Ukde seeth , Gointa Tawa Roasted ,Tomato Potato Gojju, Beans upkari, Ambuli Puddi Nonche, Radish Sambar n Mango slice

 Ukde seeth , Gointa Tawa Roasted  ,Tomato Potato Gojju, Beans upkari, Ambuli Puddi Nonche, Radish Sambar   n Mango slice 


Gointa  Tawa Podi /  Pointed Gourd  Tawa Roasted 

  • Gointa/Pointed Gourd -  8
  • Rice Flour -1 tblsp 
  • Oil for Shallow roasting 
Marinate 

Red Chilly Powder ..2 tsp 
Turmeric Powder -1/4 th tsp 
Hing /Asafoetida -2 pinch 
Salt to taste 
Method 
wash n scrap the skin of pointed gourd n slice them . 

In a bowl add red chilly powder, turmeric powder, hing n salt n add the sliced pointed gourd n mix well ..set aside for few mts .


Heat a tawa , drizzle oil n run the marinated slices over rice flour n tawa roast   4 to 6 at a time till crisp . 


Tomato Potato Gojju 
  • Tomato- 3 Ripened 
  • Potato- 1 
  • Salt to taste 

Seasoning

  • Oil-1 tsp
  • Mustard seeds- 1/2 tsp
  • Hing- 1 pinch
  • Curry leaves-1 sprig 

Garnish

  • Onion-1 
  • Green chillies-2
  • Coriander leaves -chopped 2 tsp

Method
Wash n pressure cook potato , cool, peel n mash it ..

wash n cook tomatoes ... cool, peel the skin n mash it .

In a bowl add the mashed potato, mashed tomatoes , salt  then add chopped onion, chopped green chillies, coriander leaves n then give the seasoning ..mix well . 




Beans  Upkari /  Stir Fry 


  • Beans ..1/4 th kg 
  • Oil ..2 tsp
  • Mustard seeds ..1/2 tsp
  • Dry red chilly ..3  
  • Water just enough to cook the beans 
  • Salt to taste 


Garnish 
Grated Coconut ..1 tblsp 

Method 
Wash n chop  beans . 

In a kadai add oil, splutter mustard seeds, add torn dry red chilly n fry for a while , then add the chopped beans, just enough water , salt n cook till done n then do the garnishing . 



Mulangi /Radish Sambar
  • Mulangi /Raddish  ...1/4 th kg 
  • Thur Dhal- 1/2 cup
  •  Onion -1 
  • Tomato-1  
  • MTR Sambar Powder- 2 or 3  tsp
  • Tamarind - Marble size
  • Hing /Asafoetida- 2 pinch 
  • Salt  to taste 

Seasoning

  • Oil-1 tsp
  • Mustard seeds - 1/2 tsp
  • Curry leaves-  1 sprig
Garnishing
  • Coriander leaves
Method

Wash n chop the Radish  to 2 inch pieces . 

Chop onion n  tomato .


Soak Thur dhal for 10 mts n then pressure cook it ..cool n churn it well . 


Soak tamarind in water for 20 mts n extract juice n to it add sambar powder n mix well .



Soak the hing in little water for sometime n mix well .

Cook  chopped radish  ,  onion  and tomato in enough water till soft . 

In a vessel add the cooked stuffs , tamarind sambar powder mix , hing water  n salt . cook well , give the seasoning , then garnish .
