Hitkida Avrekalu Spicy Song / De skinned Hyacinth Beans with Ground Masala

Hitkida Avrekalu Spicy Song  / De skinned Hyacinth Beans with Ground Masala 
  • Avrekalu/  Hyacinth Beans - 1 cup heaped 
  • Potato -1 
  • Oil - 1 tblsp 
  • Onion - 1 Huge 
  • Tomatoes-2  
  • Salt to taste .
To grind to a fine paste 
  • Coriander seeds -2 tsp ( not roasted )
  • Roasted dry red chilly - 3 short n 8 long
  • Tamarind - Tamarind seed size

Method 
Peel Avrekalu n soak it in enough water for about 5 hours .Press each soaked seeds n remove the outer skin . set aside 


Wash n peel potato n chop into 2 inch cubical's 

Grind all the ingredients meant to grind to a fine paste .

In a kadai add chopped onion n fry till transparent . Add chopped tomatoes n fry till the raw smell goes n it becomes mushy . Add the ground paste n fry for  a while ..add the de skinned avrekalu , cubed potato , water ,salt n cook till done  .

Avrekalu Ambat( Hyacinth Beans cooked in Coconut Based Gravy)

 Avrekalu  Ambat( Hyacinth Beans cooked  in Coconut Based Gravy) 

  • Tender Avrekalu/ Hyacinth Bean - 1 cup 
  •  Potato -1. peeled n cubed
  • Onion -1, chopped   
 To grind the masala 
  • Grated coconut-2 cup's
  • Roasted dry red chilles- 4 to 6  
  • Tamarind - Tamarind seed size
  • Salt as per taste 


Season 

  • Oil - 2 tsp
  • Onion -1 , chopped 


Method 
Wash the tender Avrekalu n pressure cook along with cubed potato n onion  with salt . 

Grind grated coconut along with roasted dry red chilles, tamarind n salt to a fine masala paste  

Add the ground Masala to the cooked stuffs n boil n then do the seasoning

Avarekalu Masala Vada

Avarekalu Masala Vada 

  • Tender Avarekalu/field beans – 1 cup
  • Split chickpeas/ chana dal – 3.4 th  cup
  • Onion – 1 finely chopped
  • Red chilies – 2 
  • Green chilly -2 
  • Asafoetida – a generous pinch
  •  Ginger – 1 inch piece
  • Curry leaves -2 sprig
  • Coriander leaves chopped - 1 tblsp 
  • Mint Leaves - a few 
  • Salt to taste 
  • Oil – for  deep frying
Method 
Soak chana dhal for about 40 mts .  Drain the water completely and keep 2 tbsp separately.

Grind the soaked chana dhal  along with tender avarekalu, red chilies, green chilly , ginger piece ,.hing , curry leaves to a coarse paste . 

Remove the coarsely ground paste in a bowl , add the soaked 2 tbsp chana dhal , chopped onion , chopped mint n coriander leaves , salt n  mix well . 

Prepare small round balls of the ground paste , flatten a little. 

Heat oil in a deep kadai , and drop the flattened balls  in oil carefully and fry it on low flame for few minutes. when it turns golden brown on both sides , remove on tissue paper to drain excess oil .

Hitikida Avrekalu /De skinned Hyacinth Bean,Masala with Ground Gravy .


  • Hitikida Avrekalu /De skinned Hyacinth Bean-1 cup 
  • Potato - 1 Huge , peeled n chopped to medium chunks
  • Purple Round Brinjal /Dundu Badane -1 , chopped . 
  • Tamarind Pulp -1 tsp 


To grind to a paste 


  • Onion -1 ,Medium , chopped roughly 
  • Tomatoes -2,chopped
  • Garlic -1 pod , peeled 
  • Grated Coconut -3 tsp
  • Rasam Powder -2 tsp 
  • Coriander leaves - a few sprigs  
  • Salt to taste 

Seasoning 

  • Oil-2 tsp
  • Curry leaves -1 sprig 
  • Onion-1 ,chopped 
  • Garlic flakes crushed -4 
  • Dry red chilly -2 

Method 
Grind all the ingredients meant to grind to a fine paste . 

In a kadai add oil ,add chopped onion n fry till reddish brown, add crushed garlic n fry . Add curry leaves n torn dry red chilly n roast for few seconds . Then add Hitikida Avrekalu /De skinned Hyacinth Beans n fry till the raw smell goes , Then add chopped potato chunks  n roast for few seconds , add ground paste n fry till raw smell goes, add tamarind pulp n enough water along with salt n boil , when 1/2 cooked add the  chopped brinjal n cook till done .

Hitikida Avarekalu/Deskinned Hyacinth bean Chitrana /Lemon Rice 


  • Cooked Rice ..2 cup's 
  • Hitikida Avarekalu/Deskinned Hyacinth bean -1 cup  
  • Oil ... 4 tsp  
  • Mustard seeds-1/2 tsp 
  • Urid Dhal -1 tsp 
  • Onion -1 , chopped 
  • Curry leaves-2 sprig
  • Green chillies - 6 to 8  chopped or according to the spice 
  • Coriander leaves chopped .. 1 tblsp 
  • Turmeric powder-1/4 th tsp 
  • Grated coconut -1 tblsp 
  • Lime juice- 1/2 of one lemon 
  • Salt to taste 

Method 
  In a vessel add water n add 
Hitikida Avarekalu/Deskinned Hyacinth bean along with little salt n cook till soft but not mushy . once cooked, drain the water completely n set aside 


In a deep bottomed kadai add oil, add mustard seeds , once it crackles , add urid dhal n fry for few seconds . Then add chopped onion n fry till pinkish  red, add chopped  green chillies,  curry leaves  n chopped coriander leaves n saute for some time ...  then add turmeric powder , cooked Hitikida Avarekalu/Deskinned Hyacinth bean, cooked  rice  ,salt  n mix well . Add grated coconut , switch off and add the  lime juice .. mix well n serve hot .

Hitikida Avarekalu Masala Saaru


  • Hitikida Avarekalu /Deskined Hyacnith beans - 1 cup 
  • Red Chilly Powder - 1-1/2 tsp . Kashmiri laal n adjust according to the spice . 
  • Coriander powder- 2 tsp 
  • Turmeric powder -1/4 th tsp 
  • Garam Masala Powder - 1/2 tsp 
  • Salt to taste 


  To grind to a paste 


  • Grated coconut -  1 tblsp
  • Onion - 1/2 of 1 
  • Tomato -1/2 of 1
  • Cloves -4
  • Cinnamon - 1 inch stick
  • Coriander leaves - a few leaves 
  • Roasted Gram /Hurikadale - 1 tblsp
  • Garlic flakes - 5 
  • Ginger . 1/2 inch piece 

Seasoning - 1 


  • Oil - 3 tsp 
  • Mustard seeds -1/2 tsp
  • Cumin seeds - 1 tsp 
  • Curry leaves - 1 sprig 
  • Onion - 1 , medium chopped 
  • Tomatoes - 2 small ,chopped 

Seasoning- 2


  • Oil - 1 tsp 
  • Crushed  Garlic flakes - 3 to 4 


Method 
Grind grated coconut ,onion , tomato , Cloves, Cinnamon , Coriander leaves ,Roasted gram , garlic flakes n ginger to a fine paste .

In a kadai add oil ,splutter mustard seeds. add cumin seeds , curry leaves n stir for few seconds . Add chopped onion n fry till pinkish red , add chopped  tomatoes n salt ..cook till mushy . Add the ground masala paste n fry till oil leaves the masala . Add hitkida avrekalu n stir  for few seconds ,Add all the powders , water as needed n cook till the hitkida avrekalu turns soft .Heat oil in a small pan , add crushed garlic flakes n roast till its brown ..Add this seasoning over the gravy n garnish with coriander leaves .

Avrekalu / Hyacinth bean Masala Biryani

Avrekalu / Hyacinth bean Masala Biryani 


  • Tender Avrekalu / Hyacinth bean .. 2 cups 
  • Raw Rice - 1 cup 
  • Water -2 cups
  • Ghee - 1 tblsp 
  • Cloves .3 to 4
  • Cinnamon stick -1 inch piece 
  • Star Anise -1 
  • Whole Green Cardamom -2 
  • Bay leaf -1 
  • Marati Moggu -2 
  • Saunf/ Fennel seeds -1/2 tsp 
  • Onion -1 huge 
  • Ginger Garlic paste -1 tsp 
  • Green chilly - 2 
  • Tomato -1 
  • Coriander leaves chopped - 1/4 th cup
  • Mint Leaves  chopped .1/4 th cup 
  • Red Chilly Powder - 1 tsp 
  • Coriander powder -2 tsp 
  • Turmeric powder-1/2 tsp 
  • Garam Masala Powder -1/2 tsp
  • Curds - 2 tsp 
  • Salt to taste 


Garnish 

  • Lemon juice -2 tsp 



Method
Chop onion, tomato n green chilly 

In a pressure cooker add ghee n add in cloves, cinnamon stick , whole green cardamom, star anise, bay leaf, Marati Moggu, fennel seeds n stir for few seconds .Add chopped onion n fry till transparent , Add ginger garlic paste , add chopped green chilly n stir fro few seconds. Add chopped tomato n then cook till mushy . Add chopped mint n coriander leaves n stir till it wilts .. Add all the powders n stir for a second  .. Add Avrekalu stir for a minute till the raw smell goes, add raw rice ,curds , water , salt ..mix well n pressure cook for 2 whistles . Then garnish with lime jucie .Mix well 

Serve warm with Raitha .

Hitikida Avarekalu / Deskinned Hyacinth Beans n Fresh Menthya Soppu/Fenugreek Leaves Pulov 
  • Raw Rice - 1 cup 
  • Water -2 cup's
  • Hitikida Avarekalu /Deskinned Hyacinth Beans -1/2 cup
  • Methi leaves - 1/2 cup 
  • Ghee - 1 tblsp
  •  Whole green Cardamom - 2 
  • Bay leaf -1 
  • Cloves -2 
  • Onion -1 huge 
  • Tomato -1 
  • Turmeric Powder -1/4 th tsp 
  • Salt to taste 

To grind to a paste 
  • Grated coconut - 2 tbsp
  • Green chilly – 3 or  according to the spice 
  • Cinnamon - 2 inch stick
  • Cloves - 4 to 6 
  • Onion - 1 small  
  • Ginger – 1/2 inch piece 
  • Garlic cloves - 6 flakes 

Method 
Wash and chop methi leaves ( Better with hands )

Chop onion n tomato .


Grind all the ingredients meant to grind into a smooth paste with little water , remove n keep  aside.

In a pressure cooker add ghee. Add  bay leaf, whole green cardamom n saute for a while.Now add the chopped onion and saute till transparent. Add chopped tomatoes n cook till mushy . Add methi leaves n 
 Deskinned hyacinth beans/ avarekalu n stir for few mts , now add the ground masala paste.Saute till the  raw smell goes .add turmeric powder , rice n stir for few seconds n then add  water and salt , mix well n pressure cook for 2 whistle . 


Serve hot with Raita .

Avreakalu Podi Uttapam n Avrekalu Spicy Instant Songa

Avreakalu Podi Uttapam  n Avrekalu Spicy Instant Songa  

For Dosa Batter 
  • Dosa Rice-1 cup
  • Urid Dhal-1/2 cup
  • salt to taste 

Mix in a bowl 
  • Tender Avrekalu /Hyacinth Beans-1 cup ( Pressure cooked ) 
  • Chopped green chillies-3
  • chopped coriander leaves-1 fist 
  • Curry Leaves .. 2 sprig, chopped 

  • To sprinkle on Dosa 
  • Milagai Podi ..1 tblsp 

Method for dosa Batter 
Soak rice n urid dhal for 4 hours n then grind to a fine paste,add salt  n ferment the batter over night  .

Milagai Podi . 
  • Dry red chilly..1 cup 
  • Chana Dhal..1/2 cup 
  • Urid dhal ..1/2 cup 
  • Hing/Asafoetida -1/2  tsp
  • Oil-1 tsp 
  • Salt to taste 
Method 
In a kadai add oil  n fry hing, remove it n then fry separately red chillies, chana dhal n urad dhal .. cool and then grind all these to a semi coarse powder ,finally add salt n grind for a minute ..store in air tight bottle .

Method for mixing .
In a bowl add cooked Avrekalu, chopped green chillies,coriander leaves n curry leaves and keep it aside.

Method for making Avrekalu Podi Dosa .
Heat a tawa , smear oil n Pour a ladle full of dosa batter n dont spread too much , cook for a few seconds n then sprinkle the milagi Podi n  Sprinkle the mixture  on the dosa evenly, n roast on both the sides , adding little oil at the edges .

  • Tender Avrekalu/  Hyacinth Beans - 1 cup heaped 
  • Oil - 3 tsp 
  • Onion - 1 Huge 
  • Tomatoes-2 
  • Red chilly powder- 2 tsp or according to the spice
  • Coriander powder- 1 tsp 
  • Salt to taste .

Method 
wash n Pressure cook the tender Avrekalu for 4 to 5 whistle or till cooked but not mushy .  set aside 

In a kadai add chopped onion n fry till transparent . Add chopped tomatoes n fry till the raw smell goes n it becomes mushy . Add red chilly powder, coriander powder n fry for  a while ..add the pressure cooked tender  avrekalu , 1/2 cup water ,salt n cook till done  .

Avrekalu /Hyacinth beans Kootu
  • Avrekalu /Hyacinth Beans ..1 cup
  • Groundnut ..2 tsp  
  • Ghee ..2 tsp 
  • Water as required to cook 
  • Salt to tatse 


To roast n grind to a fine paste 
  • Oil ..2 tsp 
  • Urid dhal -2 tsp
  • Coriander seeds-1 tblsp
  • Chana dhal -1 tsp
  • Cumin seeds-1/2 tsp 
  • Methi /Fenugreek Seeds -1/4 th tsp
  • Peppercorns-1/2 tsp
  • Dry red chilly- 3 or according to the spice 
  • Poppy seeds -1 tsp 
  • White Thil /Sesame Seeds -1 tsp
  • Grated coconut ..1/2 cup
  • Turmeric powder..1/4 th tsp
  • Tamarind ..Tamarind seed size
  • Onion-1 medium
  • Garlic..3 flakes 

Seasoning 
  • Oil-1 tsp
  • Mustard seeds-1/2 tsp
  • Curry leaves -1 sprig  
Method
Wash Avrekalu  n set aside

Dry roast poppy seeds n white thil separately in sim flame  n keep aside to cool


In a pan add oil and roast urad dhal, chana dhal, coriander seeds, pepper corns , cumin seeds , methi seeds, and dry red chillies...take out n cool it

Chop onion roughly n peel garlic flakes 
Grind Dry roasted poppy seeds , white thil along with oil roasted urad dhal ,chana dhal coriander seeds, pepper corns, cumin seeds, methi seeds , dry red chilly ,chopped onion, peeled garlic flakes , grated coconut , turmeric powder n tamarind to a fine paste . 
In a kadai melt ghee n roast ground nuts n  avare kaalu for few minutes to remove rawness Add water and cook till soft.n tender. 
Add the ground paste to cooked stuffs  , water n boil . Then give the seasoning 
The consistency of the gravy should be  thick .

  • Avrekalu /Hyacinth beans ..1 cup heaped 
  • Oil..2 tsp 
  • Mustard seeds ..1/2 tsp
  • Urid Dhal..1 tsp
  • Chana Dhal ..1 tsp 
  • Onion ..1 
  • Green chilly--3 
  • Hing/Asafoetida ..a generous pinch 
  • Curry leaves ..1 sprig 
  • Turmeric powder ..1/4 th tsp 
  • Salt to taste 


Garnishing

  • Grated coconut ..1 tblsp
  • Coriander leaves chopped ..2 tsp
  • Lemon Juice ..2 tsp 
Method 
Wash n pressure cook avrekalu with salt for about 4 to 5 whistles or till soft but not mushy . Drain the cooked water . 

Chop onion n slit green chilly 

In a kadai add oil , splutter mustard seeds , add urid dhal n chana dhal n roast for few seconds ... add slit green chilly , curry leaves n hing ..stir again for few seconds . Add chopped onion n saute till transparent , add cooked avrekalu , turmeric powder n cook for a while . Add grated coconut n chopped coriander leaves n toss well . switch off and add lemon juice .

  • Hitkida Avrekalu /  De skinned Hyacinth Beans ..1 cup 
  • Raw Rice ..1 cup 
  • Water ..2 cup's 
  • Ghee ..1 tblsp 
  • Cloves ..4 
  • Cinamon ..1 inch piece 
  • Green Cardamom pod ..3 
  • Onion ..1 chopped 
  • Salt to taste 


To grind to a paste 
  • Mint leaves ..1 bunch 
  • Coriender leaves ..1/2 bunch 
  • Onion ..1 medium 
  • Garlic Cloves ..6
  • Ginger ..1 inch piece
  • Cloves ..3 
  • Cinamaom stick ..1/2 inch 
  • Green chilly ..3 


Method

Now add the de skinned   avrekalu  fry till  the raw smell goes . Add rice n fry for a while , add water ,  salt n mix well ... pressure cook for 2 whistle .

Serve hot with raitha

Mixed Bele Avrekalu Rotti with Ground Masala  /Mixed Dhal Hyacinth Beans Rotti ...

  • Thur Dhal-1/4 th cup 
  • Moong Dhal-1/4 th cup
  • Chana Dhal-1/4 th Cup
  • Madras Thur Dhal (red coloured)-1/4 th cup
  • Hing -Generous amount 
  • Green chillies -3
  • Ginger.. 1/2 inch piece 
  • Wheat flour-1/2 cup
  • Rice flour -1/4 th cup
  • Grated coconut - 1 Tblsp heaped 
  • Coriander  leaves chopped ... 1/4 th cup 
  • Tender fresh Avrekalu /Hyacinth Beans. 1/2 cup 
  • Salt to taste ..
Method  Pressure cook Avrekalu for 1 whistle .. 
 
Soak all the Dhals for an hour n grind it along with green chillies , hing n ginger to a fine paste ..dont add water while grinding ! 

Remove the ground batter and add wheat flour n Rice flour , salt , grated coconut  chopped coriander leaves n cooked avrekalu ..n knead it to a dough !

Grease a plantain leaf or thick palstic sheet .. Take small portion of the dough n pat it with fingers into thin Rotti shape . 


Heat a tawa .. Drizzle  little oil n place the patted rotti on it n  roast on both sides applying oil .. 

Serve hot with chutney powder with tinge of oil/ ghee .

  • Zeera samba rice - 1 cup
  • Hitkida Avrekalu / De skinned Hyacinth Beans - 1 cup
  • Fresh Fenugreek leaves- 1 cup
  • Coriander leaves- 1/2 cup
  • Onions- 2 medium
  • Tomato-1 huge
  • Ginger Garlic Paste -1tsp 
  • Cloves- 3
  • Cinnamon stick - 1 inch piece
  • Green chilles- 2
  • Whole green cardamom - 1
  • Marati moggu-2
  • Bay Leaf -1
  • Javathri/ Nutmeg- a very small piece .
  • Red chilly powder- 1 tsp
  • Coriander powder-1tsp
  • Garam Masala - 1/4 th tsp
  • Turmeric powder-1/4 th  tsp
  • Coconut Milk - 1 cup
  • Water- 1 cup
  • Oil- 4 tsp
  • Salt to taste


Method

Add the chopped methi leaves n fry for sometime n then add the de skinned   avrekalu  fry till  the raw smell goes . Add all the powders n fry for a minute . Add rice, coconut milk, water , coriander leaves  salt n mix well ... pressure cook for 2 whistle .

Serve hot with raitha
