Poi Saag /Indian Spinach Ki Dhal( Bengali Delicacy )

Poi Saag /Indian Spinach Ki Dhal( Bengali Delicacy ) 

  • Thur Dhal - 1/2 cup 
  • Turmeric Powder -1/4 th tsp 
  • Poi Saag /Indian spinach - Roughly chopped -2 cup's 
  • Salt to taste
  1. For seasoning 
  • Ghee -2 tsp 
  • Cumin seeds -1/2 tsp 
  • Bay Leaf -2 
  • Red Chilly -3 , broken 
  • Hing /Asafoetida -2 pinch
  •  Garlic Flakes - 10 to 12  , chopped
Method
Wash n pressure cook thur dhal along with turmeric powder .Cool n churn it .To it add chopped Indian spinach  n pressure cook for just 1 whistle ,Add salt . 

In a pan melt ghee, add cumin seeds , bay leaf, broken dry red chilly , hing  n n chopped garlic  flakes n fry till reddish brown n pour this over the cooked saag dhal n mix well . Drizzle little chilly powder above ( optional )

Fresh Green Peas Dhal .

Fresh Green Peas Dhal .

  • Fresh Green Peas - 2 cup's
  • Ghee - 3 tsp
  • Mustard seeds - 1 tsp
  • Cumin Seeds -1 tsp
  • Hing /Asafoetida - 2 pinch
  • Curry leaves -1 sprig
  • Freshy crushed ginger -1/2 inch
  • Freshly crushed Garlic flakes - 6
  • Green chilly -2 , chopped
  • Onion - 1 , chopped
  • Tomato-1 , chopped
  • Garam Masala powder - 3/4 th tsp
  • Coriander leaves - 2 tsp chopped
  • Salt to taste


Method
Pressure cook the fresh green peas for 2 to 4 whistles . Cool n mash it semi coarsely .

In a kadai melt ghee, splutter mustard seeds, add cumin seeds n stir for few seconds. Add hing , curry leaves , chopped green chilly n fry for few seconds. add freshly crushed ginger n garlic paste n stir for few seconds . Add chopped onion n fry till transparent . Add chopped tomato n fry till the raw smell goes n it turns mushy . Add the cooked semi coarsely mashed green peas , water for consistency , garam masala powder n salt ..Boil well n then garnish with chopped coriander  leaves .

Nela Basale / Bomabi Vaali Dhal 

  • Nela Basale/Bombai Vaali - 1 bunch , chopped 
  • Thur Dhal - 1/2 cup 
  • Turmeric powder -1/4 th tsp 
  • Tomato - 1 , chopped 
  • Ginger , 1 inch , finely chopped 
  • Cumin seeds - 1/2 tsp 
  • Hing /Asafoetida -2 pinch 
  • Green chilly - 2 chopped 
  • Salt to taste .


Seasoning

  • Oil - 2 tsp
  • Mustard seeds -1/2 tsp 
  • Crushed garlic flakes - 4 to 6 
  • Onion -1 . chopped 
  • Dry red chilly - 2, broken 


Method 
Wash n pressure cook thur dhal along with turmeric powder . cool n churn it 

Pressure cook chopped nela basale , chopped tomato , cumin seeds , chopped green chilly , chopped ginger ,hing for just 1 whistle , 

In a kadai add oil . splutter mustard seeds, add crushed garlic n roast till brown , add chopped onion n roast till pinkish red, add torn dry red chilly n stir for few seconds , Add the cooked stuffs along with salt n boil .

Chilly Garlic Dhal 

  • Thur Dhal - 1 cup 
  • Turmeric powder-1/2 tsp 
  • Salt to taste 


Seasoning 

  • Ghee - 2 tsp
  • Garlic flakes crushed - 8 to 10 
  • Chilly Powder- 1 tsp 


Garnishing 
Chopped Coriander  leaves - 2 tsp 

Method 
Wash n pressure cook thur dhal with turmeric powder , once cooked , churn it ..add salt n add water for consistency n boil . Give seasoning n then garnish

Chane Ki Dhal /Bengal Gram Dhal

Chane Ki Dhal /Bengal Gram Dhal 

Bengal Gram /Chana Dhal -3/4 th cup 

Seasoning 

  • Ghee - 1 tblsp 
  • Cumin seeds-1 tsp 
  • Hing/Asafoetida -2 pinch 
  • Green chilly -3 chopped 
  • Onion -1 , chopped  
  • Tomatoes-2 chopped 
  • Garlic flakes -10 to 12
  • Ginger -1/2 inch piece
  • Turmeric powder-1/2 tsp 
  • Red Chilly Powder-1/2 tsp 
  • Garam Masala Powder-1/2 tsp 
  • Salt to taste 


Garnishing 

  • Coriander leaves -  few sprigs chopped 
  • Lime Juice -1 tsp (optional ) 


Method
Wash n soak Bengal Gram in water for about 3 hours . 

Chop onion, tomatoes 

Finely Crush green chilly , garlic flakes n ginger.

In a pressure cooker , cook bengal gram  dhal, along with turmeric powder till soft n cooked well . Cool n churn it well .Add salt . 

In a pan melt  ghee . add cumin seeds n  hing in it. stir for few seconds . Add chopped onion n stir well till it turns reddish brown . Add crushed garlic, ginger n green chilly n saute till it changes color . Add chopped tomatoes n cook till its mushy n raw smell goes . Add red chilly powder n garam masala powder . Stir for few seconds , then add the cooked dhal , salt n boil for  2 to 4 mts . 

 Garnish with coriander leaves n squeeze in lime juice . 

Note : The consistency of this dhal has to be a thicker than regular dhal

Yellow Moong Dhal Tadka



 Yellow Moong Dhal Tadka



  • Yellow split moong dhal - 1/2  cup
  • Turmeric powder- ½ tsp
  • Oil -1 tsp 
  • Salt to taste

Seasoning 
  • Ghee- 1 tblsp
  • Cumin seeds-1 tsp
  • Asafoetida /hing- 2 pinch
  • Cloves -3
  • Finely chopped garlic flakes- 7
  • Grated ginger-1/2 inch piece 
  • Dry red chilly -2
  • Coriander powder -1 tsp
  • Red chilly powder - 1/2 tsp

Garnishing
  • Fine chopped coriander leaves-3 tbsp
  • Lemon juice- 2 tsp 

Method 
Wash and soak moong dhal for 1/2 an hour .
Pressure cook the soaked moong dhal with turmeric powder n oil for 3 to 4 whistle till the dhal turns soft .Cool n churn it . Add salt .

In a pan add ghee ,add hing, cloves ,broken dry red chilly. Stir for few seconds.Now add cumin seeds, chopped garlic flakes,grated  ginger n saute till they change the color . Switch off and add coriander powder n red chilly powder ,stir for few seconds . . Add this seasoning to the cooked dhal mixture . Garnish with coriander leaves, add lime juice n mix well .

  • Yellow Moong Dhal - 1 cup 
  • Radish leaves -1 bunch ( chopped ) 
  • Turmeric powder-1/2 tsp 
  • Oil - 1 tsp 
  • Ginger -1/2 inch, finely chopped 
  • Green chilly -2 , chopped 
  • Tomatoes -2 ,chopped 
  • Salt to taste .

Seasoning 

  • Ghee - 2 tsp heaped 
  • Cunm seeds - 1/2 tsp
  • Garlic Flakes - 4 to 6, finely chopped  
  • Red chilly -2 , broken 
  • Red chilly Powder-1/2 tsp 

Method
Wash moong dhal n pressure cook it for a few whistle  along with turmeric powder n oil ... cool n mash it ..Add chopped radish leaves, chopped tomatoes, green chilly,ginger  n pressure cook for 1 whistle.n add salt .  

In a pan melt ghee, add cumin seeds, allow it to sweat .Add chopped garlic n fry til reddish brown . Add broken dry red chilly n stir for few seconds .Switch off n add red chilly powder n  stir well . Add this seasoning with  the cooked dhal mixture n mix well

Moong Dhal with Kasuri Methi 


  • Yellow split Moong Dhal - 1 cup 
  • Ghee - 1 tblsp 
  • Cumin seeds -2 tsp 
  • Hing /Asafoetida -2 pinch 
  • Ginger -1 inch piece
  • Cloves/Lavang  -3 
  •  Green Chilly -2 
  • Tomato -2 
  • Kasuri methi crushed - 2 tblsp 
  • Red Chilly Powder -1 tsp.kashmiri laal 
  • Coriander Powder -2 tsp
  • Turmeric Powder -1/2 tsp 
  • Garam Masala Powder- 1/2 tsp 
  • Coriander leaves - chopped 2 tsp 
  • Salt to taste 
  • Water as required to cook dhal 


Method 
Wash n soak moong dhal for about 10 mts .

Remove the skin of ginger n pound  it along with cloves . 

Chop tomatoes n green chilly .

In a pressure cooker , melt ghee add cumin seeds n allow it to splutter n then add pounded ginger n cloves n stir for few seconds , Add hing , green chilly n tomatoes ..stir till the tomatoes turn mushy n cooked . Add all the powders , crushed kasuri methi , soaked moong dhal , salt n water n pressure cook for 3 or 4 whistle . Then garnish with coriander leaves .

Ghosale Dalithoy /Ride Gourd Dhal

  • Toor dal - 1 cup
  • Tender Ridge Gourd /Ghosale -1 medium 
  • Green chilly - 3  or according to the taste 

Seasoning

  • Oil/Ghee -1 tsp
  • Mustard seeds - 1/2 tsp
  •  Curry leaves - 1 sprig 
  • Dry red chillies -2
  • Hing/Asafoetida water- 1 tsp
  • Salt to taste

Method

Wash the ridge gourd n peel the skin n chop into 2 inch pieces . In little water cook till soft but not mushy.
 Pressure cook thur dhal  . It has to be cooked well ,then churn it . Add slit green chillies with salt n boil well .Add the cooked ridge gourd pieces . 

In a seasoning  pan add oil or ghee , Add mustard seeds , when they splutter add torn red chillies n curry leaves...add this to the cooked dhal n then add hing water .

  • Palak Leaves - 1 bunch , chopped 
  • Thur Dhal -3/4 th cup 
  • Onion-1,chopped 
  • Tomato-1,chopped  
  • Green Chilly -2 ,chopped 
  • Turmeric powder-1/4 th  tsp
  • Ginger - 1/2 inch 
  • Salt to taste 


Seasoning  

  • Ghee /oil -1 tsp
  • Mustard seeds -1/2 tsp 
  • Cumin seeds-1/4 th tsp
  • Hing - 2 pinch
  • Curry leaves-1 sprig
  • Garlic -6  flakes ( chopped ) 
  • Red Chilly Powder -1/2 tsp 
  • Dry red chilly - 2 ,broken 
Method 
Wash n pressure cook thur dhal for few whistle .


Add  chopped onion, chopped tomato, chopped green chilly , chopped palak ,chopped ginger n  turmeric powder for one whistle . 


in a kadai add oil,  splutter mustard  seeds, then add cumin seeds, hing , curry leaves , broken dry red chilly n fry for a while Add chopped garlic n stir till it turns brown . switch off and add red chilly powder .  Add this  to the cooked  stuffs ,along with salt n stir well .

  • Fresh Methi /Fenugreek Leaves -1 cup heaped 
  • Thur Dhal - 3/4 th cup 
  • Turmeric powder -1/4 th tsp 
  • Salt to taste 
Seasoning 

  • Oil - 2 tsp 
  • Mustard seeds -1/2 tsp
  • Cumin seeds-1/2 tsp 
  • Curry leaves-1 sprig 
  • Onion finely chopped  -1 Medium  
  • Tomato, finely chopped -1 
  • Green chilly -3 or according to the spice , slit length wise 
  •  Dry red chilly - 2 , torn 
  • Garlic Flakes, slightly crushed -5 
  • Grated Ginger-1 tsp 
Method
Wash the thur dhal n pressure cook it adding turmeric powder , then add the methi leaves n pressure cook just for a whistle . Cool n churn it .

In a kadai add oil n splutter mustard seeds ,then  add the cumin seeds n let it sweat , add curry leaves n  slightly crushed garlic flakes n roast till reddish brown , add torn dry red chilly, slit green chilly, grated ginger n fry for few minutes .  Add chopped onion n fry till reddish brown ..Add chopped tomato n cook till mushy . Add salt . Cooked dhal n methi leaves . Add water as per consistency n boil for a while .

  •  Kokam dried petal's -5 to 7
  •  Turmeric Powder .one pinch
  • Green chillies.. 3 to 4
  • Salt to taste 

Seasoning
  • Ghee ..1 tsp
  • Mustard seeds..1/2 TSP
  • Curry leaves..1 sprig
  • Hing/Asafoetida .. 2 pinch
  • Dry Red Chilly Broken ..1 



Garnish
  • Chopped coriander leaves..1 tblsp


Method
Slit Green chilly .

Wash thur dhal n dried Kokam petal's and pressure cook for 4 to 5 whistle adding turmeric powder . 

Churn it well , add slit green chilly , add water for consistency n boil well . Give the seasoning n then garnish

  • Salt to taste .


Season 

  • Ghee ..1 tsp 
  •  Garlic Flakes chopped .. 1 tsp heaped
  • Dry red chilly broken ..1 


Method 
Wash n pressure cook thur dhal with salt . 

Cool n mash well . 

Add water for consistency ..Then add slit green chilly salt n cook ..later give the seasoning . 

Note : The consistency should not be too thick but medium

  •  Methi leves ...1/2 bunch ,cleaned n torn with hands
  •  Thoor Dhal ..1 cup
  •  Water ...2 cup's 
  • Tomato.. 1 small chopped 
  • Onion ..1 small chopped 
  • Ginger ..small piece ,chopped 
  • Garlic flakes..3 chopped 
  • Green chilly ..2 chopped
  •  Cumin seeds ..1/2 tsp 
  • Tamarind extract ..1 tsp 
  • Jaggery ..1 small piece 
  •  Salt to taste 

Season

  • Ghee ...1 tsp
  •  Mustard seeds.. 1/2 tsp
  •  Curry leaves ..1 sprig  

Method
Pressure cook thoor dal with chopped tomato, onion,ginger,garlic flakes, green chillies,cumin seeds ,torn methi leaves n water.Once it is cooked add salt,jaggery,tamarind extract and boil well . Then give the seasoning .

  • Thur Dhal- 1 cup 
  • Red Amaranth Leaves chopped ... 3 cup's 
  • Salt to taste 
Seasoning 
  •  Oil-2 tsp
  • Mustard seeds-1 tsp
  • Cumin seeds-1/2 tsp
  • Curry leaves- 1 sprig
  • Chopped  green chillies- 2  or 3 
  • Red Chilly Powder .. 1/2 tsp 
  • Onion -1 
  • Tomato-1

Method
Wash n soak Thur dhal  for about 10 minutes n pressure cook it ,but not mushy ..
In a kadai splutter mustard seeds , add cumin seeds, chopped  green chillies , curry leaves add sliced onion n fry till reddish brown , add chopped tomato  n fry till the raw smell goes ,add chopped leaves , salt n cookfor sometime .. then the cooked dhal n mix well .

Lasooni Dhal Tadka 
  • Thur Dhal ..1 cup
  •  Water .. 2-1/2 to 3  cups  
  • Onion...1  
  • Tomato...1 
  •  Garlic...4 cloves 
  • Turmeric powder..1/4 th tsp 
  • Green chilly ...2 
  • Salt to taste 
Seasoning 
  • Ghee...2 tsp 
  • Cumin seeds ..1/2 tsp 
  • Garlic cloves chopped ...2 tsp 
  • Red chilly powder..1/2 tsp 

Garnishing 

  • Coriander leaves
Method 
Wash thur  dhal and soak it for 20  minutes in enough water.

 Chop onions , tomatoes , Green chilly n garlic cloves 

Pressure cook soaked dhal , chopped vegetables n turmeric powder adding water ... once cooked ,cool n  churn it  ... Add salt . 

 In a small  pan, melt ghee then  add cumin seeds and when they slightly change color, add the chopped garlic cloves n fry well till brownish , switch off the flame n then add red chilly powder and mix. pour this seasoning to the cooked dhal mixture n garnish . 

Serve hot with a bowl of rice

Drumstick Flower Dhal


  • Drumstick Flower ... 2 cups
  • Thur dhal..1 cup
  • Salt to taste

Seasoning 

  • Ghee ..2 tsp 
  • Mustard seeds..1/2 tsp 
  • Cumin seeds..1/2 tsp
  • Cloves..3 
  • Curry leaves... 1 sprig
  • Onion chopped ...1 huge
  • Garlic flakes crushed ... 4 
  • Red chilly powder... 1 tsp
  • Coriander powder..1 tsp  
  • Turmeric powder..1/2  tsp 


Method 
Wash the drumstick flowers n boil it in little water . 

Pressure cook thur dhal ... cool n churn it well .

Add cooked dhal, cooked drumstick flowers , salt n enough water for right consistency .Boil it.

In a pan add ghee , splutter mustard n cumin seeds, add cloves, curry leaves , crushed garlic flakes n fry till brown . Add chopped onion n fry till reddish brown , then add all the powders n fry for a minute . Pour this over the cooked dhal . mix well n serve .

Spring Onion Dhal

Spring Onion Dhal


  • Thur Dhal - 1/2 cup
  • Spring onion greens - 1 huge bunch
  • Green chillies- 3
  • Turmeric powder- 1/4 th tsp
  • Salt to taste


Seasoning 

  • Oil- 2 tsp 
  • Garlic flakes chopped- 2 tsp 
  • Cumin seeds- 1//2 tsp 


Garnishing 

  • Lime Juice - 1 tsp 


Method 
Wash the thur dhal n pressure cook it with turmeric powder . 

Cool n mash it well .

Wash spring onion greens n chop them . In a kadai add a tsp of oil n saute the chopped spring onion greens for a minute or two  . Add this sauteed greens to the cooked dhal along with water , chopped green chillies , salt n boil well . Give the seasoning n then garnish . 

Serve hot with Rice /Rottis .

Chaney Ki Dhal Masale Waali

Chaney Ki Dhal Masale Waali


  • Chana Dhal - 1/2 cup
  • Water as required to cook the dhal
  • Salt to taste


To grind

  • Whole Dry Red chilles- 3 or according to the spice
  • Ginger- 1 inch piece
  • Garlic - 3 cloves
  • Coriander seeds- 1 tsp
  • Pepper corns- 1 tsp
  • Cumin seeds-1 tsp 
  • Black Cardamom - 1 small piece 
  • Cloves-4 
  • Cinnamon - 1 inch piece 
  • Turmeric powder- 1/2 tsp 


Seasoning

  • Ghee - 2 tsp
  • Cumin Seeds- 1 tsp 
  • Onions - 1 Chopped 


Garnishing 

  • Lemon Juice- 1 tsp 


Method
Wash n soak chana dhal for about 10  mts n then pressure cook it .. 

Grind all the ingredients meant to grind to a fine paste adding little water . 

In a  kadai  add ghee , crackle cumin seeds , add chopped onions n fry till pinkish brown . Add the ground paste n fry well till the raw smell goes ..add the cooked dhal , salt n a litle water for a desired consistency , give a quick  boil . switch off and add in lime juice . 


Serve  hot with adding a tsp of ghee on the top .
