Chapathi, Terrace Grown Mulangi/Radish Poriyal , Baingan Tawa Fries , Moong Dhal with Kasuri Methi , Thick Curds n Crunchy Onion n Tomato Bites.

Chapathi, Terrace Grown Mulangi/Radish Poriyal  , Baingan Tawa Fries , Moong Dhal with Kasuri Methi , Thick Curds n Crunchy Onion n Tomato Bites.

  •  Wheat Flour - 1 cup
  • Oil- 2 tsp  
  • Water as needed to prepare the soft dough 
  • Salt to Tate 
  • Ghee as required to roast 

In a bowl add the wheat flour, salt, ,oil  , water n knead to a soft dough .. keep aside for about 20 mts . 

Divide the dough into equal lemon sized balls .

Sprinkle little flour on the dry surface kitchen platform or a wooden chapthi maker n place the dough ball over it n roll with a rolling pin very gently n not too hard  to a round 5 inch disc . 

Heat a tawa n place the chapathi over it. Cook on one side for half minute and flip on the second side. Cook for another half minute and smear some oil  on one side. Now flip this ghee  side onto the tawa. Now you will see the chapathi fluffing . Similarly add ghee on the second side and fry both sides till chapathi is completely cooked and brown spots appear on it.  Move each edge to middle of the tawa and cook so that all the edges are evenly cooked. 

Terrace Grown Radish Poriyal 

  • Radish/Mooli - 3 ,medium 
  • Onion -1 huge ,chopped 
  • Oil - 2 tsp 
  • Mustard seeds -1/2 tsp 
  • Urid Dhal - 1 tsp heaped 
  • Turmeric powder-1/2 tsp 
  • Curry Leaves -1 sprig
  • Salt to taste 

To dry roast n Grind to a powder 
Urid Dhal - 1 tblsp 
Dry red chilly - 3 or 4 

Wash  n roughly  scrap the outer side of radish n chop into 2 inch pieces ,

Chop onion 

Dry roast urid dhal n dry red chilly separately  ..take out cool n grind  to a fine powder . 

In a kadai add oil, splutter mustard seeds, add urid dhal n stir for  few seconds , add curry leaves n chopped onion , cook for a while ..Then add chopped radish , turmeric powder, salt , little water n cook till soft . Then add the ground spice powder n mix well . 

Tawa Roasted Brinjal   
  •  Purple Huge Brinjal ... sliced into roundels ...10 /12 
  •  Red chilly powder ...2 tsp
  •  Turmeric powder ..1/4 th tsp 
  • Hing/Asafoetida ... 2 pinch 
  • Rice flour ..1 tblsp
  •   Salt to taste
  •  Oil.. little to tawa roast 
 In a bowl add red chilly powder , turmeric powder, hing, n salt add little water n mix well ...add the brinjal slices n mix well ..keep aside for sometime .

Heat a dosa tawa , drizzle the marinated brinjal slices over rice flour n place on tawa side by side n roast on both sides .  

Moong Dhal with Kasuri Methi 

  • Yellow split Moong Dhal - 1 cup 
  • Ghee - 1 tblsp 
  • Cumin seeds -2 tsp 
  • Hing /Asafoetida -2 pinch 
  • Ginger -1 inch piece
  • Cloves/Lavang  -3 
  •  Green Chilly -2 
  • Tomato -2 
  • Kasuri methi crushed - 2 tblsp 
  • Red Chilly Powder -1 tsp.kashmiri laal 
  • Coriander Powder -2 tsp
  • Turmeric Powder -1/2 tsp 
  • Garam Masala Powder- 1/2 tsp 
  • Coriander leaves - chopped 2 tsp 
  • Salt to taste 
  • Water as required to cook dhal 

Wash n soak moong dhal for about 10 mts .

Remove the skin of ginger n pound  it along with cloves . 

Chop tomatoes n green chilly .

In a pressure cooker , melt ghee add cumin seeds n allow it to splutter n then add pounded ginger n cloves n stir for few seconds , Add hing , green chilly n tomatoes ..stir till the tomatoes turn mushy n cooked . Add all the powders , crushed kasuri methi , soaked moong dhal , salt n water n pressure cook for 3 or 4 whistle . Then garnish with coriander leaves .

Onion n Tomato Bites

  • Onion -1 
  • Tomato -1
  • Salt to taste 

Chop onion 
Remove the seeds of tomato n chop into slightly bigger chunks .
In a bowl add chopped onion n Tomato ,add salt n mix well .
