Mittagalale Keerla Ghassi /Brined Bamboo shoot coconut Based Gravy
- Mittagalale Keerlu/Brined Bamboo shoot ... 2 cup's
- Grated coconut ...2 cup's
- Roasted dry red chilly ... 6 to 8
- Oil.. 1 tsp
- Coriander seeds...2 tsp
- Methi seeds/Fenugreek seeds ..1/4 th tsp
- Tamarind ..Tamarind seed size .
- Oil... 2 tsp
- Onion ...1 chopped
- Salt check and add as the bamboo shoots is already brined .
Seasoning .
- Oil ...2 tsp
- Mustard seeds ...1/2 tsp
- Curry leaves..1 sprig
Method .
Soak the brined bamboo shoots in enough water for about 2 hours n remove around 5 to 6 water ...wash well ...
Pressure cook it for about 5 to 8 whistle . Cool n discard the cooked water .
In a pan add oil n roast coriander seeds n methi seeds ..cool it .
In a pan add oil n roast chopped onions n fry till reddish brown . keep aside
Grind grated coconut, roasted dry red chillies n tamarind to a paste n just before removing the paste add the roasted coriander seeds ,methi seeds n grind for a few seconds ..
The Ground paste has to be semi coarse n not too fine .
In a vessel add the cooked brined bamboo shoots , ground masala , roasted onions, water for consistency n boil well . Then give the seasoning .
