Chapathi n Punjabi Aaloo Baingan Masala 

Chapathi 
  • Whole wheat flour  -2 cups
  •  Salt to taste
  • Water to knead the dough
  • Oil..1 tblsp
  • Ghee as required to roast the chapathi  
Method 
In a bowl , add whole wheat flour , add oil , salt n water litle by little  at a time n knead it to a soft dough for about 5 to 8 mts ... keep side for about 1/2 an hour 

Divide the dough into equal sized balls , apply some flour n bail out thin chapthis .

Heat a tawa , place the chapathi on it n cook till puffed on both sides ..apply ghee n serve hot . 

Punjabi Aaloo Baingan Masala 
  • Potatoes... 3  Medium 
  • Brinjal small Purple round ... 6 
  • Oil.. 1 tblsp 
  • Cumin seeds.1/2 tsp 
  • Onion ..1 
  • Garlic... 4 cloves
  • Ginger..1/2 inch piece 
  • Chilly Powder..1 tsp 
  • Turmeric powder..1/4 th tsp 
  • Garam Masala ..1 tsp 
  • Amchur Powder..1 tsp 

Garnish 

  • Coriander leaves 

Method
Grind the onion to a paste .

Wash , peel the potatoes n chop them into slightly bigger pieces . 

Wash n chop brinjal into slightly bigger pieces 

Finely Chop garlic n grate ginger . 

In a kadai add oil, crackle cumin seeds n then add the onion paste n fry for a while . Then add the chopped garlic , grated ginger n fry again for minute .  Add chilly powder, turmeric powder , chopped potatoes , brinjal along with little water ..When half cooked add salt, garam masala , amchur powder n cook till done . Later do the garnishing
