Zeera Rice , Egg Pulusu /Tangy Spicy Egg Curry n Mango Lassi


Zeera Rice , Egg Pulusu /Tangy Spicy Egg Curry  n Mango Lassi 

Zeera Rice  
  • Cooked Basmathi Rice- 2 cup's 
  • Salt to taste .

For Seasoning

  • Ghee ...1 tblsp 
  • Cumin seeds..2 tsp 
  • Cloves ..3 or 4
  • Green Whole Cardamom..4 or 5
  •  Cinnamon Stick ..1inch 
  • Bay Leaf ..1 broken 

Garnish 

  • Coriander leaves chopped ... 1 tblsp

Method 
In a kadai , add ghee n then add cumin seeds , cloves, green whole cardamom , cinnamon stick n bay leaf ...stir for few seconds ...  add cooked  Basmathi rice ,salt n mix well . Garnish with Chopped coriander leaves n mix again .. 

Egg Pulusu /Tangy Spicy Egg Curry

  • Eggs ...4
  •  Oil..2 tsp
  • Red chilly powder..1/2 tsp
  • Turmeric powder ..1/4 th tsp
  • Salt to taste .


Seasoning the Gravy ..


  • Oil...2 tsp
  •  Mustard seeds ..1/2 tsp
  • Methi seeds..1 pinch
  • Curry leaves ...1 sprig 
  • Dry Red Chilly ..1 broken
  •  Onion ..1 huge ( chopped ) 
  •  Ginger .1/2 inch piece ( chopped finely) 
  •  Garlic Flakes ...6 ( chopped finely)
  • Tomato Puree ..1/4 th cup
  • Chilly Powder ..2 tsp
  • Coriander powder..1 tsp
  • Cumin powder ..1/2 tsp
  • Tamarind ..Marble Size ( soak in little water for about 20 mts n then extract the juice ) 
  • Sugar ..1/4 th tsp
  •  Salt to taste 


Garnishing


  •  Chopped Coriander Leaves ...2 tsp 


Method 

Wash eggs n boil them . Cool n remove the skin . Make some slashes in them so that the masala can penetrate .

 In a tawa , add oil, chilly powder , turmeric powder n salt ...add the boiled eggs n toss well ... 


In a kadai add oil , splutter mustard seeds n add methi seeds ..stir for a second... Add curry leaves ,broken dry red chilly n chopped onion n fry till pinkish red .. Add chopped ginger n garlic n fry for few mts .Now add tomato puree n cook till the raw smell goes , add in all powders n stir for a few seconds .. Add tamarind extract, little water ,sugar ,salt n tossed eggs .. Boil n then garnish with coriander leaves . ''



Mango Lassi 

  • Mango pulp -1 cup 
  •  PlainYogurt/curds -1 cup 
  •  Milk-1/4 th cup
  • Sugar -1 tblsp 

Method


Blend together mango pulp,  sugar, milk,  yogurt ,blend well for few seconds until they turns frothy .



Serve chilled !
