Magge Alle Piyava kolu ( Mangalore Yellow Cucumber along with Ginger n onion cooked in coconut based thick gravy )

Magge Alle Piyava kolu  ( Mangalore Yellow Cucumber along with Ginger n onion cooked in coconut based thick gravy ) 
  • Magge /Mangalore yellow cucumber , chopped into litter bigger chunks with skin ...1 cup 
  • Grated coconut-1 cup
  • Roasted dry red chillies- 4 to 6 
  • Tamarind- Tamarind seed size 
  • Onion chopped -1 huge 
  • Ginger chopped- 1 tsp 
  • Green chillies chopped - 2 
  • Coconut oil-2 tsp 
  • Salt to taste 

Method 
In little water cook the Mlore yellow cucumber pieces till soft but not mushy .

Grind grated coconut, roasted dry red chillies, tamarind to a fine paste .

Boil the ground paste along with chopped onion, ginger, green chillies n salt well adding the cooked Mlore yellow cucumber .. 

 switch off and add coconut oil ... mix well .

Broken Wheat/Dalia Kheer .

  •  Broken Wheat/Dalia Kheer ....1/2 cup 
  • Ghee ..1 tsp 
  • Water ..2 cup's ( 1 cup for cooking dalia ) 
  • Powdered Jaggery ...3/4 th to 1 cup adjust as per taste for sweetness .
  •  Milk .. 1 cup


 Garnish

  •  Ghee ..2 tsp 
  • Cashwenuts  ...6 broken 
  • Raisins ..6
  •  Cardamom powder ...1/2 tsp 


Method 
In a kadai add ghee n then add broken wheat n roast them for few mts on sim flame ... 

Cool it then pressure cook adding a cup of water for 2 whistle  ... 

To the cooked dalia add another cup of water ,milk n boil ... Stir in between ...

 Melt Ghee , add Cashwenuts n raisins ...roast it n add it to the kheer n then add cardamom powder .

  •  Left Over Barnyard Millet Dosa Batter ...2 cup's 
  • Any Masala dry Powder either Garlic Powder/ Mixed Dhal Powder/ Gun Powder / Idly Podi Powder ... as required . 


Method 
Heat a dosa tawa , smear little oil n spread a ladle full of left over barnyard millet dosa batter very thinly ...Roast well , n sprinkle chutney powder on it ...cook for few seconds .

 Serve Hot 

Drumstick Flower Sanna polo ! ( Spicy Dosa )


Drumstick Flower Sanna polo ! ( Spicy Dosa ) 
  • Drumstick Flowers -2 cups 
  • Raw Rice-1 Cup
  • Thur Dhal-1 fist
  • Grated coconut-1/2 cup
  • Dry red chillies -4 to 5 (dont roast them ) 
  • Tamarind -Tamarind seed size 
  • Salt to taste 

Method
Soak Raw rice n dhal for 2 hours !
wash the drumstick leaves properly ! n keep aside
Grind grated coconut , red chillies n tamarind to a fine paste n then add d soaked rice n dhal n grind to a little coarse paste with very little water . Remove it  ,add salt .. the batter has to b thick .. add in d washed flower n mix ..

Heat a Tawa n smear oil , now take handful of batter n pat it with fingers  , dipping fingers in water .. close d lid n roast ! drizzle little oil on d edges n then toss the dosa on the other side n roast till done

Sanna Idlies /Spicy Idlies

Sanna  Idlies /Spicy Idlies 
  • Raw rice -1 cup
  • Thur dhal-1 fist 
  • Grated coconut-2 cup's 
  • Tamarind -Tamarind seed size 
  • Roast dry  red chillers-8 to 10 or according to the taste 
  • Hing/Asafoetida -a generous pinch  
  • salt to taste  
Method 
 Soak Rice n Thur dhal for 2 hours .. Grind grated coconut , roasted dry  red chillies, tamarind to a fine paste without adding water . Add in the soaked stuffs and grind to a coarse consistency  (can sprinkle little water if needed ) 
  Remove  the ground batter  ,Add salt n mix well.
 
Grease idli moulds, fill in the batter n steam for 20 mts !

Serve hot with coconut oil !

Note :The soaked Rice n Thur dhal has to be ground  coarsely like rice rawa, cause if its fine then the sanna idlies tends to be hard and sticky !  and the batter has to be thick not watery 

Mixed Veggie /Barshi Upkari

  • Magge pieces /Mlore yellow cucumber pieces .. 1/2 cup
  •  Tendle /Ivy Gourd sliced ...1/2 cup
  • Kuvale /Ash gourd pieces...1/2 cup
  • Ridge gourd /Ghosale pieces ..1/2 cup
  • Water ...little
  • Salt to taste

 Seasoning 

  • Oil..1 tsp
  •  Mustard seeds ...1/2 tsp
  •  Torn dry red chilles ...3 

Garnishing 
Grated Coconut - 1 tblsp 


Method 
In a kadai add oil n splutter mustard seeds then add torn red chilly stir for a while ...Add all the chopped veggies ,little water,salt cover n cook till done . Garnish with grated coconut . 

Ukde seeth , Tingalavre Saar Upkari , Left over small quantity mixed veggie upkari ,Happolu, Gointa/Pointed Gourd fries with ground masala n Ambuli /Raw mango pickle

Ukde seeth , Tingalavre Saar Upkari , Left over small quantity mixed veggie upkari ,Happolu, Gointa/Pointed Gourd fries with ground masala n Ambuli /Raw mango pickle  

Tingalavare Saar Upkari  ( White Navy Beans  Plain Rasam ) 
  • Tingalavare /  White Navy Beans - 1/2 cup 
  • Potato - 1 small 
  • Green Chilles-2 
  • Salt to taste 

Seasoning 


  • Oil-1 tsp 
  • Crushed garlic flakes- 6 
  • Dry red chilly - 1 

Method 
Wash , soak Navy beans for about 20 mts n then pressure cook it for about 4 to 5 whistle or till cooked .

Wash , peel n chop potato into 3 inch cubicles n then pressure cook it for only 1 whistle .

Add both the cooked stuffs, slit green chilles, salt in a vessel along with  water for desired rasam consistency n cook well . Then do the seasoning .

 Gointa  Podi /  Pointed Gourd  deep fried with Ground Batter 
  • Gointa/Pointed Gourd -  6
  • Oil for deep frying 

To grind to a fine paste 
  • Raw Rice- 3/4 th  cup 
  • Dry red chillies- 4 to 6
  • Asafoetida /hing-2 pinch ( i use solid hing )
  • salt to taste 
Method 
wash n scrap the skin of pointed gourd n slice them . 

Soak Raw rice in water for about 2 hours .

Grind the soaked rice along with red chillies , hing n salt to a thick batter ( sprinkle little water while grinding )  

Apply the ground batter to sliced pointed gourd  n keep aside for 1/2 an hour 

Heat oil in a kadai  n deep fry the marinated pointed gourd till crisp  3 to 5  at a time . 

Varahi Takka Surnali/ Barnyard Millet Butter Milk Dosa

Varahi Takka Surnali/ Barnyard Millet Butter Milk Dosa ...
  • 2 cup's- varahi /Barnyard Millet 
  • 1 cup-thin phova (pounded rice )
  • 1 tsp-Methi /fenugreek seeds
  • 1 cup-Curds/buttermilk ( enough to soak) 
  • Salt to taste 

Method  
Wash Barnyard millet , phova and fenugreek seeds n soak them in butter milk for 4 hrs n grind it to a fine paste,remove the batter,add salt  n ferment overnight .

Note - The  batter has to b ground with curd/ buttermilk .. 

Heat a dosa tawa , smear oil , pour a ladle full batter n swirl smoothly ..dont spread the batter too much .. cover the  lid n cook on both sides ..

Serve hot with chutney !

Gointa Rawa Podi / Pointed Gourd Deep Fried with Ground Batter n Semolina

  • Gointa/Pointed Gourd -  8
  • Semolina/Rawa  - 1/4 th cup
  • Oil for deep frying 
To grind to a fine paste 
  • Raw Rice- 1 cup 
  • Dry red chillies- 6 to 8
  • Asafoetida /hing-2 pinch ( i use solid hing )
  • salt to taste 

Method

Broken Wheat/Dalia Sweet n Spicy Dosa

Broken Wheat/Dalia Sweet n Spicy Dosa ! 
  • Broken Wheat/Dalia  -1 cup
  • Grated coconut- 1/2  
  • Green chillies -2 or according to the taste 
  • Ginger -1/2 inch piece 
  • Jaggery marble size ...2 can increase if want more sweeter 
  • salt to taste 

Method 
Just Wash broken wheat wheat ( no need to soak ) n directly grind it along with chillies, grated coconut, ginger n jaggery to a fine paste .. remove the batter n add salt .

Heat dosa pan ,smear oil n pour ladle full batter , close the lid n roast on both the sides ! 

serve hot with butter /ghee 

Note : No need to ferment the batter .

Instant Puliyogare with Cucumber Raitha , Finger Chip's , Vegetable Curd Baath with Lime pickle n Chana Dhal Jackfruit Godse !

 Instant Puliyogare with Cucumber Raitha , Finger Chip's , Vegetable Curd Baath with Lime pickle n Chana Dhal Jackfruit Godse ! 

Instant Puliogare ( Tamarind Rice ) 


  • Cooked Rice... 2 cups 
  • Oil.1 tblsp
  • Mustard seeds..1/2 tsp
  • Curry leaves ..2 sprigs
  • Ground nuts .. 3 tsp 
  • Dry red chilly ..2 
  • Puliogare powder... 1 tblsp ( i used MTR brand ) 


Method 

Heat oil in a kadai, splutter mustard seeds , then add curry leaves, groundnuts , torn dry red chilly n roast for few seconds , add the puliogare powder n saute for a while  Add the cooked rice n mix well . 


Cucucmber Raitha 
  • Cucumber ,peeled  n grated  ...1 cup
  • Curds ...1 cup 
  • Pepper powder..1/2 tsp 
  • Coriander leaves chopped ..2 tsp
  •  Salt to taste . 

Method 

In a bowl add curds , churn it ...to it add grated cucumber, chopped coriander leaves, pepper powder n salt ..Mix well . 

Finger Chip's 

  • Potato..2
  •  Oil to deep fry 
  •  Salt to taste 
  •  Chilly powder... 2 tsp

Method 
 Wash n peel the potatoes .. Slice them thin lenghty .

Heat oil in a kadai n deep fry it ...take on a tissue paper to remove excess oil ... sprinkle salt n chilly powder ..  mix well . 


Vegetable Curd Bhaath 

  • Cooked Rice ..1 cup 
  • Carrot ..1/2 cup grated  
  • Onion..1 medium sized finely chopped 
  • Cucumber ...1/2 cup finely chopped 
  • Curds..3 cup's
  • Coriander leaves..1 tblsp chopped 
  • Green chillies..3 chopped 
  • Salt to taste 

Seasoning 

  • Ghee..2 tsp 
  • Mustard seeds..1/2 tsp 
  • Curry leaves..1 sprig 
  • Bengal gram ..1 tsp 
  • Peanuts..2 tsp
  •  Cashew nuts.. 1 tsp broken 

Method 

In a mixing bowl add cooked rice, mash it a little bit , add curds, grated carrots, chopped onion chopped cucumber n chopped green chilly along with chopped  coriander leaves, salt n mix well n then season it ..Mix well n serve with pickle . 

Note : Chopped onions n chopped cucumber add just before serving as if added before it might make the curd rice watery ... 

 Chana Dhal Jackfruit Payasam


Chana Dhal..1/2 cup
Jackfruit sliced into two ... 1 cup
 Coconut Milk.. 1 cup ( i used Dabur Homemade Coconut Milk  )  adjust accordingly as its quite thick 
Jaggery ... 2 lemon size ( crush it ) or according to the sweetness 
Cashew nuts ... 10 sliced
Rice flour ...2 tsp
Cardamom powder..1/4 th tsp ( optional ) ..i did not add 


Method

Wash n pressure cook the chana dhal till  soft but not mushy along with sliced cashew nuts .

Mix rice flour in little water n stir  well ..as no lumps is formed . 


In a vessel add the sliced jack fruit pieces , add little water , crushed jaggery n boil till the jaggery melts n jack fruit is cooked . Add the cooked chana dhal , Cashew nuts , Coconut milk n on sim flame ..give a quick boil .Add the rice flour mixture ..Mix well . Add cardamom powder ...

  • Broken Wheat/Daliya ...1 cup
  •  Water ..2 cup's for Daliya n 1/4 th cup more as for veggies
  • Mixed vegetable's chopped ... Carrots, Beans .potato , semebadane , capsicum Green peas ..1/4 th cup each
  • Onion ..1 chopped
  • Ginger ..finely chopped ...1/2 tsp 
  • Tomato ..1 Chopped
  • Green Chilly ..3  chopped
  • Oil...2 tsp
  •  Mustard seeds ..1 tsp
  • Cumin seeds ..1 tsp 
  • Curry leaves ...1 sprig
  • Turmeric powder ..1/4 th tsp
  • Salt to taste . 

Method 
Wash the broken wheat .. 

In a pressure cooker add oil, splutter mustard seeds , add cumin seeds , chopped green chilly , curry leaves n fry for a while .Add chopped onion n fry till transparent ,add in chopped ginger n stir for a while , add tomato n cook till mushy n raw smell goes .Add all the vegetable's , washed broken wheat ,water , turmeric powder , salt , stir n pressure cook for 2 whistle . 

Serve with curds n Pickle . 

Sweet Jaggery Dosa

Sweet Jaggery Dosa /Godu Polo 

  • Dosa Rice ...3/4 th  cup
  •  Urid Dhal  1/4 th  cup
  •  Methi Seeds /Fenugreek seeds ...1/2 tsp
  •  Poha/Beaten Rice ..3/4 th  cup 
  • Jaggery ... lemon size (adjust according to sweetness ) 
  • Turmeric Powder ..1/4 th tsp
  •  Salt to taste . 


Method
 Wash n soak the rice , urid dhal n methi seeds in enough water for about 4 to 5 hours n then grind it with poha ( washed n soaked for about 10 mts ) when half done add jaggery n turmeric powder n grind to a very fine batter . 

Add salt n ferment over night . 

Heat a dosa tawa , drizzle  oil n spread a ladle full batter .. cover n cook on both sides ... adding little oil at the edges, 

Serve hot with Ghee/Butter .

  • Oil..1 tblsp
  • Onion..1 huge 
  • Green Chilly..3 
  • Pepper Powder ..1/2  tsp
  • Salt to taste 

Method 
Wash eggs . 

Wash the drumstick flowers. 

Finely chop onion n green chilly .

In a kadai add oil add chopped onion n fry till transparent . Add chopped green chilly n stir for few seconds .  .Add drumstick flowers n cook for a while till it wilt's  , then add salt . Mix well n  add beaten eggs n stir well , till eggs are cooked . Sprinkle pepper powder n mix again .

  •  Fennel seeds ...1-1/2 tsp 
  • Dry red chilly ...5 
  • Garlic cloves ...6 
  • Turmeric powder ..1/4 th tsp 
  • Sambar powder ..1 tsp 
  • Salt to taste . 

Season

  •  Oil..1 tblsp
  •  Mustard seeds ..1 tsp 
  • Urid dhal..1 tsp 
  • Cumin seeds ..1/2 tsp
  •  Curry leaves .. 1 sprig 


Garnish .

  • Chopped coriander leaves ...2 tsp 
  • Lime juice ..1 tsp . 


Method 
 Wash the baingan , slice into roundels n then cut the roundels  into 2 piece ..Keep aside

 In a round pan ..add oil , splutter mustard seeds, add cumin seeds , urid dhal , curry leaves n stir for a while . Add the sliced baingan n saute for some time in oil ...Add the ground masala n stir till all the masala coats well to the baingan ... sprinkle little water if needed ... Cover n cook on sim flame n c to it that baingan is cooked but not mushy . . Switch off n then garnish .

Sukkale Sungta Phanna Upkari /Dried Prawns Cooked in Ground Spicy Masala..Version 2 
  • Dried Prawns ..1 cup heaped  
  • Turmeric powder-1/4 th tsp 
  • Onions- 2 
  • Tomato -1 
  • water- 1/2 cup  
  • Salt to taste

To Grind to a fine paste
  •  Roasted Dry Red Chilly ... 6 ( 4 short n 2 long ) 
  • Tamarind ..Tamarind seed size 

    Method  
    Chop onions n tomato 
    Separate the head n tail of dried prawns .

    Soak it in water adding 1/2 a tsp of turmeric powder for 10 mts 


    wash it properly until the sand particles are all gone . 


    Grind all the ingredients meant to grind to a fine paste.

    In a kadai add oil , add chopped onions n fry till reddish brown . Add tomato n cook till the raw smell goes n its mushy . Add ground paste n saute for some time .. add cleaned prawns, salt , water  n cook till done .

  • Mulangi /Radish ... 2 , washed ,scraped slightly n sliced into roundels 
  • Red chilly powder ...2   tsp
  •  Turmeric powder ..1/4 th tsp 
  • Hing/Asafoetida ... 2 pinch 
  • Rice flour .. 2 tsp 
  •   Salt to taste
  •  Rawa /Semolina ...1 tblsp 
  •  Oil.. little to tawa roast 
 Method
 In a bowl add red chilly powder , turmeric powder, hing, rice flour n salt add little water n mix well ...add the radish slices n mix well ..keep aside for sometime .

Heat a dosa tawa , drizzle oil..run the marinated radish  slices over semolina  n place on tawa side by side n roast on both sides .

Wheat Flour Muthia with Spicy Kadhi

Wheat  Flour Muthia with Spicy Kadhi

For Muthia

  • Wheat Flour..2 cup's
  •  Turmeric Powder..1/2 tsp
  • Chilly Powder..2 tsp
  •  Oil.. 4 tsp
  • Water to knead a tight dough .
  • Water to Boil the Muthiyas as needed
  • Salt to taste


Seasoning

  • Oil ..1tblsp
  •  Mustard seeds ..1 tsp
  • Hing /Asafoetida ...2 pinch
  • Red chilly powder... 2 tsp


For Kadhi

  • Sour Curd..1-1/2 cup's 
  • Water ..2 cup's 
  •  Turmeric Powder,..1/2 tsp
  • Gram Flour / Besan..1-1/2 tsp 
  • Salt as per taste


Seasoning 

  • Ghee..2 tsp 
  •  Mustard Seeds..1/2 tsp 
  • Cumin Seeds..1/2 tsp 
  • Hing/Asafoetida ..1 pinch
  • Fenugreek/Methi Seeds..a few
  • Curry Leaves..1 sprig  
  • Red Chilly Powder..1 tsp


Method for Muthia
In a bowl add  wheat Flour , turmeric powder , chilly powder , oil n salt  mix well. Knead a tight dough and give cylindrical shape's ..

Boil water in a broad vessel. Add this flour cylinder into the boiling water and allow it boil for about  15-20 mins. Insert a sharp knife into muthia and check it is done or not. If you feel knife didn’t come out very clean. Boil more for 2-3 mins. Drain and allow it to cool completely


Once cooled  completely, cut into 2 inch pieces .

Add oil in  kadai, splutter  mustard Seeds,add hing ,stir it n then add muthiya,s along with chilly powder n little salt ...n roast for about 3 to 5 mts on slow flame. 


Method for Kadhi
Whisk the curds  nicely. Add  water, turmeric powder n besan ..Mix well so that no lumps is formed . Boil for about 8 to 10 mts ,then add salt ..switch off and give the  seasoning .

Ukde Peja ,Salla Ambe Koddel with Paccha Ponosu . Vaigana Puddi sagle ( Baby eggplants sauteed in coconut based dry masala ) n Karathe Podi /Bitter Gourd deep fries

Salla Ambe Koddel with Paccha Ponosu . ( Brined Stuffs curry ) 
  • Brined Salla /Raw Jackfruit Brined ..5 to 6 ,
  •  Brined Raw Mango .. 1 small
  •  Brined Paccha Ponosu ... 1/2 

 To grind to a fine paste .. 



  • Grated coconut ..1/2 cup
  •  Roasted dry red chilly ...6 
Seasoning 


  • Oil..2 tsp 
  • Crushed garlic flakes ..8 
Method  
Wash well all the brined raw jackfruit, paccha ponosu n raw mango .. Slice the brined raw jackfruit ,
Chop the brined raw mango n brined Paccha Ponosu ... Boil all the 3  well in little water .. 

Grind grated coconut n roasted dry red chilly to a fine paste . Add the ground paste to the cooked stuffs , add water for consistency n boil well n then season ... 


Note : Add salt only if required as its already brined . 


Vaigana Puddi sagle ( Baby eggplants sauteed in coconut based dry masala ) 
  • Brinjal (small variety) - 10
To grind 
  • Grated coconut-1 cup
  • Roasted dry red chillies-10
  • Tamarind- Tamarind seed size
  • Fenugreek seeds-1/4 th tsp
  • Coriander seeds- 2 tsp 
  • Salt to taste

Seasoning 
  • oil-2 tsp
  • Mustard seeds-1/2 tsp
  • Curry leaves- 1 sprig
Method 
wash n pat dry the brinjals ... slit it lengthwise from bottom into 4 slits ..retain the stalk .. 

 In little oil roast coriander seeds, fenugreek seeds .

Grind grated coconut.  roasted red chillies , tamarind n salt to a thick masala ( dont add water ) n just before removing the masala add the roasted fenugreek and roasted coriander seeds and grind for few minutes . 


Stuff the ground masala to the slit brinjals.


In a kadai ,add oil then splutter mustard ,, curry leaves , place the stuffed brinjal side by side n sprinkle remaining   masala along with little water , cover and cook . open lid in between and turn over the brinjal to prevent sticking it to the kadai . cook till the brinjals are soft and the masala is dry .


Karathe Podi /Bitter Gourd deep fries
  • Bitter Gourd -  2 
  • Red chilly powder-3 tsp 
  • Rice flour- 1 tblsp 
  • Hing - 2 huge pinch 
  • Turmeric powder- 1/4 th tsp 
  • Salt to taste 
  • Oil for deep frying 

Method 
Wash the bitter gourd's , chop into roundels . wash this in water for about 4 to 5 times n apply salt to it n keep aside for 1 hour . 


In a bowl add red chilly powder ,rice flour,hing , turmeric powder n salt    Squeeze well the salted bitter gourd roundels n add , mix well .. set aside for few mts.


Heat oil in a kadai  n deep fry the marinated roundels till crisp  4 to 6 at  time .
