Gobhi /Cauliflower Rice Baath , Boondhi Raitha, Makki di Roti n Makkai na Bhartha 

Gobhi /Cauliflower Rice Baath  
  • Cooked Rice -1cup
  • Gobhi/cauliflower florets-2 cups
  • Home made vangi  Baath powder-3tsp (can use the ready made ones too )
  • salt to taste 
Seasoning
  • Oil-2tsp
  • Mustard- 1 tsp
  • Turmeric powder-1/4 th tsp  
Garnishing 
  • Chopped coriander leaves-2 tsp 
  • Lime juice - 1tsp
Method 
Boil water and add salt n turmeric powder to it n place the cauliflower florets in it ..keep it covered for 1/2 an hour . drain well n keep aside .
 
Boil the cauliflower florets with little water ... dont over boil , let it retain its crunchiness .
 
 in a pan add oil, mustard seeds , once it crackles , then add turmeric powder, add the cooked cauliflower  , baath powder ,salt n mix well . ..add cooked rice, mix well .. switch off n then add coriander leaves n lime juice 


Boondhi Raitha 

Thick curds -2 Cup's 
• Boondhi-1 Cup
•  Finely chopped Coriander leaves -1 tsp
•  Red Chilly powder - 1/2 tsp 
• Cumin powder -1/2 tsp 
• Salt for taste

Method

In a bowl add curds and beat till  thick and creamy., add salt , red chilly powder, cumin powder , chopped coriander leaves n boondi ..Mix well n serve .

Makki di Roti 

  • Makki Ka Atta /Maize Flour - 2 Cup's
  • Hot Water - As Requried to prepare a dough 
  • Salt to taste
  •  Oil ...as required  to apply to the plastic sheet .  
  • Ghee  as  required to prepare the roast .
  •  Butter ...1 tblsp 

Method 

In a bowl add makki ka aata  n  salt n mix well, keep on adding little by little hot water n knead into a soft dough

Keep covered under a  moist cloth for few mts . 

 Take a thick  plastic sheet n  apply  oil n take a lemon size of the dough n place it on the greased thick plastic sheet . , now moist the hand with water n pat the dough ball with fingers . Fill in any cracks by padding a drop with water . 

Heat a tawa , place the roti on it ...add a few drops of ghee n cook till golden brown spots on both sides ...

Serve hot with a blob of butter .

Makkai na Bhartha 
  • Corn kernels-1 cup
  • Cumin seeds-1/2 tsp
  • Onion-1
  • Tomato-1
  • Green chilly -2
  • Coriender powder-1 tsp
  • Chilly powder-1 tsp
  • Garam masala powder-1/2 tsp
  • Turmeric powder-1/4 th tsp
  • salt to taste
  • oil-2 tsp
  • Coriander leaves to garnish
Method 
Pressure cook Corn kernels for 1 whistle ..dont discard the water n keep aside 

In a kadai add oil, cumin seeds, chopped onions, n fry till pink add tomatoes n fry till the r
aw smell goes .. add green chillies n all the powders .. add boiled corn kernels , salt ..n cook it.garnish with coriander leaves .
