Tilwali Mint Rotti's,Cabbage Upkari /Stir Fry Mixed vegetable in White sauce,Dhal Soup ,Crispy Baby Corn Fries n Carrot Halwa /Gajjar ka halwa .

Tilwali Mint  Rotti's,Cabbage Upkari /Stir Fry 
Mixed vegetable  in White sauce,Dhal Soup ,Crispy Baby Corn  Fries n Carrot Halwa /Gajjar ka halwa .

Tilwali Mint  Rotti's
  •  Whole Wheat Flour .. 1 cup
  •  Salt to taste 
  • Water as needed to prepare a soft dough .
  •  White Sesame Seeds ...2 tsp 
  •  Chopped mint  leaves ... 1/4 th cup
  •  Ghee to roast Rotti's . 

 In a bowl add wheat flour, salt n mix well ...add water little by little n need to a soft dough ...set aside for 1/2 an hour . . 

Knead again n make equal sized balls ... 

Dust a platform , place the dough ball n roll into round rottis, sprinkle white sesame seeds n chopped mint leaves on it n press gently .. 

Heat a tawa , place this rotti on it n cook on both sides adding little ghee ... 

Cabbage Upkari /Stir Fry 

  •  Cabbage ...1 ( Medium one )
  •  Oil.. 2 tsp 
  • Mustard Seeds ..1/2 tsp
  •  Urid dhal..1 tsp 
  • Green Chilly ... 3  
  • Red chilly ..2 broken 
  • Sugar ..1 tsp 
  •  Grated coconut ... 1/4 th cup 
  • Salt to taste .
Wash n remove the cabbage layers n soak it in salt water for about 20 mts n then wash the leaves in running tap water . 

Chop the cabbage layers  . Slit green chillies .

In a kadai add oil , splutter mustard seeds, add urid dhal n fry till brown .. add slit green chillies n broken dry red chilly n stir for few seconds , add chopped cabbage , sugar n stir for few seconds n  then add very little water , salt , cover n cook till done .. dont over cook but retain the crunchiness of cabbage . 

Garnish with grated coconut n mix well .. 

Mixed vegetable  in White sauce

To prepare white sauce 
  • Butter- 2 tbsp
  • Maida -1 tblsp 
  • Milk-1/2 cup
  • Pepper powder-1/4 th tsp
  • Salt

In a bowl add Maida , pepper powder,  salt n milk, Mix well n ensure no lumps are formed n it should be watery .

Take a non stick pan n melt butter in it . Carefully add the flour mix n stir continuously ... till the sauce reaches bit thick consistency ... make sure its not too thick ! 

Pre boil vegetables like peas, carrot, baby corn , beans ,capsicum , Tomato ( Hard ones n remove the seeds ) ,cabbage etc  

In a kadai add olive oil , kasuri methi, ground green chillies , the boiled vegetables n sauce ..mix well , garnish with coriander leaves .

Dhal Soup 
  • Moong Dhal -1/2 cup 
  • Water-3 cup's
  • Tomatoes-2, chopped 
  • Ghee-2 tsp 
  • Crushed cloves -2  
  • Garlic flakes -4 to 6 , finely chopped 
  • Onion Chopped finely -1/4 th cup 
  • Red chilly powder -1/2 tsp 
  • Salt to taste .
  • Butter -1/2 tsp 

Wash moong dhal n soak it for 1/2 an hour .

Pressure cook moong dhal along with chopped tomatoes , cool n churn it .Add salt , water for consistency n boil for few seconds . 

Heat ghee in a pan and add  crushed cloves N fry for few seconds , Add chopped garlic flakes n fry till reddish n raw smell goes , add chopped onions n fry till reddish brown .Add chilly powder n pour this over cooked dhal . . Add butter just before serving . 

Crispy Baby Corn  Fries 
Baby Corns -8 
Rice flour -3 tsp 
Corn flour -2 tsp 
Red Chilly powder- 1 tsp 
Hing /Asafoetida - 2 pinch 
Turmeric powder -1/4 th tsp 
Salt to taste 
Oil for deep frying

Slit baby corm .

In a bowl add  Rice flour, corn flour, red chilly powder, hing, turmeric powder  n salt .. Add the slit baby corns n mix well ..Sprinkle little water n marinate for few mts . 

Heat oil in a kadai , drop in marinated baby corns n deep fry till crisp few at a time  

Carrot Halwa /Gajjar ka halwa .
  • Carrots- medium 8 to 10 
  • Ghee- 3tbsp 
  • Milk-2 cups
  • Grated Khoya-1 cup
  • Sugar-1/2 or 3/4 th cup or according to the sweetness 
  • Roasted Cashew nuts n Raisins ( in little ghee ) -2 tsp each

Wash , peel n grate carrots .

In a kadai add ghee ,melt it n then add grated carrots n cook for about 5 mts n then add milk n cook it till the carrots are well cooked n the milk evaporates .Add in grated khoya n sugar n cook again for about 5 mts stirring continuously ! 

Once done ...add in cardamom powder n mix well , then garnish with cashew nuts n raisins .

Egg less Pineapple Pastry

Egg less Pineapple Pastry
  • All purpose flour /Maida -200 gms
  •  Condensed Milk -200 gms
  • Unsalted Butter -1/2 cup at room temperature .
  • Baking Powder- 1 tsp
  • Baking Soda -1 tsp
  • Pineapple essence - 1 tsp
  • Fresh Pineapple Juice -1 cup

Sugar Syrup

  • Sugar -2 tbsp
  •  Water -1/4 th cup

Method .
  In a thick bottomed pan , add sugar n water ..boil till sugar melts  . Keep aside to cool

For Frosting

  • Fresh cream -300 ml
  • Powdered Sugar -5 tsp
  • Pineapple Essence -1 tsp

Keep cream in freezer for about 1/2 an hour .

Add powdered sugar n pineapple essence to the chilled cream n beat well till the cream is thick n forms peak . Keep in fridge till use.

Pineapple pieces -1 cup
Cherry -8 to 10. halved

Sieve the flour, baking soda n baking powder . Keep aside

In a bowl add the condensed milk, butter, pineapple essence , pineapple puree.Then add little by little flour mix n mix gently .

Grease a cake tin , dust it . Pour the cake mix .

Pre-heat oven n bake the cake at 180 C for 20 to 25 mts  or till the tooth pick inserted comes out clean..

Allow the cake to cool completely before frosting .

Gently Slice  the cake into half using a sharp knife  n place the other half on plate or a platform .

On one half of the cake , drizzle 4 to 6 tbsp of sugar syrup n then spread the frosted cream evenly on it , then on it  place the other half of the cake n   drizzle sugar syrup n then the frosted cream same way as the 1st half . Then apply the frosted cream evenly all over the cake . Level the cream with spatula .

 Decor the cake with border with border using frosted cream n place pineapple  pieces topped with halved cherry .

Raw Banana Tawa Rawa Roast n Terrace Grown Double Beans Hinga Udka Humana / Cooked in Hing based Gravy

Raw  Banana  Tawa Rawa Roast  n Terrace Grown Double Beans  Hinga Udka Humana / Cooked in Hing based Gravy 

Raw  Banana  Tawa Rawa Roast 
  • Raw Banana- 2 
  • Red chilly powder- 2 tsp
  • Hing /asafoetida- 1/4 th tsp 
  • Rice flour - 1 tblsp 
  • Salt to taste 
  • Semolina /Rawa - 1 tblsp 
  • Oil as required to shallow fry 

Wash  remove the skin of raw banana roughly n Slice them   lengthwise .
In a bowl add the sliced  raw banana , red chilly powder, turmeric powder, rice flour , hing n salt .. mix well .

Run the marinated slices over rawa .

Heat a tawa , smear little oil n shallow fry on both sides till crisp.

    Terrace Grown Double Beans  Hinga Udka Humana / Cooked in Hing based Gravy 
    • Double Beans -2 cup's
    • Salt to taste

    To Grind to a fine paste 
    • Grated Coconut- 2 cup's
    • Roasted dry red chilles-4 to 6 
    • Tamarind -Tamarind seed size
    • Asafoetida -1/2 tsp ( Add in 2 tsp water n mix well ) 
    • Coconut oil -2 tsp

    Wash n pressure cook fresh double beans for just one whistle till soft but not mushy .

    Grind grated coconut,roasted dry red  chillies n tamarind to a fine paste .Add enough water to the ground masala n make it to a pouring consistency .add salt and cooked double beans , boil it  .. Switch off n add hing water  n coconut oil .

     ..Keep covered for sometime before serving . 

    Ukde Seeth , Birinda /Kokam Saaru ,Masinga saanga n Batate Upkari, Kuvale Pulikoddel, , Podale bee sanapolo , Roasted Happolu n Pappodu with Curds .

    Birinda Saaru /Dried Kokam Petals Plain Rasam 

    • Birinda Sola /Dried Kokam Petals ..1 fist 
    • Green chilles ... 2  slit 
    • Jaggery... Gooseberry size
    •  Salt to taste 


    • Oil ...1 tsp
    •  Mustard seeds ..1/2 tsp 
    •  Urid dhal...1/2 tsp 
    • Curry leaves ..1 sprig 
    • Dry red chilly ...2 broken 


    • Coriander leaves .. 2 tsp chopped 

    Wash the Dried kokam Petal to remove dirt n soak it in enough water for about 1/2 an hour , Boil this well along with slit green chilly n jaggery ... Add salt , then season n later garnish 

    Batate n Masinga sange upkari ( Potatoes with drumsticks stir fry )
    • Potatoes - 2 
    • Drumstick -1 
    • Oil- 2 tsp
    • Mustard seeds-1/2 tsp
    • Dry red chilles- 3 broken 
    • Salt to taste 

    Wash both Potatoes n drumstick ...

    Peel the potatoes n chop them lengthwise

     Cut the drumstick crosswise into 2 n 1/2 long pieces.. remove the fiber roughly .

    In a kadai add oil n splutter mustard seeds n then add torn dry red chilles , chopped potatoes  n cut drumsticks along with little water n salt ... keep covered n cook well .

    Puli Koddel ! ( Sweet, Sour, and Spicy Coconut gravy of Ash Gourd ) 

    • Ash gourd-1/2 kg
    • Grated coconut- 3 tbsp
    • Red chillies-6 to 8 
    • Coriander seeds-3 tsp
    • Fenugreek seeds-2 pinch 
    • Mustard seeds-1/4 th tsp 
    • Cumin seeds-1/4 th tsp
    •  Black gram dhal /Urad dhal,-2 tsp
    •  Bengal gram dal /Channa dal,-2 tsp
    • Turmeric powder-1/4 tsp
    • Raw Rice- 1 tsp
    • Jaggery- Lemon size 
    • Thick Tamarind pulp-2 tsp 
    •  Til (Sesame seeds)-1tbsp
    • Salt- to taste
    • Oil-2 tsp
    • Mustard seeds-1/2 tsp
    • Curry leaves -1 sprig .

    Wash, peel and cut the ash gourd into medium pieces and boil it with salt ,jaggery and tamarind pulp . Dont over cook it . 

    In a kadai, dry fry ( DONT ADD OIL ) red dry chillies, grated  coconut , coriander seeds, urad dhal, channa dhal, mustard seeds, fenugreek seeds, raw rice, cumin seeds, thil  separately till they are golden in color .Cool it 

    Grind together all the dry roasted ingredients along with turmeric powder to a coarse powder  .

    Add the ground power to the cooked ash gourd , add little water n then boil well !  

    Finally give the seasoning 

    Snake Gourd Seed Sannapolo /Spicy Dosa 

    • Snake Gourd Seeds ..1 cup 
    • Raw Rice ... 1 cup 
    • Dry red chilly ..4 to 5 
    • Grated Coconut ..1/2 cup 
    • Tamarind ..Tamarind seed size 
    • Salt to taste 

    Wash n soak raw rice for about 1/2 an hour . 

    Drain n grind it with dry red chilly, tamarind n grated coconut n just before removing the batter add snake gourd seeds n grind for just a minute or two .  remove n add salt . 

    The ground batter should be coarse n thick .

     Heat a dosa tawa , drizzle oil n spread the batter patting with  fingers dipping fingers in water n cook on both sides .  

    Mixed Soppu Khara Pongal, Green Gram Usli ,Green Chutney n Salad .

    Mixed Soppu Khara Pongal, Green Gram  Usli ,Green Chutney n Salad .

     Mixed Soppu Khara Pongal

    • Raw Rice- 1 cup
    • Yellow Split Moong Dhal- 1/2 cup
    • Mixed greens like methi leaves, palak leaves , mint leaves, green amaranths leaves  - 1/4 th cup each 
    • Tomato-1 
    • Turmeric powder- 1/4 th tsp 
    • water- 3 cups 
    • Salt to taste


    • Ghee- 2 tsp 
    • Mustard seeds-1/2 tsp
    • Pepper corns- 1/4 th tsp 
    • Cumin seeds-1/2 tsp 
    • Green chillies chopped- 2 
    • Curry leaves-1 sprig 


    • Grated coconut- 1 tblsp 


    Wash all the greens well n chop them roughly . 

    Wash raw rice n moong dhal .

    In a pressure cooker , melt ghee n splutter mustard seeds, then add cumin seeds, pepper corns n fry for a while , add chopped green chilles  , curry leaves n again fry for a minute . Add tomatoes n cook till  the raw smell goes, add the roughly chopped greens, rice, moong dhal, turmeric powder , water n salt ..mix well n pressure cook for 2 whistle . Do the garnishing .

    Serve hot with little ghee on the top. 

    Green Gram  Usli 

    • Whole green gram - 1 cup
    • Oil - 2 tsp
    • Onion- 1 
    • Green chillies- 2 or 3 chopped
    • Dry Red Chilly -2 , broken 
    • Lime Juice - 1 tsp 
    • Salt to taste .

     Wash  whole green gram n pressure cook it for 4 to 5 whistle ,till cooked n not mushy 

    In a kadai add oil , add chopped onions n fry till pinkish red .. Add chopped green chilles n fry for a while ,  then add torn dry red chilly n stir again for few seconds n then add cooked  green gram along with salt  n cook for a minute  .. switch off and add in lime juice n mix well . 

    Green Chuteny

    • Coriander leaves-1 cup
    • Mint leaves-1/4 th cup
    •  Green chilly-2
    •  Ginger-1/2 inch
    • Lime juice-1 tsp
    • Salt to taste
    Grind all the above to a fine paste with little water .

    • Orange -1 
    • Cucumber -1 
    • Onion -1 
    • Tomatoes -2 
    • Green chilly -2
    • Chaat Masala -1/2 tsp 
    • Pepper Powder-1/4 th tsp 
    • Lime Juice -2 tsp
    • Coriander leaves -1/4 th cup chopped . 
    • Salt to taste 

    Peel the orange, remove the skin of the segment's, remove the seeds n chop it .

    Peel the cucumber , remove the seeds n chop it .

    Chop onion , tomatoes n Green chilly . 

    In a bowl add all the above chopped vegetables n Fruit . Add chat masala, pepper powder, lime juice , chopped coriander leaves n salt .Mix well .

    Ukde seeth,,Home grown vaali Ambat, Tomato Rasam, Kadgi Podi /Raw Jack fruit fries with ground masala ,Broken Wheat n Chana Dhal Khichdi n Masala Majjige /Spicy Buttermilk

    Ukde seeth,,Home grown vaali Ambat, Tomato Rasam, Kadgi Podi /Raw Jack fruit fries with ground masala ,Broken Wheat n  Chana Dhal  Khichdi n Masala Majjige /Spicy Buttermilk

    Vaali  Ambat ( Malabar  Spinach with dhal  coconut based gravy ) 
    • Malabar Spinach ( Vaali )-1Bunch  
    • Onion - 1 Medium 
    • Thoor dhal- 1/4 th  cup 

    To grind

    • Grated Coconut- 1 cup
    • Roasted red dry chilles-4 or according to the spice 
    • Tamarind- Tamarind seed size 
    • Salt to taste 
    • Oil - 2 tsp
    • Chopped onion - 1 medium 

    Roughly chop Malabar  spinach  with tender stem.  

    Pressure cook Thur dhal , mash it well ..keep aside 

    Cook chopped malabar spinach along with chopped onion ..n cook till tender .

    Grind grated coconut, roasted chilles, tamarind to a fine paste .

    Add the ground paste  to the cooked stuffs along with cooked dhal . Give a boil n then do the seasoning .

    Tomato Rasam 
    • Tomatoes ..2 huge fully ripened 
    • Rasam Powder..1 tsp 
    • Tamarind ..marble size 
    • Green chilly ..1 
    • Jaggery ..a small piece 
    • Salt to taste
    • Oil..1 tsp 
    • Mustard seeds ... 1/2 tsp 
    • Curry leaves ..1 sprig 

    Wash n boil the tomatoes , cool, peel the skin n make puree of it . Add water for rasam consistency , add slit green chilly , tamarind , jaggery ,salt n rasam powder n boil well . Then give the seasoning .

    Kadgi Podi /Raw Jack fruit fries with ground masala .
    • Raw Jack fruit slices- 6 to 8
    • Raw Rice- 1 cup 
    • Dry red chillies- 6 to 8
    • Asafoetida /hing-2 pinch 
    • salt to taste 
    • Oil for deep frying 
    Pressure cook the raw jack fruit slices for 1 whistle n keep aside

    Soak Raw rice in water for about 2 hours .

    Grind the soaked rice along with red chillies , hing n salt to a thick batter ( sprinkle little water while grinding )  
    Apply the ground batter to the cooked jack fruit slices n keep aside for 1/2 an hour .

    Heat oil in a kadai and deep fry the marinated jack fruit slices till crisp .

    Broken Wheat n  Chana Dhal  Khichdi 

    • Broken Wheat /Dalia ..1 cup
    •  Water to cook broken wheat ... 2 cup's 
    • Chana Dhal..1/2 cup
    •  Jaggery ... Grated 1 to 11/2 cups ,according to sweetness 
    • Grated Coconut ...1/2 cup
    •  Ghee ... 1 tblsp 
    • Cashew nuts broken .. 10 
    • Raisins...10 

    Wash Broken wheat N Chana Dhal ..

    Pressure cook broken wheat for 2 whistle 

    Soak chana dhal for 10 mts n cook in little water till cooked but not mushy ... 

    In a kadai add cooked broken wheat , cooked chana dhal , grated jaggery n cook till it melts ,then add grated coconut n stir well ..

     Heat a pan , melt ghee n roast cashew nuts , raisins n add it to the above Khichdi  n mix well .. 

    Masala Majjige /Spicy Buttermilk 
    • Curds -2 cups
    •   Water - 4 cups 
    • Coriander leaves - 1/4 th cup 
    • Cumin seeds -1 tsp 
    • Ginger -1/2 inch piece
    • Green chilly -2 
    • Salt to taste  
    In a blender , add curds , coriander leaves, cumin seeds, ginger piece, green chilly n salt, blend it ..remove n add water .
