 

Grease an idly mould ..pour the  batter and steam for 20 mts . 

Serve Unsweetened  with chutney n Sweetened with butter /Ghee .

Thirthalli Dosa

Thirthalli Dosa
  • Dosa Rice -2 cup's
  • Urid Dhal - 2 fist
  • Chana Dhal - 1 fist
  • Thick Phova /Beaten Rice -1 fist
  • Methi /Fenugreek Seeds - 1 tsp
  • Rice Flour - 1 fist
  • Sugar - 1tsp
  • Salt to taste

Wash dosa rice, urid dhal, chana dhal. thick phova , methi seeds n soak altogether for about 4 to 6 hours and grind to a very fine paste . ( i ground in a grinder ) .

Remove the batter and add rice flour n mix well so that no  lump's is formed .

Add salt n ferment overnight .

Next day add a tsp or 2 of sugar  to the batter n mix again .

Heat a dosa tawa , pour a ladle full of batter n spread , add oil at the edges n roast on both sides .

Serve hot with chutney . 

Note : Tasted this Dosa in Malnad in a place  called Thirthalli at a GSB Hotel n hence the name of the dosa :)

Terrace Grown Methi Dhal
  • Fresh Methi /Fenugreek Leaves -1 cup heaped 
  • Thur Dhal - 3/4 th cup 
  • Turmeric powder -1/4 th tsp 
  • Salt to taste 

  • Oil - 2 tsp 
  • Mustard seeds -1/2 tsp
  • Cumin seeds-1/2 tsp 
  • Curry leaves-1 sprig 
  • Onion finely chopped  -1 Medium  
  • Tomato, finely chopped -1 
  • Green chilly -3 or according to the spice , slit length wise 
  •  Dry red chilly - 2 , torn 
  • Garlic Flakes, slightly crushed -5 
  • Grated Ginger-1 tsp 
Wash the thur dhal n pressure cook it adding turmeric powder , then add the methi leaves n pressure cook just for a whistle . Cool n churn it .

In a kadai add oil n splutter mustard seeds ,then  add the cumin seeds n let it sweat , add curry leaves n  slightly crushed garlic flakes n roast till reddish brown , add torn dry red chilly, slit green chilly, grated ginger n fry for few minutes .  Add chopped onion n fry till reddish brown ..Add chopped tomato n cook till mushy . Add salt . Cooked dhal n methi leaves . Add water as per consistency n boil for a while .

Egg Methi Masala

Egg Methi Masala 
  • Hard Boiled Eggs - 4 
  • Methi/Fenugreek leaves - 1 cup packed 
  • Oil - 2 tsp 
  • Onion - 1 chopped 
  • Tomato -1 chopped 
  • Grated coconut - 1/4 th cup 
  • Roasted Dry red chilly - 4 . i used Kashmiri /Byadagi chilly 
  • Tamarind - Tamarind seed size 
  • Cashew nut's - 5 to 8 
  • Peeled Garlic Flakes - 4 
  • Ginger - 1/2 inch piece 
  • Turmeric powder -1/4 th tsp 
  • Chicken or egg masala powder- 1 tsp 
  • Salt to taste . 

Peel the boiled eggs n keep aside 

Grind Grated coconut, Roasted dry red chilly , Tamarind , Cashew nuts , ginger n garlic flakes  to a fine paste 

In a kadai add oil n add chopped onion n fry till reddish brown , add methi leaves n stir fry well till it wilts . Add chopped tomatoes n cook till mushy n raw smell goes . Add the ground masala n fry well for few mts . Add salt , chicken or egg masala powder n turmeric powder , stir for a few seconds . Add water for consistency , add boiled eggs n boil for few mts .

Terrace Grown Brinjal Huli

Terrace Grown Brinjal Huli 
  • Brinjal's - Any variety - 6  or  depending upon the size n variety of brinjal's ( i used purple small round n Green small round )
  • Tamarind - lemon sized
  • Jaggery piece- lemon sized
  • Salt to taste

To roast n grind
  • Oil - 3 tsp
  • Coriander seeds - 2 tsp 
  • Urad dhal - 1 tsp
  • Chana dhal - 1 tsp 
  • Mustard seeds - 1/2 tsp 
  • Dry  red chilly - 4  or as per spice 
  • Methi seeds - 1/4 th tsp 
  • Grated coconut - 1 tblsp 

  •  Ghee-2 tsp
  • Mustard seeds -1/2 tsp
  • Hing/Asafoetida -2 Pinch
  • Curry leaves -1 sprig 


Wash n chop  the brinjals to a little bigger chunks . 
In a vessel add little water , chopped brinjal pieces, jaggery piece , tamarind n cook till soft n not mushy . 

In a pan add oil n roast all the ingredients meant to roast , cool it n grind to a fine paste ,

Add the ground paste to the cooked brinjal's n boil well adding water  for consistency n salt . Then do the seasoning 

Note :The consistency should be medium . 

Serve hot with Rice /Rottis .

  • Left Over Rice - 2 cup's or else can use fresh Cooked Rice
  • Tomatoes -  4 to 6 depending upon  the size of the tomatoes .fully ripened n juicy .
  • Mint leaves . a fistful
  • Green Chilly -2
  • Ghee + Oil - 2 tsp can add a  little more 
  • Cloves - 3
  • Cinnamon -1/2  inch stick
  • Green Whole Cardamom - 2
  •  Cashew nuts   slit -6 to 8
  • Garlic Cloves - 4
  • Onion -1
  • Red Chilly Powder-1/2 tsp
  • Coriander Powder - 1 tsp
  • Turmeric Powder-1/4 th  tsp
  • Salt to taste

Chop onion , tomatoes n green chilly .

Tear mint leaves with hands

Crush garlic flakes with skin

In a kadai add ghee + oil n add cloves, Cinnamon stick, whole green cardamom , cashew nuts n stir for few mts till you get a nice aroma, Add crushed garlic n saute again till brown , Add chopped onion n fry till transparent .,Add chopped green chilly n stir for few seconds . Add chopped tomatoes along with salt n cook till  mushy n the raw smell goes.  Add all the powders n stir for few seconds . Add hand crushed mint leaves n stir for a second . Then add the cooked rice n mix well ..till all the masala coats well .

Salla Sanna Polo/Brined Raw jackfruit Spicy Dosa

  •  Saala/ brined jackfruit segments-10 to 12 ,  chopped ( keep 2 tblsp of chopped salla to add to the ground  batter ) 
  • Raw Rice -1/2  cup 
  •  Grated coconut-3/4 th cup 
  • Red chillies- 6 to 8 
  • Hing/Asafoetida -2  pinch 
  • Tamarind - Tamarind seed size 
  • Salt adjust as raw jackfruit segments is already brined . 

Soak rice in water about 3  hrs ..

Soak salla/Brined raw jack fruit segments in enough water for about 2 hours n rinse it well ..couple of times  n squeeze well . 

Grind grated coconut , dry red chilly, tamarind n chopped salla to a semi coarse batter ,,Add the soaked rice n grind again n make sure with little water n the batter need to be semi coarse .

Remove the ground batter add salt n the remaining  chopped salla 

Heat a dosa tawa, smear little oil , take a fist full batter , place it on the heated tawa n pat with hands , dipping fingers in water , to a round shape , cover n cook on both sides ..adding oil at the edges

Batate Badane Palya /Potato Brinjal Masala
  • Potato -1 Medium
  • Brinjal -2 ( i used Mysuru Badane/Green Long variety )
  • Onion -1
  • Oil - 2 tsp
  • Mustard seeds - 1/2 tsp
  • Urid Dhal - 1 tsp
  • Chana Dhal -1 tsp
  • Hing/Asafoetida-2 pinch
  • Curry Leaves -1 sprig
  • Tamarind - Marble size
  • Chilly Powder- 1 tsp
  • Turmeric Powder-1/4 th tsp
  • Coriander  Powder-1 tsp
  • Salt to taste

Wash Potato , peel n chop into 2 inch cubicles

Wash brinjal's n chop into 2 inch pieces

Chop Onion

Soak tamarind in little water for about 20 mts n then extract the thick juice .

In a kadai add oil n splutter mustard seeds, add urid dhal, chana dhal n stir for few seconds . Add hing n curry leaves n stir again , now add all the powder's n stir for few seconds . Add Tamarind extract along with salt n then add chopped potato n cook till potato is 90 % cooked n soft .Add The chopped brinjal pieces n add a little water if needed n cook till done .

Alle Piyava kolu  ( Ginger n onion cooked in coconut based thick gravy 
  • Grated coconut-1 cup
  • Roasted dry red chillies- 4 to 6 
  • Tamarind- Tamarind seed size 
  • Onion chopped -1 huge 
  • Ginger chopped- 1 tsp 
  • Green chillies chopped - 2 
  • Coconut oil-2 tsp 
  • Salt to taste 

Grind grated coconut, roasted dry red chillies, tamarind to a fine paste .

Boil the ground paste along with chopped onion, ginger, green chillies n salt well . switch off and add coconut oil ... mix well

Spicy Star Fruit

Spicy Star Fruit 
  • Karmbala /Star Fruit Ripened - 3  
  • Red Chilly powder-1/2 tsp
  • Salt to taste .

Wash n pat dry the star fruit  . Remove the tough backside Slice them in roundels . 

In a small bowl add red chilly powder n salt . Mix well .

Place the sliced star fruit roundels  on a plate . Drizzle generous amount of red chilly n salt mixed powder and  enjoy .
