'Khubani ka Meetha' A Hydrabadi delicacy !
- Dried Apricots -1 cup
- Sugar- 2 tsp
- Fresh cream -3 tsp
- Vanilla essence -1/4 th tsp
Soak dried apricots in water overnight such that they swell completely by morning. De-seed the apricots and keep the seeds aside. Melt sugar in a non-stick vessel and immediately stir in the Apricots; cook for a couple of minutes and stir vigorously for another couple of minutes as the apricots begin to darken in the caramelising process; Now add in the water in which the apricots were soaked over night and reduce the heat to Sim flame , cover and cook for 10 minutes till the water boils and thickens completely.
In the meantime, crack open the seeds to find the 'badam' ,like seeds ,u can use them whole or chop them ..add this to d cooked stuff along with of cream and vanilla essence .
cool n Now refrigerate the 'khubani'
Note: u can serve it garnished with ice cream and chopped dry fruits if u like it that way
