Gobhi Paratha
For the outer dough
- Wheat flour ..1 cup
- Oil ..1 tsp
- Salt to taste
- Water as needed to prepare a soft dough
For the stuffing
- Oil ..2 tsp
- Cauliflower florets ... 1 cup
- Ajwain/ Carrom seeds .. 1/2 tsp
- Green chilly ..2
- Garlic flakes .. 4
- Ginger ..1/4 th inch
- Chilly powder..1/2 tsp
- Turmeric Powder..1/4 th tsp
- Coriander leaves ... a few sprigs
- Lime Juice..1 tsp
- Salt to taste
Method
In a bowl add wheat flour ,salt, oil n enough water n knead to a soft dough .Keep the dough aside for about 20 mts .
Boil water , add salt n cauliflower florets .Keep covered for about 10 mts .Drain well .
Grate the cauliflower florets . grate ginger n garlic .
Finely Chop the green chilly n coriander leaves.
In a kadai add oil ,add ajwain, then grated ginger n garlic . Allow to fry for a while .Then add the chopped green chilly , chopped cauliflower florets n fry again for sometime .Add chilly powder, turmeric powder , salt n mix well .Switch off and add coriander leaves n add lime juice .Mix well n allow to cool .Prepare equal lime sized balls of the stuffing .
Divide the dough into equal sized balls .
Take the dough ball , dust n roll into a disc , place the stuffing in the centre n close from all sides .
Roll into thick paratha
Heat a tawa n place the paratha n roast on both sides applying butter .
Serve hot with curds n pickle .
