Terrace Grown Dundu Badane/Purple Round Brinjal masala
- Purple Round Brinjals - 1/4 th kg
- Salt to taste
To Roast n Grind to a paste .
- Black Sesame Seeds/ Black thil - 1 tsp
- Groundnuts- 1 tblsp
- Oil - 2 tsp
- Methi /Fenugreek seeds - 1/2 tsp
- Cumin seeds- 1 tsp
- Saunf -1/2 tsp
- Coriander seeds - 3 tsp
- Byadgi chillies -6 to 8,adjust according to the spice
- Grated coconut -1 tblsp
- Tamarind - Marble size
Seasoning
- Oil- 1 tblsp
- Mustard seeds- 1 tsp
- Curry leaves - 1 sprig
- Onions- 1 huge
Method
Wash n remove the crown of the brinjal's n chop them elongated to 4 pieces n put in water so that it dont discolor
Chop onion
Dry roast the black sesame seeds till they splutter.n remove it .
Then roast the groundnuts for a while till the color changes .Remove it ,cool n then remove the skin n in the same kadai add oil n then roast the methi seeds ,cumin seeds , saunf ,coriander seeds ,byadadgi red chillies and grated coconut till brown, allow it to cool.
Grind all the roasted ingredients along with tamarind into a paste.
In a pressure cooker ,add oil n splutter mustard seeds n then add curry leaves and the chopped onion n fry till transparent, Add the ground paste n then the chopped brinjal pieces ,a cup of water n salt .Mix well n then pressure cook for 2 whistle. . .
