Kanchipuram Upma

Kanchipuram  Upma   

  • Semolina.. 1 cup
  • Water..2 1/4 th cup 
  •  Ghee..1 tblsp 
  •  Mustard Seeds..1.2 tsp 
  • Cumin Seeds..1/2 tsp 
  •  Curry Leaves..1 sprig 
  •  Black whole Peppercorns ..1/2 tsp 
  • Urad Dal..1 tsp
  • Chana Dal..1 tsp 
  • Cashews..10 slit 
  •  Onion.. 1 medium 
  •  Ginger Piece..1 inch piece  
  •  Green Chillies..2  
  •  Turmeric Powder..1/4 th tsp 
  • Grated Coconut ..2 tblsp 
  • Salt to taste


Method 
Dry roast the semolina on a medium flame until you get a nice aroma . 

Chop onion , green chilly n  ginger 

Boil water . 

In a kadai splutter  mustard seeds n crackle cumin seeds , add urad dal n  chana dal n fry for a minute . Add curry leaves, chopped onion n fry till transparent . Add chopped green chilly , cashew nut 's , peppercorn , chopped ginger n  fry for a while .

Add the boiled water, salt, turmeric powder ,  roasted semolina , grated coconut n stir to avoid lumps 
. Cover n cook till done 

Serve hot
