Ukde Seeth , Thambdi bhaji dhal, Gointa Ambe upkari, Pagila Tawa Roast, Mango Slice  n Curds ..

Red  Amaranthus/Bhaji Dhal 
  • Thur dhal-3/4 th cup 
  • Red  Amaranthus -Roughly chopped 2 cups
  • Onion -1
  • Green chilles- 3 
  • Ginger-1 inch piece ,finely chopped 
  • Turmeric powder-1/4 th tsp
  • Salt to taste 


  • Ghee-2 tsp
  • Mustard seeds-1/2  tsp
  • Cumin seeds-1/2 tsp
  • Dry red chilles-2 , broken 
  • Garlic flakes crushed-4 to 5
  • Curry leaves-1 sprig

wash n soak thur dhal  for 20 minutes n then pressure cook it along with turmeric powder.

Pressure cook red Amaranthus  for only 1 whistle.

In a kadai add Ghee, splutter mustard seeds, add cumin seeds, curry leaves ,  broken dry red chilles, green chilles n fry for a minute n then add chopped onion n fry till transparent  .. add finely chopped ginger , crushed garlic  n fry for few minutes till its brown  ... then add cooked dhal and cooked amaranthus  n give a quick boil  

Ambe Humman /Upkari ..A typical amchi seasonal delicacy ! its sweet ,spicy n tangily yummz !.
    • Ambe gointa ( a small variety of  mango which is prefered for this,as its sweet n sour  )  .. 8 
    • Green chillies...2
    •  Jaggery..Goose berry size 
    • Rice flour or maida..1 tsp
    • water..2 cup's
    • salt to taste
    • Oil..1 tsp 
    • Mustard seeds..1/2 tsp 
    •  Curry leaves..1 sprig 
    • Dry red chilly ..2 
    Wash mangoes n peel the skin . Now add water to the peeled mango skin n squeeze it .. discard the squeezed skin .. to this water add the peeled mangoes, slit green chillies,salt  n jaggery .. cook till the mango is cooked  .. in little water add maida or rice flour n prepare a paste , see to it that no lumps is formed .Add this to the dish , stir n give a quick boil .. season with mustard, dry chillies and curry leaves ! This gravy shouldn't be too thick nor watery .. 
Pagila/ Kantola Tawa  Roast  
  • Pagila/Kantola..4 
  • Red chilly powder.. 2 tsp 
  • Hing/Asafoetida ..2 pinch
  • Turmeric powder..1/4 th tsp 
  • Salt to taste 
  • Rice flour..1 tblsp  
  • Oil for shallow fry 

Wash the Kantola n slice them .

In a bowl add red chilly powder, hing, turmeric powder n salt . Add the sliced kantola n mix well ..keep aside for 5 mts . 

Run the marinated kantola in rice flour ..Heat a tawa , drizzle oil n place the marinated kantola side by side n roast on both sides
