Kulithu n Magge koddel ( Horse gram with Mangalore Yellow Cucumber spicy coconut based gravy )
To grind to a fine paste
Method
Wash horse gram n Pressure cook it for few whistle's till cooked ( dont over cook n make it mushy )
Cook the chopped Mangalore yellow cucumber with just enough water till cooked .
Grind grated coconut, roasted dry red chillies n tamarind to a fine paste .
Add the ground paste to the cooked stuffs n boil well adding salt .
Then give the seasoning .
Wash n peel the tough skin of Pumpkin n slice them thin .
In a bowl add the sliced pumpkin pieces, red chilly powder, turmeric powder, rice flour , hing n salt .. mix well .
Run the marinated pumpkin pieces over rawa .
Heat a tawa , smear little oil n shallow fry on both sides till crisp.

- Kulithu ( Horse Gram ) .... 1/2 cup
- Magge/Mangalore Yellow Cucumber chopped with skin - 1 cup
- Salt to taste
To grind to a fine paste
- Grated coconut ... 1 cup
- Roasted dry red chillies... 6
- Tamarind ..Tamarind seed size
- Oil..2 tsp
- Crushed garlic flakes ..6
Method

Horse gram saaru /Plain Rasam with garlic seasoning
Retain the water in which Horse gram was cooked ... to it add slit green chilly 1 or 2 , boil well adding salt . Give seasoning with crushed garlic n dry red chilly .
Pumpkin Tawa Rawa Fries .
- Pumpkin -1/4 th kg
- Red chilly powder-2 tsp
- Turmeric powder-1/2 tsp
- Rice flour - 2 tsp
- Hing /Asafoetida- 2 pinch
- Semolina /Rawa - 4 tsp
- Salt to taste
Wash n peel the tough skin of Pumpkin n slice them thin .

Dudde ani Kobbu Upkari /Pumpkin n Sugar cane Stir Fry
- Pumpkin chopped into bigger chunks as seen in the picture .. 1 cup
- Sugar Cane , removed tough skin n chopped into 2 inch long piece..1 cup
- Oil..1 tsp
- Mustard seeds ..1/2 tsp
- Green Chilly .. 2 or 3
- Dry red chilly broken ..1
- Curry leaves..1 Sprig
- Asafoetida/Hing ..2 pinch
- Jaggery ..chick pea size,,2
- Water as required to cook
- Grated Coconut ..1 Tblsp
- Salt to taste
Method
Add oil in a kadai, splutter mustard seeds , then add curry leaves , slit green chilles , add hing , dry red chilly n saute for a while .. Add Sugar cane pieces n water n cook ..when half done add the Pumpkin pieces, ,Jaggery n Salt ...cover n cook till done ..Add grated coconut n mix well .
Boil water n add almonds , cashew nuts , raisins n set aside for about 1/2 an hour .
Remove the skin of almonds n slice it
In 1/4 th cup boiled hot milk add the saffron strands ..set aside for 1/2 an hour .
Boil Milk n then add sugar n stir .. Add the cooked rice n sabudana n cook again stirring well till it thickens . The consistency should be semi thick .
Remove it , add the cardamon powder, saffron milk n dry fruits . Mix well .
Serve warm or chilled .
Note : The authentic Doodh paak ... Rice n sabudana has to be cooked in milk n not in water ..
Doodh Paak /Milk Rice Kheer
- Rice .. Basmathi or any flavoured rice ..1/2 cup ( i used Doodh Malai rice )
- Sabudana .1/2 cup
- Full fat Milk ..6 cup's ( i used orange color pack Nandini Milk ) \
- Sugar ..1 cup adjust as per sweetness
- Saffron strands ..1 tsp
- Almonds ..6
- Cashew nuts halved ..10
- Raisins ..10
- Cardamon Powder .. 1/2 tsp
Method
Wash rice n Sabudana n cook it in little water till soft . Boil water n add almonds , cashew nuts , raisins n set aside for about 1/2 an hour .
Remove the skin of almonds n slice it
In 1/4 th cup boiled hot milk add the saffron strands ..set aside for 1/2 an hour .
Boil Milk n then add sugar n stir .. Add the cooked rice n sabudana n cook again stirring well till it thickens . The consistency should be semi thick .
Remove it , add the cardamon powder, saffron milk n dry fruits . Mix well .
Serve warm or chilled .
