Paani Puri !





Paani Puri ! 

For Puris 
Fine Rawa /semolina -3/4 th cup
Maida -1/2 cup 
Urid dhal powder ( black gram ) -2 tsp ( level ) 
Baking powder-2 pinch 
ice cold water as needed
Salt to taste 

Method 
Dry roast urid dhal till golden brown n powder it in mixer .. 
Mix maida, rawa , urad flour ,salt n baking powder in a bowl ,add ice cold water n knead to a stiff dough . keep closed under wet cloth for 10 mts .Pat n knead again till the dough becomes smooth n elastic ..roll like chapathi , using a round biscuit cutter , cut small round n deep fry in batches till crisp !

Pani 
Water-4 glass 
Green chillies - 2 or according to the taste 
Mint leaves-1/2 cup
cumin powder-1 tsp 
pepper powder-1/4 th tsp
black salt - 3 pinch or according to the taste
thick tamarind juice-2 tsp 
finely chopped coriander leaves- 4 tsp  

Method 
Crush Green chillies, mint leaves in a mixer to a fine paste 
In a bowl add water, chilly mint paste, tamarind pulp , black salt, cumin powder, pepper powder, mix well  n then add chopped coriander leaves . 

Sweet chutney 
Tamarind -lemon sized 
Jaggery-5 tbsp 
seedless dates-5 ( chopped n cooked in little water ) 
Red chilly powder-1 tsp 
salt to taste 
water - 1/2 cup 

Method 
Soak Tamarind n jaggery  overnight 
in a bowl mix , tamarind jaggery mix, boiled dates mix , salt n red chilly powder ..   mix it well n then filter ! 

Stuffing 
Medium potatoes-5
Black chana/ chickpea  -1cup 
Mint leaves-2 fist 
green chilly -2 or according to the taste 
Red chilly powder-1tsp
coriander leaves chopped -3 tsp 
cumin powder-1/2 tsp 
salt to taste 

Method 
Soak black chana overnight 
Pressure cook potatoes .. cool , peel n smash them 
Pressure cook Black chana ..
Make a paste of mint n green chillies 
In a bowl add smashed potatoes  ,cooked black chana , chilly powder, cumin powder, chilly mint paste, salt n coriander leaves n mix well ! 

Serving 

Make a hole with thumb on top of each puri , put little of the stuffing , sweet chutney n fill with pani n eat immediately ! 

Note : Adjust the spices and tanginess according to taste !!
