Semi Ripe Mango Gojju .

Semi Ripe Mango Gojju !!!! 

  • Semi Ripe firm mango-1
  •  Tamarind paste-1/2 tsp
    Jaggery-1 tsp 
  • water-1 cup
  •  Sambar powder-1/2 tsp
  •  Turmeric powder-a pinch
  • Salt to taste

To grind 

  • Chana dal- 2 tsps
    Urad dal-2 tsps
    Fenugreek seeds- 1/4 th  tsp
    Coriander seeds- 1 tsp

    Red chillies- 2 

Seasoning 
  • Oil-1 tsp
  • Mustard seeds-1/2 tsp
  • Hing/Asafoetida-2 pinch 
  • Curry leaves-1 sprig  

Method 
Wash and cut ripe mango into reasonable pieces.Add water  n boil it .
 .
 In little oil roast the ingredients meant for grinding .Allow it to cool and finely grind it ..Add this mixture to the boiling water.Add tamarind pate, turmeric , sambar powder ,jaggery n salt .Allow the mixture to cook for 7 to 8 mts  . 

Do the seasoning !

Moong dhal n Cucumber Kosambari !

Moong dhal n Cucumber Kosambari ! 
  • Moong dhal - 4 tbsp
  • Chopped Green chillies: 1-2
  •   Finely chopped Cucumber: 1/2 cup
  • Grated coconut: 1 tbsp 

Seasoning
  • Mustard seeds: 1/2 tsp
  • Hing /Asafoetida -a pinch 
  • Curry leaves-1 sprig 

Garnishing
  • chopped coriander leaves -2 tsp
  • Lime juice -1/4 tsp
  • Salt: to taste

 Method:
Soak dhal in water for about an hour. n drain the water completely .. keep aside ..

In a bowl add Moong dhal, chopped cucumber, green chillies, grated coconut , salt , chopped coriander leaves n mix thoroughly.

Heat oil and do seasoning ,add lime juice and stir well !.

Appe Huli ( Raw mango gravy )

Appe Huli ( Raw mango gravy ) 
  • Raw Mango-1
  • Jaggery-1/2 tsp
  • salt to taste 

Seasoning 
  • Oil -1 tsp
  • Urid dhal-1/2 tsp
  • Chana Dhal-1/2 tsp
  • Dry red chillies-  2 or 3 
  • Hing /Asafoetida -a pinch 
  • Curry leaves-1 sprig 

Method

Peel N Chop raw mango into cubes , boil n mash it . Bring it to rasam consistency adding water , add jaggery n salt n boil it ! n then give d seasoning !



Chilly Cheese Toast !

Chilly Cheese Toast ! 
  • Bread slice -3
  • Processed cheese grated -11/2 cups 
  • finely chopped capsicum-1/2 cup
  • Finely chopped onions-1/2 cup 
  • Finely chopped green chillies -2 tsp 
  • Black pepper powder -1/4 th tsp 
  • Ghee /butter -1 tsp 
  • salt to taste 

Method 
Mix all the above in a bowl n apply it on bread slice ,heat a tawa , smear butter or ghee to it n roast the bread slice till done !

Serve hot with ketchup !

Tendle Talasani ! Ivy gourd sauteed in garlic !


  • Ivy Gourd -1/2 kg
  • Garlic flakes-10 or12  
  • Oil - 10 tsp
  • Dry red chillies-4 
  • water- little
  • salt to taste

Method 
wash n cut d end points of Ivy gourd n crush them lightly ..apply salt n keep it aside for 10 mts ..

In a kadai add oil, crushed garlic flakes  ,when it turns golden brown add dry chilly flakes n fry for sometime .. now squeeze d ivy gourd n roast it .. sprinkle water n cook it covered , on low flame ! saute in between , n cook till the veggies turn light brown !

Kuve Pitta Duddali ! Arrowroot pudding  ) 


  • Arrowroot powder-1 cup 
  • Water-5 cups
  • Water-3 cups 
  • Milk -1 cup
  • Sugar-1 cup 
  • Cardamom pods-2 or 3 
  • Ghee-2 tsp 

Method 
Mix arrowrooot powder in 5 cups of water .. to a deep vessel tie a cotton cloth n strain the above mix n set it aside for at least 2 hours .. after 2 hours decant the top water ..

Add the settled flour in a kadai , add 3 cups water , milk , sugar n cook on low flame stirring continuously  ,till the paste become transparent . switch off n add the crushed cardamom powder . n spread it on a plate smeared with ghee ..cool n cut into desired shape .

Paani Puri !





Paani Puri ! 

For Puris 
Fine Rawa /semolina -3/4 th cup
Maida -1/2 cup 
Urid dhal powder ( black gram ) -2 tsp ( level ) 
Baking powder-2 pinch 
ice cold water as needed
Salt to taste 

Method 
Dry roast urid dhal till golden brown n powder it in mixer .. 
Mix maida, rawa , urad flour ,salt n baking powder in a bowl ,add ice cold water n knead to a stiff dough . keep closed under wet cloth for 10 mts .Pat n knead again till the dough becomes smooth n elastic ..roll like chapathi , using a round biscuit cutter , cut small round n deep fry in batches till crisp !

Pani 
Water-4 glass 
Green chillies - 2 or according to the taste 
Mint leaves-1/2 cup
cumin powder-1 tsp 
pepper powder-1/4 th tsp
black salt - 3 pinch or according to the taste
thick tamarind juice-2 tsp 
finely chopped coriander leaves- 4 tsp  

Method 
Crush Green chillies, mint leaves in a mixer to a fine paste 
In a bowl add water, chilly mint paste, tamarind pulp , black salt, cumin powder, pepper powder, mix well  n then add chopped coriander leaves . 

Sweet chutney 
Tamarind -lemon sized 
Jaggery-5 tbsp 
seedless dates-5 ( chopped n cooked in little water ) 
Red chilly powder-1 tsp 
salt to taste 
water - 1/2 cup 

Method 
Soak Tamarind n jaggery  overnight 
in a bowl mix , tamarind jaggery mix, boiled dates mix , salt n red chilly powder ..   mix it well n then filter ! 

Stuffing 
Medium potatoes-5
Black chana/ chickpea  -1cup 
Mint leaves-2 fist 
green chilly -2 or according to the taste 
Red chilly powder-1tsp
coriander leaves chopped -3 tsp 
cumin powder-1/2 tsp 
salt to taste 

Method 
Soak black chana overnight 
Pressure cook potatoes .. cool , peel n smash them 
Pressure cook Black chana ..
Make a paste of mint n green chillies 
In a bowl add smashed potatoes  ,cooked black chana , chilly powder, cumin powder, chilly mint paste, salt n coriander leaves n mix well ! 

Serving 

Make a hole with thumb on top of each puri , put little of the stuffing , sweet chutney n fill with pani n eat immediately ! 

Note : Adjust the spices and tanginess according to taste !! 

This is the king of chats !!!!








Bread Pizza !

Bread Pizza !
  • 2 Bread slices
  • 1 small onion chopped
  • 1 small Tomato chopped 
  • 1 Small Capsicum Chopped ( i have used mixed red , yellow n green capsicums )
  • corn kernels -2tbsp
  • 1/2 cup of Grated cheese
  • 2 tbsp of  pizza sauce 
  • 1 tbsp oregano 

Method
pressure cook  corn kernels for 1 whistle  

In a kadai add oil, chopped onions n fry till transparent .. add tomatoes n fry till the raw smell goes ,add the capsicum n cook till done ( retain the crunchiness ) n then add the cooked corn kernels.

 Take a bread slice and spread a tsp of pizza sauce n sauteed veggies n sprinkle cheese on top along with oregano !

Heat a tawa , smear butter n toast the bread till done !

Serve hot !!.

Garlic Chutney

Garlic Chutney 

  • Garlic   2 pods (peel the skin n use)
  • Dry red chillies -  5 to 6 or according to the taste ( i have used Byadagi chillies )
  •  Tamarind  -Tamarind seeds siz 
  • Salt   to taste 

Seasonings

  • Oil   3 tbsp
  • Mustard seeds  - 1/2 tsp
  • Chana dhal-1/2 tsp 
  • Urad dhal -1/2 tsp 
  •  Curry leaves -2 sprigs  

Method 
 Grind garlic,dry red chillies and tamarind , to a smooth paste.(if you want soak the chillies and tamarind in 1/4 cup water and grind it) 

Heat oil in a kadai ,add Mustard seeds once it stops sputtering add chana n urid dhal , roast for a while add curry leaves .. n then add the ground paste along with salt ,Cook in low medium flame,  till the raw smell of the garlic goes!

Laukhi Dhal / Bottle gourd dhal.


  • Thur Dhal-1/2 cup
  • Bottle gourd pieces-1 cup 
  • onion -1
  • Tomatoes-1 
  • salt to taste 

Seasoning 
  • Oil/Ghee-1 tsp
  • Mustard seeds-1/2 tsp
  • Cumin seeds-1/4 th tsp
  • Garlic flakes-3 crushed 
  • Asafoetida /Hing-a pinch 
  • Turmeric powder-1/4 th tsp 
  • Red chilly powder-1 tsp 
coriander leaves for garnishing 

Method 
Soak Thur dhal in water for 20 mts n pressure cook it along with Chopped Bottle gourd pieces , tomatoes n Onion 

In a kadai add oil/ghee .. mustard seeds, cumin seed, hing, crushed garlic, chilly n turmeric powder, cooked dhal n veggies with salt and garnish with coriander leaves !

Mango Dhal

Mango Dhal 


  • 1 Small cup-Thur dhal
  • 1/2 cup- peeled n chopped raw mango
  • 1- onion chopped
  • 1/4 th tsp -turmeric powder 
  • 2 or 3 -green chilly 
  • 1/2 tsp- chopped ginger 
  • salt to taste 

for seasoning 
  • 1/2 tsp- mustard seeds 
  • 1/2 tsp-cumin seeds 
  • 3 -garlic flakes crushed 
  • 2-dry chillies 
  • 1 sprig- curry leaves 

Method 

Pressure cook dhal along with,chopped raw mango ,onions,  turmeric powder,green chillies n ginger for 3 whistles. ,add salt n then give the seasoning !

Spicy Aloo Zeera - Version 1

Spicy Aloo Zeera - Version 1 
  • Medium sized potatoes-5 
  • Cumin seeds -11/2 tsp 
  • Asafoetida/hing -2 pinch 
  • Green chillies - 2 
  • Amchur /Mango powder- 1 tsp 
  • Red chilly powder-1/2 tsp 
  • Crushed coriander seeds-1/2 tsp 
  • Turmeric powder-1/4 th tsp 
  • Chopped Coriander leaves -3 tsp 
  • Oil -3 tsp 
  • Salt to taste 
Method 

Pressure cook potatoes ( dont over cook them ) cool, peel n cut into desired cubes

In a kadai , add oil, add in cumin seeds n hing ,once crackled add chopped green chillies ,add crushed coriander seeds n add all the powders ,salt n fry for few seconds .add cut cubed potatoes n mix till all the masala is well coated .. n then add chopped coriander leaves n mix well !



Eggless Mango Cashew cake !

Eggless Mango Cashew cake ! 
  • Sugar 3/4 th cup  
  •  Green Cardamom-4 or 5
  •   Non fibrous mango-1 
  •  Milk -4 to 5 tp  
  •  Mango puree =1 cup 
  • few strands of saffron (optional) .
  • Maida-11/2 cup
  • Cashew pieces - 1/4 th cup  

Method

Powder 3/4 th cup sugar with 4 -5 green cardamom n blend with ripe flesh of 1 non fibrous mango,using as little  as 4 to 5 spoons of milk . 1 cup mango puree ,add few strands of saffron (optional) .11/2 cup of sieved maida ,add little at a time n mix in one direction ..add cashew pieces mix , pre - heat oven at 180 *c ..grease a pan n dust ,pour batter n level with back side of d spoon ..sprinkle generously cashew pieces ..slightly press them in batter ..drizzle butter or ghee n bake for 25 to 30 mts .

Water Melon rind dosa ..d perfect blend of spice n sweet !! with bellary stlye green chutney ! 

  • Dosa rice-1 cup
  • Chopped watermelon rind -1 cup heaped 
  • Puffed rice-1 cup 
  • small piece of jaggery 
  • small piece of ginger 
  • Green chilly -1 or 2 
  • Grated coconut -1/4 th cup
  • Fenugreek seeds/Methi seeds-1tsp
  • salt to taste 

Method 

Soak Dosa rice n methi seeds for 2 hrs n grind it along with chopped watermelon rind  , grated coconut,green chilly, ginger , jaggery  n puffed rice ( previously soaked in water for 10 mts ) to a fine thick batter n ferment the batter overnight, add salt ! 

Heat the dosa pan ,smear oil n add a ladle full batter ,dont spread the batter too much n cook on one side 

Serve hot with ghee/butter /chutney !

'Khubani ka Meetha' A Hydrabadi delicacy !

'Khubani ka Meetha' A Hydrabadi delicacy ! 

  • Dried Apricots -1 cup 
  • Sugar- 2 tsp 
  • Fresh cream  -3 tsp
  • Vanilla essence -1/4 th tsp 

Method

Soak dried apricots in water overnight such that they swell completely by morning.   De-seed the apricots and keep the seeds aside. Melt sugar in a non-stick vessel and immediately stir in the Apricots; cook for a couple of minutes and stir vigorously for another couple of minutes as the apricots begin to darken in the caramelising process; Now add in the water in which the apricots were soaked over night and reduce the heat to Sim flame , cover and cook for 10 minutes till the water boils and thickens completely.

In the meantime, crack open the seeds to find the 'badam' ,like seeds ,u can use them whole or chop them ..add this to d cooked stuff along with  of cream and vanilla essence .


cool n Now refrigerate the 'khubani' 

Note: u can serve it garnished with ice cream  and chopped dry fruits if u like it that way 

Peas Puloa

Peas Puloa 
  • 1 cup- long grained rice 
  • 1 cup- Green Peas 
  • 2 cups -water 
  • 2 sticks- cinnamon 
  • 2 -cloves
  • 1 -bay leaf 
  • 1 or 2 -green chillies 
  • 1 small onion  
  • Ghee-2 tsp 
  • Salt to taste 

Method 

In a pressure cooker ,add ghee, cinnamon, cloves, bay leaf, fry for a while n then add chopped onion n fry till pink , add chopped green chillies n fry for a minute ..add peas along with rice n fry for a minute ..add water ..close the lid n pressure cook it for 2 whistle !



Magge n Masingasange Koddel ! ( Mangalore cucumber n drumstick in coconut based gravy )



Magge n Masingasange Koddel ! ( Mangalore cucumber n drumstick in coconut based gravy ) 


  • Mangalore cucumber -chopped with skin to cubes-2 cups
  • Drumsticks- scrap n cut into 1 inch -1 cup 
  • Grated coconut-1 cup
  • Red chilly -4 to 5 or according to the taste ( fried in little oil )
  • Tamarind -tamarind seed size 
  • salt to taste 

Seasoning 
  • Crushed Garlic- 7 to 8 flakes 
  • coconut oil-1 tsp 
Method 

Cook Mangalore cucumber n Drumstick till tender 

Grind grated coconut, chillies n tamarind to a fine paste , add this ground masala to the cooked veggies along with salt n boil it ! 

Season with Crushed garlic in coconut oil ! 

Note : The gravy has to be slightly thick

Mango Lassi

Mango Lassi 


  • Mango pulp -1 cup 
  •  PlainYogurt/curds -1 cup 
  •  Milk-1/4 th cup
  • Sugar -1 tblsp 

Method

Blend together mango pulp,  sugar, milk,  yogurt ,blend well for few seconds until they turns frothy .

Serve chilled !

  • Chopped spinach -1 Cup
  • Bread crumbs-1 cup
  • Cottage cheese-11/2 cup
  • Onion -1 
  • Garlic flake-1 or 2
  • pepper powder-1/2 tsp or according to the taste 
  • Chopped coriander leaves-3 tsp 
  • salt to taste 

Method 

In a bowl add chopped spinach, crumbled cottage cheese, finely chopped onion n garlic, bread crumbs, pepper powder, coriander leaves n salt  , mix well n shape them like tikkis n deep fry ! 

Serve hot with tomato sauce !

Gobhi lolipop Tawa fried ! 




  • Cauliflower florets with long steam- 10 /12 piece
  • Rice flour- 3 tsp
  • Cornflour -2 tsp
  • Ginger and Garlic paste- 1 tsp
  • Red chilly powder- 1 tsp
  • Lemon juice- 1 tsp
  • Water-1 tsp or a required 
  • Salt to taste 
Method 
Boil water n add cauliflower florets to the boiled water with salt n turmeric powder .. keep covered for sometime
Drain the Cauliflower florets, pat dry and keep aside.
 In a bowl add Rice flour, red chilly powder, corn flour, ginger  garlic paste, lemon juice, salt Sprinkle little water n mix well  , keep aide for 10 mts. 

Heat a tawa n smear little oil to it n place the  cauliflower florets and cook till done .. remove them n wrap the  cauliflower florets long stem with foil paper and serve hot.

 

Amarkand n Pooris !

Amarkand n Pooris !

For Pooris 
  • 1 Cup-wheat Flour 
  • 1/2 Cup-Water 
  • salt to taste 

Method 
In a bowl add the wheat flour , salt n water n knead to a dough ..Poori dough should be harder than chapathi dough, as this wont soak the oil much ! roll out the pooris immediately as soon as the dough is made , . If you keep the dough for a long time then the pooris will soak up lot of oil... 

Amarkand 
  • Ripe Mango -2
  • Milk - 1 litre
  • lime juice -1/4 th tsp
  • Sugar-1tsp 
  • cardamom powder -1/4 th tsp

Method
Boil milk .while boiling add lime juice..when milk curdles ..switch off d flame n keep covered for sometime ..once the milk fat has separated from the whey , pass this through muslin cloth n tie it ! keep this overnight , so that all the water is drained out ..

Prepare mango puree n keep aside 

in a bowl add the mango puree, hung stuff , sugar n beat well ... add in powdered cardamom n serve chilled ! 


Note: can use hung curd , i had spoilt milk hence went for the above process !!!!

Fruit Salad

Fruit Salad 
  • Mango puree-1 glass 
  • coconut milk -1/4 th cup
  • Powdered Jaggery -1 tsp
  • Mixed fruits like Pomegranate,.grapes, apples , banana etc -1 glass 
Method
In a bowl add mango puree, coconut milk, powdered jaggery n mix well .. add in chopped fresh fruits n refrigerate it for an hour .. 

serve chilled !


Instant Rulava /Bombay rawa/Upma Rawa/Semolina Shevai with Mushroom Songa with Ground Masala .(.Mushrooms cooked in Spicy dry Masala )



Instant Rulava /Bombay rawa/Upma Rawa/Semolina  shevai with Mushroom  Songa with Ground Masala /Mushrooms cooked  in Spicy Dry Masala 

  • Bombay rawa /semolina -2 cup's
  • water- 4 to 5  cup's 
  • Grated coconut-1 cup heaped 
  • salt to taste
Method
Dry roast semolina till it gives an aroma n keep aside

Grind grated coconut to a very fine paste .

in a kadai, boil water, add salt , roasted semolina n ground grated coconut  ,stir continuously till it forms a dough .. apply little oil to the palms n knead the dough well n form into balls n steam it for 10  to 15 mts 

Grease Idiyappam/shevai   mould ,add the steamed ball n press it gently ! 

Spread on a wet squeezed cloth . 


Mushroom  Songa with ground masala .(.Mushrooms cooked  in spicy dry Masala )

  • Mushrooms- 1 packet 
  • Onions - 1 huge or 2 small  
  • Coriander seeds -2 tsp ( not roasted )
  • Roasted dry red chilly - 3 short n 8 long
  • Tamarind - Tamarind seed size
  • Salt to taste ..
Method 
wash n clean the mushrooms n chop them .. 


Grind roasted dry red chillies , coriander seeds n tamarind to a very fine paste !

In a kadai add 2 tsp oil , chopped onions and fry till reddish brown , add the ground paste and fry till the raw smell goes ,add salt , mushrooms n a very little water  , keep covered n cook till done !




Rajasthani Mirchi Bajji .. Khatta, Meeta aur Tikkha ..

Rajasthani Mirchi Bajji .. Khatta, Meeta aur Tikkha .

  • Banana chillies-5 to 6 
  • Gram flour/Besan-  6 to 7 tsp 
  • Turmeric powder- 1/2 tsp
  • Coriander powder-1 tsp
  • Hing /asafoetida -2 pinch 
  • Lime juice-1/2 tsp
  • Oil - 1 tsp 
  • Sugar-1/2 tsp 
  • salt to taste 
Method
Wash n slit Banana chillies n keep aside 

In a bowl add Besan, turmeric powder, coriander powder, hing, lime juice, salt , sugar n oil n mix well .. 
fill this mixture in d slit chillies ..

in a kadai add a tsp of oil n place these stuffed chillies , close the lid n cook on low flame for about 5 to 6mts or till done !

Whole Wheat Sweet n Spicy Dosa !



Whole Wheat Sweet  n Spicy  Dosa ! 
  • Whole wheat -1 cup
  • Grated coconut- 3/4 th cup 
  • Green chillies -3 or according to the taste 
  • Ginger -1/2 inch piece 
  • Jaggery marble size ...2 can increase if want more sweeter 
  • salt to taste 

Method 
Just Wash whole wheat ( no need to soak ) n directly grind it along with chillies, grated coconut, ginger n jaggery to a semi coarse  batter  .. remove the batter n add salt .

Heat dosa pan ,smear oil n pour ladle full batter , close the lid n roast on both the sides ! 

serve hot with butter /ghee 

Note : no need to ferment the batter n make sure to  grind in a wet grinder
