Ukde Seeth, Vaali Ambat , Podale Bee Upkari, Podale Bee Sannapolo , Karathe Podi n Mango Slice .

Ukde Seeth, Vaali Ambat , Podale Bee Upkari, Podale Bee Sannapolo , Karathe Podi n Mango Slice .

Vaali  ambat ! ( Malabar  Spinach with dhal  coconut based gravy ) 

  • Malabar Spinach ( Vaali )-1Bunch  
  • Onion - 1 Medium 
  • Thoor dhal- 1/4 th  cup 

To grind

  • Grated Coconut- 1 cup
  • Roasted red dry chilles-4 or according to the spice 
  • Tamarind- Tamarind seed size 
  • Salt to taste 
Seasoning
  • Oil - 2 tsp
  • Chopped onion - 1 medium 

Method
Roughly chop Malabar  spinach  with tender stem.  

Pressure cook Thur dhal , mash it well ..keep aside 

Cook chopped malabar spinach along with chopped onion ..n cook till tender .

Grind grated coconut, roasted chilles, tamarind to a fine paste .


Add the ground paste  to the cooked stuffs along with cooked dhal . Give a boil n then do the seasoning .


Podale  Upkari /Snake Gourd  Stir Fry 

  • Podale /Snake Gourd  ..1 
  • Oil ..2 tsp
  • Mustard seeds ..1/2 tsp
  • Dry red chilly ..3 
  • Small piece jaggery 
  • Water just enough to cook . 
  • Salt to taste 

Garnish
Grated Coconut ..1 tblsp

Method 
Wash the snake gourd n from the backside of the spoon scrap it . Chop into crescent shapes .
In a kadai add oil, splutter mustard seeds, add torn dry red chilly n stir for a while , then add the crescent shaped snake gourd n just enough water , jaggery ,salt n cook till done n then do the garnishing . 


Snake Gourd Seed Sannapolo /Spicy Dosa 
  • Snake Gourd Seeds ..1 cup 
  • Raw Rice ... 1 cup 
  • Dry red chilly ..4 to 5 
  • Grated Coconut ..1/2 cup 
  • Tamarind ..Tamarind seed size 
  • Salt to taste 

Method 
Wash n soak raw rice for about 1/2 an hour . 

Drain n grind it with dry red chilly, tamarind n grated coconut n just before removing the batter add snake gourd seeds n grind for just a minute or two .  remove n add salt . 

The ground batter should be coarse n thick .

 Heat a dosa tawa , drizzle oil n spread the batter patting with  fingers dipping fingers in water n cook on both sides . 


 Karathe Podi /Bitter Gourd deep fries
  • Bitter Gourd -  2 
  • Red chilly powder-3 tsp 
  • Rice flour- 1 tblsp 
  • Hing - 2 huge pinch 
  • Turmeric powder- 1/4 th tsp 
  • Salt to taste 
  • Oil for deep frying 


Method 
Wash the bitter gourd's , chop into roundels . wash this in water for about 4 to 5 times n apply salt to it n keep aside for 1 hour . 


In a bowl add red chilly powder ,rice flour,hing , turmeric powder n salt    Squeeze well the salted bitter gourd roundels n add , mix well .. set aside for few mts.


Heat oil in a kadai  n deep fry the marinated roundels till crisp  4 to 6 at  time .
