- Malabar Spinach ( Vaali )-1Bunch
- Roughly chopped Onion - 1 Medium
- Thoor dhal- 1/2 cup
To grind
- Grated Coconut- 2 cups
- Roasted red dry chilles-6 to 8 or according to the taste
- Tamarind- Tamarind seed size
- Salt to taste
Seasoning
- Oil - 2 tsp
- Chopped onion - 1 medium
Method
Roughly chop Malabar spinach with tender stem.
Pressure cook Thur dhal , mash it well .. then add chopped malabar spinach along with chopped onion ..n cook till tender .
Grind grated coconut, roasted chilles, tamarind to a fine paste .
Add the ground paste n salt to the cooked stuffs along with cooked dhal . Give a boil n then do the seasoning .
Pagila/ Kantola Tawa Rawa Roast
- Pagila/Kantola..4
- Red chilly powder.. 1 tblsp
- Hing/Asafoetida ..2 pinch
- Turmeric powder..1/4 th tsp
- Rice flour..2 tsp
- Salt to taste
- Semolina/Rawa ..1 tblsp
- Oil for shallow fry
Method
Wash the Kantola n slice them .
In a bowl add red chilly powder, hing, turmeric powder ,rice flour n salt . Add the sliced kantola n mix well ..keep aside for 5 mts .
Run the marinated kantola in semolina .Heat a tawa , drizzle oil n place the marinated kantola side by side n roast on both sides
Pagila /Spine Gourd Kismuri
- Pagila /Spine Gourd ... 4
- Salt to taste
- Oil to deep fry
- Grated coconut...1/2 cup
- Green chilly 2 or 3
- Tamarind ...Goose berry size ( soak in very little water for 10 mts , squeeze well n discard the residue n retain the water )
- Onion ...finely chopped ... 1
Method
Wash the pagila n chop it into 2 inch cubes , rub salt to it n keep aside for sometime

Heat oil in a kadai , squeeze well the chopped pagila pieces n deep fry till crisp . Remove on tissue papper to remove excess oil
In a bowl add the grated coconut, chopped green chilly, tamarind water , chopped onion n mix well with hands ... add in fried pagila cubicles ,mix again n serve immediately .
Note : u can prepare this pagila cubical fries n keep in air tight container n use as n when to prepare kismuri ..
Garlic Chutney
- Garlic Pod - 1
- Oil-2 tsp
- Grated Coconut-1 cup
- Roasted Dry Red chillies- 6 or according to the taste
- Tamarind- Tamarind seed size
- Salt to taste .
Method
Peel n crush a little the garlic flakes n fry in oil till reddish brown .. keep aside.
Grind grated coconut, roasted dry red chillies , tamarind n salt to a paste n just before removing the ground paste add the roasted garlic flakes n grind for a minute .
