Eggless Valentine Cake !

Eggless Valentine Cake !

 Basic Sponge Cake
  • 1/2 tin-(250 gm) Condensed Milk ( Milk Maid )
  • 125 gms (11/4 Cups) Maida
  • 1/4 th Cup-Corn Flour
  • 1/2 tsp level- Soda -bicarb
  • 1 tsp level- Baking Powder
  • 4 tbsp-Powdered Sugar
  • 1/2 Cup-Oil
  • 1/2 Cup -Milk
  • 1 1/2 tsp- Vanilla essence
  • brown paper to line
  • Heart Shaped Baking Tin

Method

Sift maida with cornflour ,soda -bicarb n baking powder.keep aside ..
Beat Milk Maid . Gradually add sugar n beat till fluffy ,add oil n beat well ..
Add half of the flour n half the milk n beat well ,add essence .Add the remaining flour n the milk beating well after each addition .Beat well for 3 to 4 mts till the mixture is smooth n light n attains a thick pouring ribbon consistency .Put the mixture in a greased n lined heart shaped tin n bake for 40 mts in a pre-heated oven at 150degree c ..

Icing
  • 300 gm cream
  • 1/4 th cup-icing sugar
  • Beat cream with sugar till thick n firm peaks r ready

For Marzipan Roses n Leaves
  • 50 gms -Almonds - blanch, peel n chop
  • 8 tbsp-Icing Sugar
  • Red n Green food colour 
Method
Boil Almonds in water for 3 to 4 mts , peel skin n roughly chop them ..allow it to dry for 2 to 3 hrs n then grind it . mix icing sugar n knead it to a dough , Just adding 1 or 2 tsp of water , add icing sugar if needed.. n knead well till d dough is smooth n almond leaves its oil . colour 3/4 th of dough with red colour 4 roses n rest of d dough with green color for leaves .Prepare roses and leaves ..

Jelly Topping
  • 8 or 10 Almonds ( Blanched n chopped very finely )
  • 1 tsp- gelatine
  • 2 tbsp-water
  • 1/4 th cup- grain sugar
  • 1/4 th cup-water
  • 11/2 tbsp- cornflour
  • 1/2 tsp Strawberry essence
  • A drop of pink colour

Method
Soak Gelatine in 2tbsp of water , boil 1/4 th cup water with 1/4 th cup sugar in a pan , simmer n add cornflour paste ( make a paste of 11/2 tsp of cornflour with 2 tbsp water ) , cook till d raw smell of cornflour disappears . add the soaked gelatine ,mix well n cook for 1/2 a mt ..remove n let it cool add blanched n chopped almonds, essence n color ..let it cool at room temperature ... see to it that it does not set .

Ice d baked cake , pour d jelly topping ..let it flow on sides ..decorate with Marzipan roses n leaves ..sprinkle a few silver balls !
