Terrace Grown Vegetable Paltter - Ukde Seeth , Bhaji Menasu/Banana Chilly Bajo /Besan Fritter's , Methi leaves Dhal , Coriander leaves Gojju n Alsande Upkari .
Banana Chilly Bajo ( Besan Fritters )
- Banana chillies .. 8
- Oil for deep frying
- Besan/ Gram Flour .. 1/2 cup
- Red chilly powder...1/2 tsp
- Rice flour ... 2 tsp
- Hing/Asafoeitida ...2 pinch
- Salt to taste
- water as required to prepare the batter
Slit banana chillies n remove the seeds .
In a bowl add besan, chilly powder, rice flour , hing n salt ...mix well ..Add little water n prepare a semi solid batter .
Heat oil in a kadai , dip the above Slit chilly in the batter n deep fry till crisp around 3 to 4 at a time .
Methi Dhal
- Fresh Methi /Fenugreek Leaves -1 cup heaped
- Thur Dhal - 3/4 th cup
- Turmeric powder -1/4 th tsp
- Salt to taste
Seasoning
- Oil - 2 tsp
- Mustard seeds -1/2 tsp
- Cumin seeds-1/2 tsp
- Curry leaves-1 sprig
- Onion finely chopped -1 Medium
- Tomato, finely chopped -1
- Green chilly -3 or according to the spice , slit length wise
- Dry red chilly - 2 , torn
- Garlic Flakes, slightly crushed -5
- Grated Ginger-1 tsp
Method
Wash the thur dhal n pressure cook it adding turmeric powder , then add the methi leaves n pressure cook just for a whistle . Cool n churn it .
In a kadai add oil n splutter mustard seeds ,then add the cumin seeds n let it sweat , add curry leaves n slightly crushed garlic flakes n roast till reddish brown , add torn dry red chilly, slit green chilly, grated ginger n fry for few minutes . Add chopped onion n fry till reddish brown ..Add chopped tomato n cook till mushy . Add salt . Cooked dhal n methi leaves . Add water as per consistency n boil for a while .

Coriander leaves Gojju
- Grated coconut- 1/4 th cup
- Coriander leaves- 1 cup
- Roasted dry red chillies- 3 or according to the spice
- Tamarind-Tamarind seed size
- Jaggery - Marble size
- Salt to taste
Seasoning
- Oil-1tsp
- Mustard seeds-1/2 tsp
- Curry leaves-1 sprig
Method
Grind grated coconut, coriander leaves , roasted dry red chillies, tamarind, jaggery n salt to a fine paste n then do the seasoning .
Alsande Upkari /Yardlong Beans (Amchi style stir fry )
- Chopped Alsando /Yardlong Beans -2 cups
- Oil-2 tsp
- Mustard seeds-1/2 tsp
- Dry red chillies-2 or 3 according to the taste
- Grated coconut - 1/4 th cup
- Water -1/4 th cup
- Salt to taste
In a kadai add oil, mustard seeds once it stops spluttering add red chillies n fry for a sec n then add chopped alsando along with water n salt ..stir once n cook it covered till all the water evaporates . add grated coconut n mix well .
