Ukde Seeth , Sun dried Karathe /Bitter Gourd fried , Roasted Lemon pickle, Palak Thove , Beans Upkari , Roasted salla happolu smeared with coconut oil , Instant Tomato Saaru , Curds n Mango'

Ukde Seeth , Sun dried Karathe /Bitter Gourd fried , Roasted Lemon pickle,  Palak Thove , Beans Upkari , Roasted salla happolu smeared with coconut oil , Instant Tomato Saaru , Curds n Mango'



Sun dried Karathe /Bitter Gourd fried


  • White Bitter Gourd -3 
  • Salt - 2 to 3 tsp 


Method 

wash the  bitter gourd , dry it n roughly remove the skin n chop into small pieces .Add salt , cover n set aside for 5 to 6 hours n then squeeze it well .. on a clean dry cotton cloth spread the squeezed salted bittergourd pieces n sun dry for about 4 to 5 days . Store in air tight conatiner n use as n when needed . 

Method for frying


  • Sun dried bitter gourd pieces - 1 tblsp
  • Oil for deep frying 


Heat oil in a kadai n add few sun dried bitter gourd pieces n fry till crisp . 




Palak Thove ( Spinach watery Dhal )
  • Spinach /Palak Roughly chopped -1 glass
  • Thur dhal -1/4 th cup
  • cumin seeds-1/4 th tsp
  • Grated coconut-2 tsp
  • Mustard-1/2 tsp
  • Green chillies-1
  • Urid dhal-1/4 th tsp
  • Hing/ Asafoetida -a pinch
  • Lime juice -1/2 tsp
  • Oil-1 tsp
  • salt to taste
 Method 
Soak Thur dhal for 10 mts n pressure cook it with spinach , green chilly, salt  n grated coconut !
season with Mustard , cumin seeds, Urid dhal n hing , Squeeze in lime 


Terrace Grown Creeper Beans Upkari/Beans Stir fry 

  • Tender French Beans- 1/4 th kg  
  • Oil- 2 tsp
  • Mustard seeds-1/2 tsp
  • Dry red chillies- 3 or according to the taste .
  • Grated coconut- 1 tblsp 
  • Salt to taste 

Method 
Wash Beans n Chop Beans 

In a kadai add oil, splutter mustard seeds n add torn dry red chillies , add the chopped vegetable n then little water along with salt n cook til done . Garnish with grated coconut n mix well  


Instant Tomato Saaru 

  • Tomatoes ..2 huge fully ripened , roughly chopped 
  • Green chilly ..2 , slit 
  • Jaggery ..a small piece 
  • Salt to taste

Seasoning 

  • Oil..1 tsp 
  • Mustard seeds ... 1/2 tsp 
  • Curry leaves ..1 sprig 

Method 
Wash n boil the chopped tomatoes .Add slit green chilly ,  jaggery ,salt n boil well again. Then give the seasoning .
