Tomato Basil Soup


Tomato Basil Soup 

  • Tomatoes Red fully ripened ...10 /12 
  • Fresh basil leaves .. 8 /10 leaves 
  • Water ...2 cup's 
  •  Olive Oil ...2 tsp 
  • Bay leaves ..2
  • Onions ..1 medium
  • Garlic ..4 cloves 
  • Corn flour .. 2 tsp
  •  Water ..1 tblsp 
  • Sugar ..1 tsp 
  • Black pepper powder .. 1 tsp  
  • Salt to taste
  •  Butter ..2 tsp 

Method 

slice  onion n chop garlic cloves . 

Make a paste of cornflour adding water .

Heat a pan. add olive oil , bay leaves,   sliced onion and roast until transparent . Add chopped garlic n stir for few mts ,then add  chopped  tomatoes n little water , mix n cook well adding salt ,till tomatoes are cooked . Cool it , remove the bay leaf n grind it to a fine puree . 

Add water n boil it adding corn flour paste to a semi thick consistency . Add the basil leaf n cook for few mts. 

Switch off add sugar n mix well.adjust salt ,sprinkle pepper powder n add butter 

Serve pipping hot
