Ven Pongal n Terrace Grown Brinjal Gothsu

Ven Pongal n Terrace Grown Brinjal Gothsu 


  • Raw Rice -1 cup
  • Moong Dhal-1/4 th cup
  • Water -4 cup's 
  • Salt to taste 


Seasoning

  • Ghee -2 tblsp heaped 
  • Cumin seeds-2 tsp 
  • Pepper Corns -2 tsp 
  • Grated Ginger - 1 tsp 
  • Hing - 2 pinch 
  • Cashew nuts -a few slit 
  • Curry leaves - 1 sprig 


Method 
Pressure cook washed raw rice, moong dhal, water n salt for 4 whistle .

  Once the pressure is released ..open the lid . 

In a pan add ghee n then add cashew nuts n roast it, add cumin seeds n let it crackle ..add pepper corns, hing, grated ginger n curry leaves n stir for few seconds  .Pour this seasoning over the cooked rice n dhal mix n mix well . 

Note : The rice has to be cooked in such a way that it should be mushy.

Terrace Grown Brinjal Gothsu  /Venn Pongal Gothsu 


  • Brinjal-  3 to 4
  • Moong Dhal- 1/4 th Cup
  • Shallots / Small Onions-8 to 10
  • Tomato- 1
  • Green Chillies -2
  • Tamarind -2 , goose berry size ( Soak in 1/2 cup of water for about 1/2 an hour n extra the thick juice ).
  • Turmeric Powder-1/4th tsp
  • Salt To taste


Roast and Grind to a powder

  • Oil-2 tsp
  • Channa Dhal -1 tblsp
  • Coriander Seeds-1 tblsp
  • Dry Red Chilly -1 
  • Peppercorns- 1/4 th tsp


 Seasoning:

  • Oil- 2 tsp
  • Mustard Seeds- 1 tsp
  • Cumin Seeds- 1/2 tsp
  • Curry Leaves -1 sprig
Garnish


  • Coriander Leaves- 1 tbsp chopped



Method
Wash and chop the brinjals and soak it in water to prevent de-colourisation.

Peel the shallots .
Chop tomato
Slit the green Chilly .

Add oil in a pan, add all the ingredients meant to grind  n roast them till they turn golden brown in color.

Cool it completely n grind it to a fine powder .

In a kadai add oil n splutter  mustard seeds , Add cumin seeds n let it sizzle . Add slit green chilly n curry leaves n fry for few seconds . 

Then add the peeled shallots and saute it for few mts till it turns soft  .Then add the chopped tomato n cook till it turns mushy  Then add chopped brinjals., little water , turmeric powder , tamarind extract along with salt , ground powder n mix well .

In a pressure cooker add moong dhal, turmeric powder, little water  n then add the brinjal mix .Pressure cook for 3 to 4 whistle's . Once the pressure is  released ,open the lid   n garnish with coriander leaves . Mix well .
