Kasuri Methi Rottis, Soya Chunks Kasuri Methi Masala n Cauliflower/ Gobi ki Masala Sabzi
Kasuri Methi Rottis
- Wheat flour- 1 cup
- water as needed to prepare a soft dough
- Salt per taste .
- Kasuri Methi - 1 tblsp ( crushed )
Method
In a bowl add wheat flour , salt n just enough water n knead well to form a soft dough .. keep aside for 1/2 an hour.
Knead the dough again n divide the dough into equal lemon sized balls .
Sprinkle little flour on the dry surface kitchen platform or a wooden chapthi maker n place the dough ball over it n roll with a rolling pin very gently n not too hard to a round 5 inch disc .
Heat a tawa n place the rotti over it. Cook on one side for half minute and flip on the second side. , take little crushed kasuri methi n pat on it .. Cook for another half minute and smear some oil on one side. Now flip this oiled side onto the tawa. Now you will see the rotti fluffing . Similarly add oil on the second side and fry both sides till rotti is completely cooked and brown spots appear on it. Move each edge to middle of the tawa and cook so that all the edges are evenly cooked.
- Soya chunks -1 cup
- Onion -1
- Tomato -1
- Cashwenut paste - 2tsp
- Cumin powder -1tsp
- Coriender powder-1tsp
- Turmeric powder-1/2 tsp
- Garam Masala-1tsp
- Red chilly powder-3 tsp
- Kasoori Methi- 3 tsp
- water-1/4th cup
- Oil-2 tsp
- Salt to taste
Pressure cook Soya chunks with salt for 1 whistle .. Squeeze the water and keep aside.
Heat oil in a pan and fry onions till pink ,add tomatoes fry till the raw smell goes . Add all the powders , cashew paste,water n soya chunks ,salt. Finally add kasoori methi .
Cauliflower/ Gobi ki Masala Sabzi
- Cauliflower -1 medium
- Oil - 3 tsp
- Fennel seeds -1/2 tsp
- Onion -1 , chopped
- Ginger Garlic paste -1 tsp
- Tomatoes-2 , chopped
- Cashew nut paste -1 tblsp ( soak around 10 to 12 whole dry cashew nuts in hot water for 1/2 an hour n grind to a smooth paste )
- Red chilly powder -1 tsp
- Coriander powder -2 tsp
- Garam masala powder-1/2 tsp
- Kitchen King Masala Powder -3/4 th tsp
- Turmeric powder -1/4 th tsp
- Coriander leaves chopped -2 tsp
- Salt to taste
Method
Cut cauliflower into bite sized florets ,
Boil water n add salt n turmeric powder ,dip the florets in it n keep covered n set aside for 1/2 n hour
In a kadai add oil n add fennel seeds n stir for few seconds , add chopped onion n fry till pinkish red , then add ginger garlic paste n stir for few seconds . Add chopped tomatoes n cook till mushy . add chopped coriander leaves n stir again for few seconds. Add all the powders along with salt . Add the cashew nut paste along with water n cauliflower florets n cook till done .
